SPECKLED BUTTER BEANS AND COUNTRY HAM IN LEMON VELOUTE

Speckled Butter Beans and Country Ham in Lemon Veloute image

Provided by Food Network

Categories     side-dish

Time 1h10m

Number Of Ingredients 8

2 1/2 cups water
5 cups fresh or frozen speckled butter beans
1/4 pound country ham with fat removed, cut into small pieces
1 1/2 cups chicken stock
3 tablespoons butter
3 tablespoons flour
2 tablespoons freshly squeezed lemon juice
Salt, to taste

Steps:

  • In a heavy pan, bring the water to a boil and add the butter beans. When the water returns to a boil, turn the heat down and let the beans simmer for about 45 minutes, or until the skins are tender and the insides creamy, and most of the water has boiled off. While the beans are simmering, make the lemon veloute. In a small pan, heat the chicken stock. Fill the bottom of a double boiler with water, and bring to a boil. Meanwhile, in the top of the double-boiler, set directly over low heat, melt the butter and whisk in the flour. Cook, whisking, for five minutes, then slowly whisk in the hot stock. Place over the boiling water and cook for 45 to 50 minutes, stirring occasionally to keep a crust from forming on top. When the beans are done, add the country ham pieces and cook until the ham is just warmed. Meanwhile, remove the beans from the heat, add the lemon juice, and salt to taste. Remove the beans from the heat, pour the veloute over the beans, and mix well. Serve immediately.

ASPARAGUS VELOUTé

Categories     Soup/Stew     Milk/Cream     Blender     Chicken     Egg     Appetizer     Asparagus     Simmer     Boil     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield 4 servings

Number Of Ingredients 7

2 pounds (1 kg.) white asparagus
1 quart (1 L.) chicken stock (or store-bought), or chicken broth (or store-bought or made from a bouillon cube)
A bit of sugar (1 cube if you have cubes)
5 cup (30 g.) cornstarch
1 egg yolk
1 cup (25 cl.) heavy cream
Salt

Steps:

  • 1. Wash the asparagus. Cut 2 inches (5 cm.) off the tips and save them for another use. Do not peel the stalks but cut them into 15-inch (3-cm.) pieces.
  • 2. Bring the stock or broth to a boil in a soup pot. When it bubbles, add the asparagus pieces and sugar. Turn down the heat, cover, and simmer for 20 minutes.
  • 3. Blend and pass through a fine strainer (a chinois if possible), pressing on the solids with a spoon to extract as much liquid as possible. Put the soup back in the pot, bring back to a boil, and boil about 30 minutes more.
  • 4. Thoroughly mix the cornstarch in a bowl with 1 tablespoon cold water. Beat the yolk and cream together in a bowl large enough to hold all the soup.
  • 5. When the soup in the pot has been reduced by about half, whisk in the cornstarch mixture. Boil for 1 minute, whisking constantly, and then gently pour everything into the bowl with the egg-cream mixture, whisking as you pour.
  • 6. Pour the contents of the bowl back into the soup pot and heat very gently in order to thicken. Stir with a spatula and turn off the heat at the first sign of boiling. Blend. Season with salt as necessary.

CHICKEN BREAST WITH VELOUTE SAUCE

Chicken Breast with Veloute Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 50m

Yield 1 serving

Number Of Ingredients 6

1 chicken breast, skin on (chef can remove if desired)
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
3 cups chicken stock
1 ounce clarified butter
1 ounce all-purpose flour

Steps:

  • Sprinkle the chicken with salt and pepper. Heat a large stainless steel skillet over medium-high heat. Add the oil and sear the chicken for 5 minutes. Turn the chicken over, reduce the heat to medium and cook until done, about 5 more minutes. Remove the chicken from the pan and let stand 5 minutes.
  • In the pan that was used to cook the chicken, deglaze with the chicken stock and bring to a simmer. Then lower the heat so that the stock just stays hot.
  • Meanwhile, in a separate heavy-bottomed saucepan, melt the clarified butter over a medium heat until it becomes frothy. Take care not to let it turn brown. With a wooden spoon, stir the flour into the melted butter a little bit at a time until it is fully incorporated, giving you a pale yellow paste called a roux. Heat the roux for another few minutes or so, until it has turned a light blonde color. This helps cook off the raw flour flavor. But since this is a white sauce, you don't want to let the roux get too dark.
  • Using a wire whisk, slowly add the hot chicken stock to the roux, whisking vigorously to make sure it's free of lumps. Simmer until the total volume has reduced by about one-third, stirring frequently to make sure the sauce doesn't scorch at the bottom of the pan, about 30 minutes. Use a ladle to skim off any impurities that rise to the surface.

