CHEESY CHICKEN AND RICE RECIPE
Cheesy Chicken and Rice is our go-to weeknight dinner, something the entire family loves! This one pot casserole is filled with chicken breast, rice, broccoli, cauliflower, and velveeta. It's so creamy, cheesy, and easy. Even the kids will love it!

Steps:
- Season the chicken liberally on both sides with salt and pepper.
- Add butter to a large (12 inch) skillet over medium high heat. Once melted, add the chicken and cook for 3-4 minutes per side, until fully browned and nearly cooked through.
- Remove the chicken and place on a foil tented plate to keep warm.
- Add the soup, chicken broth, paprika, and pepper to the skillet. Stir to combine.
- Stir in the rice, broccoli, and cauliflower. Add the velveeta cheese, stirring to melt.
- Once Velveeta is melted, return the chicken to the skillet and nestle in the rice. Cover and cook for 5 minutes or until internal temp on the chicken reaches 165F.
- Serve and enjoy!

- Spray large skillet with cooking spray. Add chicken; cook on medium high heat 5 minute or until chicken is cooked through, stirring occasionally.
- Add shell macaroni, milk and water and stir. Bring to boil. Reduce heat to medium-low; simmer 10 minute Add broccoli and carrots; cover. Continue cooking 5 minutes. Remove from heat.
- Stir in Velveeta cheese sauce until well blended.

MEXICAN VELVEETA CHICKEN AND RICE
This recipe is from a former friend who made this religiously. Makes a lot!!!!! I don't know where she got it, but it is very good. Very cheesy, too! If you like Velveeta, this is the recipe to use.

Steps:
- Coat bottom of skillet with oil.
- Add chicken. Cook approximately 10-15 minutes on med-hi heat or until chicken is white clear through. Set aside.
- Boil the water with bouillon until cubes are dissolved, then add rice. Remove from heat and cover 5 mins or until rice is set. (If there is any excess water, this is okay. Leave in for mixing).
- Transfer chicken and rice to a large stock pot. Add velveeta cubes and sour cream. Mix well. Over medium heat, stir frequently to prevent sticking on the bottom until cheese is no longer lumpy. Serve hot. Refridgerate leftovers. REHEAT WELL.

- Add Chicken and cook on medium until no longer pink.
- Stir in chicken broth.
- Bring to a boil and add pasta.

- Add Velveeta and veggies, stir until smooth.
- Serve with salad and garlic toast!