ASPARAGUS VELOUTE (VELVET SOUP, HOT OR COLD)

Asparagus veloute (velvet soup, hot or cold) image

What is so great about Asparagus veloutes (soup) in the spring and summer you can eat it cold and in the fall and winter you can eat it warm and hot. My mom has made Asparagus soup since I was little and so have I, so when I bought my Gordon Ramsay cookbook, Cooking fo Friends I happended to notice a recipe for Asparagus veloute...

Provided by JoSele Swopes

Categories     Soups

Time 45m

Number Of Ingredients 10

1 3/4 lb asparagus, fresh (organic)
1 1/2 Tbsp olive oil, extra virgin (organic)+for drizzle
2 Tbsp butter (organic irish)
1 small onion, small (organic chopped)
1 celery rib (organic chopped)
1 sprig(s) thyme, leaves(stripped from sprig)
3 c chicken stock or vegetable stock (hot)
1/2 tsp freshly grated nutmeg
2/3 c heavy whipping cream (organic)
lemon juice, fresh (organic) opt squeeze

Steps:

  • 1. Sort out 12 most attractive spears, cut off the tips to use for garnish. Roughly chop the rest and set aside.
  • 2. Heat olive oil and 1/2 the butter in a large pot and add the chopped onion, chopped celery, and a seasoning of salt and pepper. Cook, stirring frequently with wooden spoon, till vegetables begin to soften, 4-6 min. Add the chopped asparagus and the thyme, and nutmeg, and stir over high heat until asparagus is tender but stillvibrant green, 3-4 min. Pour in just enough stock (chicken or vegetable) to cover and simmer for 2 min. Remove from heat.
  • 3. Blend soup while it is still hot. Place 1/2 the vegetables in a food processor or blender using a slotted spoon, add 1 or 2 ladles of hot stock, and puree well, pour through a strainer or seive and repeat till all is complete. Discard pulp....Stir in remaining stock stirring in till well blended you will have a creamy consistency. Taste and adjust the seasoning if needed, add a little lemon juice if you like, do not over season, especially if you are serving cold...
  • 4. When ready to serve add the cream, as not to scortch, just to a simmer. Meanwhile, saute the asparagus tips in the remaining butter with someseasoning in a hot frying pan or saute pan. Add a splash of water, cover the pan, and let the asparagus steam until just tender, 2-3 min.
  • 5. Pour soup into warm bowls garnish with asparagus tips. Drizzle with a little olive oil over the top and serve immediately.

NAGE OYSTERS AND ASPARAGUS IN PERNOD VELOUTE

Nage Oysters and Asparagus in Pernod Veloute image

Provided by Food Network

Number Of Ingredients 9

6 tablespoons butter at room temperature
2 medium leeks, washed and chopped
4 tablespoons flour
4 cups chicken stock
3 stalks celery with leaves, chopped
24 freshly shucked oysters, at room temperature (with up to 1/2 cup oyster liquor)
24 warm asparagus tips, cooked until just tender
2 tablespoons Pernod
Fresh tarragon for garnish, if available

Steps:

  • Bring the chicken stock to a boil in a small saucepan. In a heavy -bottomed pot, melt 4 tablespoons of the butter over medium-high heat. Add the leeks and saute, stirring for 2 minutes. Turn heat down to medium and sprinkle the flour over the leeks. Saute, stirring for 2 minutes. Remove from heat and add the boiling chicken stock all at once. Beat vigorously with a whisk to incorporate the flour into the stock. Return to boil and add the celery. Reduce to a bare simmer, and cook for 30 minutes.
  • When ready to serve, divide the raw oysters and the cooked asparagus tips among 6 wide, shallow soup bowls. If you find the soup too thick, add some oyster liquor to thin it. Strain the soup, bring it to a boil, add the Pernod, and turn off heat. Swirl in the remaining 2 tablespoons of butter with a whisk. Season to taste and pour immediately over the oysters and asparagus in the soup bowls, keeping the oysters just above the surface of the veloute. Garnish with fresh tarragon leaves, if available.
  • As an appetizer: The best way to use this recipe, we feel. A great start to a late-winter/early-spring dinner that leads, perhaps, into a roast leg of lamb. A wonderful way to serve it is to place the bowls before your guests, with the oysters and asparagus already set in them. Then, bring a tureen to the table and ladle the veloute over all.
  • As a main course: If you simply increase the amount of oysters and asparagus-say 8 per person rather than 4-you'll have a light but filling main-course soup. Serve warmed French bread with it, and a light frilly salad tossed with fresh goat cheese.

MUSHROOM VELOUTE (MUSHROOM SOUP)

Mushroom Veloute (Mushroom Soup) image

Despite the fancy name, this soup from James Peterson is suprisingly easy to accomplish. The interesting twist here is pureeing the mushrooms raw and adding them to the soup directly before serving. (You can experiment with different kinds of mushrooms. If you want to use dried mushrooms, Peterson suggests that you soak them in the Madiera or sherry until they have softened.) Enjoy!

Categories     Vegetable

Time 40m

Yield 8 serving(s)

Number Of Ingredients 10

1 onion, medium size, finely chopped
4 tablespoons butter, unsalted
3 tablespoons all-purpose flour
1/2 cup madeira wine or 1/2 cup dry sherry
1 quart vegetable broth or 1 quart dried porcini mushroom broth
14 ounces white mushrooms or 14 ounces cremini mushrooms, rinsed and dried
1 cup heavy cream
salt
pepper
1/2 cup heavy cream, lightly whipped

Steps:

  • Prepare a veloute base by cooking the onion in a 4 quart pot over medium heat. Stir almost continuously to prevent browning.
  • When the onion turns translucent (after about 10 minutes), add the flour.
  • Stir over medium heat for 5 minutes more to cook out the starchy taste.
  • Add the Madiera (or sherry) and broth.
  • Whisk the soup to get rid of any lumps, and bring it to a simmer.
  • Simmer for 5 minutes.
  • Put the mushrooms in a blender and add 1 cup of the hot soup base.
  • Blend the mushrooms on high speed for about 2 minutes. (Add a little more of the soup base, if necessary, to get them moving.).
  • Put a strainer over the pot and pour the contents of the blender through it, into the the pot with the rest of the base.
  • Add the cream. (If you want the soup perfectly smooth, strain it through a medium or fine mesh strainer.).
  • Bring the soup back to a simmer and season it with salt and pepper.
  • Ladle it into hot bowls and put a dollop of whipped cream on each serving.

PAN SEARED HALIBUT WITH GARLIC CHIVE SPAETZLE, LOBSTER AND FAVA BEANS WITH A WILD MUSHROOM VELOUTE

Pan Seared Halibut with Garlic Chive Spaetzle, Lobster and Fava Beans with a Wild Mushroom Veloute image

Provided by Food Network

Categories     main-dish

Time 1h35m

Yield 2 servings

Number Of Ingredients 21

1 cup milk
1 cup all-purpose flour
5 whole eggs
1 teaspoon ground nutmeg
Salt and freshly ground black pepper
2 tablespoons minced garlic
Oil
2 tablespoons butter
2 shallots
1 cup mushrooms
1 cup leek whites
1 quart fish stock (chicken or vegetable will do)
1 quart cream
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 (7-ounce) fillet halibut
2 tablespoons butter, divided
3 ounces spatzle
2 tablespoons blanched fava beans
2 ounces par-cooked lobster meat
2 ounces mushroom veloute

Steps:

  • Mix milk, flour, 5 whole eggs, nutmeg, 1 teaspoon of salt and freshly ground pepper and minced garlic until the dough forms. Allow to rest for 30 minutes. Over a pot of salted boiling water, pass the dough through a perforated pan or spaetzle maker. Once the dumplings float, strain out of the water and place them on a tray until room temperature. Moisten with a little oil and store for up to 2 days, refrigerated.
  • In a pot place 2 tablespoons of butter, 2 shallots, 1 cup of leeks and 1 cup of mushrooms and cook over medium heat for 15 minutes. Then add the fish stock and reduce by half. Add your 1-quart of cream and reduce by another two thirds. Place in a blender until smooth and pass through a strainer. Adjust with salt and pepper.
  • You will need 2 pans for cooking and a small pot for your sauce. In a pan on medium-high heat, add the oil and allow 30 seconds to heat up. Then place the fillet of fish away from you in a pan so it doesn't splash you. While the fish is cooking, put the other pan on high heat, place half of the butter and allow to brown slightly. Once slightly brown add the spatzle and allow to cook for about 1 1/2 minutes. At this stage add the fava beans and lobster; allow to cook for no more than 2 minutes.
  • Your fish should be almost cooked by this point with a nice golden brown crust, flip and finish for 1 minute. Place the sauces on warm plates with the spatzle saute in the middle and the drained fish on top.

VELOUTE (USED FOR "LOBSTER ENCHILADAS W/WHITE WINE SAUCE")

Veloute (used for

This sauce, used to prepare numerous white sauces, has a name that translates from French as "velvety, soft, and smooth to the palette". A truly excellent veloute should meet several criteria. The flavor of a veloute should reflect the stock used in its preparation: white veal, which will be nearly neutral in flavor: chicken: or fish. It is thickened with an appropriate amount of roux.

SPAGHETTI WITH SEAFOOD VELOUTé

Spaghetti with seafood velouté image

Treat someone special to this elegant meal for two, with gently poached oysters and other delicious seafood

Provided by Gordon Ramsay

Categories     Dinner, Main course

Time 1h20m

Number Of Ingredients 14

8 oysters
300g piece skinned salmon fillet
3 large scallops or 6 smaller scallops
6 large raw tiger prawns
500ml fresh fish stock
50g butter
1 large shallot , chopped as finely as possible
200ml white wine or dry vermouth, or half of each
150ml whipping cream
large handful mixed soft herbs including parsley and chives, finely chopped
1 tbsp lemon juice
150g fresh spaghetti
drizzle olive oil
chervil or parsley sprigs, to serve

Steps:

  • Prepare all the seafood by first opening the oysters into a sieve over a bowl to catch the juices (see video technique). Trim and slice the salmon into 6 equal-size square chunks. If the scallops are large, cut them in half lengthways. Peel and devein the prawns if needed.
  • Place the strained oyster juice and fish stock into a shallow saucepan and bring to a simmer. First add the salmon and poach for 1 min. Add the prawns and oysters (if using large ones) and poach for 1 min more. Add the scallops and poach for 1 min more, then add the oysters (if small) and simmer everything for a final min until just cooked.
  • Carefully tip the fish and poaching liquid into a sieve over a large saucepan or bowl, keeping all the salmon chunks intact.
  • Heat half the butter in the cleaned shallow pan and add the shallot. Cook very gently for 5 mins until soft but not coloured, then pour in the alcohol and boil until reduced to a few tablespoons. Pour in the poaching liquid and boil down until reduced by half, about 20-25 mins. Stir in the cream and, once more, reduce by half. Turn down to a gentle simmer and whisk in the rest of the butter.
  • Gently add the seafood to the sauce, taking care not to break up the salmon. Simmer lightly until heated through, then add most of the herbs, squeeze over the lemon juice and set aside.
  • Meanwhile, cook the spaghetti in plenty of boiling water until just done, about 3-4 mins, then drain well and add back to the pan with a drizzle of olive oil and the rest of the herbs. You are now ready to plate up.
  • Use a roasting fork to twirl a neat bundle of spaghetti. Stand the bundle in the middle of a warm large pasta bowl. Alternate the salmon and seafood around the pasta. Spoon the sauce over the seafood, top the pasta with the chervil or parsley sprigs and serve immediately.

TWICE-COOKED PORK BELLY WITH AN ONION & APPLE VELOUTé

Twice-cooked pork belly with an onion & apple velouté image

Gordon Ramsay keeps the cost of entertaining down by working his magic on a cheap cut of meat

Provided by Gordon Ramsay

Categories     Dinner, Lunch, Main course

Time P1D

Number Of Ingredients 15

1 tbsp coriander seeds
2 star anise
1 tbsp sea salt
½ a whole pork belly , about 1.5kg (ask for the thin half), boned, skin left on but not scored
handful thyme
handful rosemary
2 x 350g jars goose fat (or use lard, sunflower or vegetable oil)
6 curly parsley sprigs
25g butter
4 onions , finely chopped
2 Granny Smith apples , cored and sliced
250ml chicken stock
142ml tub double cream
24 thin green-topped carrots , trimmed, peeled, but left whole
2 tbsp olive oil

Steps:

  • With a pestle and mortar, crush the coriander seeds with the star anise, then stir through the salt. Season the pork on both sides with the salt mix. Place the pork, skin side up, in an ovenproof dish that is just large enough to hold it. Scatter over the herbs, then leave overnight if you have time - see tip, below.
  • Heat oven to 150C/fan 130C/gas 2. Empty the goose fat into a saucepan and heat until liquid and starting to simmer. Ladle the fat over the pork; add sunflower oil to cover if you need to. Cover the dish with foil, then cook the pork in the oven, undisturbed, for 3 hrs by which time it will be very tender.
  • Remove the dish from the oven and leave it to settle for 10 mins. Meanwhile, line a tray with a piece of greaseproof paper. Carefully lift the pork from the fat and pick off any herbs. Lay it on the paper, skin side down. Cut another piece of paper and lay it over the pork. Cover with a tray, weighed down with a couple of cans, and leave in fridge overnight - see tip, below.
  • When you are ready to cook the pork, heat oven to 220C/ fan 200C/ gas 7. Remove pork from the tray, then peel away paper. Lightly score the skin into neat diamonds with a sharp knife and trim the edges so you get a perfect rectangle.
  • To cook the pork, heat a drizzle of oil in a large non-stick ovenproof pan. Lay the pork, skin side down, and leave for a few mins to crackle, then place the pan in the oven and cook for 20 mins. Remove from the oven and check to see that the skin has blistered, then carefully flip it over and cook the underside for 3 mins just to heat through. Lift to a board.
  • While the pork is roasting, make the velouté. Heat the butter in a frying pan. Cook the onions and apples for 8-10 mins until soft, but not coloured. Pour in the stock and simmer for 8 mins until the apples start to collapse. Stir in the cream, then simmer everything for 2 mins more. Season with salt and pepper. Carefully tip into a blender, blitz until as smooth as possible, then tip into a saucepan so it's ready to be reheated.
  • Boil the carrots for 2 mins in salted water, then drain well. Heat the olive oil, then fry the carrots with seasoning for 5 mins, tossing occasionally until starting to brown. Gently reheat the velouté. You're now ready to plate up.
  • Use a sharp knife to carve the pork into long slices about 2cm thick. Lay 2 or 3 slices on each plate, slightly overlapping. Put 3 or 4 carrots on each plate, lying all in the same direction as the pork. Spoon a puddle of velouté over the end of the carrots. Garnish with a sprig of parsley.

2 tablespoons butter
3 tablespoons flour
1 cup fish stock (see recipe)

Yield Serves 6

Number Of Ingredients 9

3 tablespoons plus 1 teaspoon vegetable oil
2 1/2 cups chopped onions
8 cups 1-inch pieces peeled acorn squash (about 3 1/4 pounds)
2 tablespoons chopped fresh ginger
4 1/2 cups (or more) canned low-salt chicken broth
2 tablespoons tomato purée
Pinch of cayenne pepper
1 tablespoon cumin seeds
1 tablespoon mustard seeds

Steps:

  • Heat 3 tablespoons oil in heavy large pot over medium-high heat. Add onions; sauté until light golden, about 8 minutes. Add squash and ginger; sauté 5 minutes. Add 4 1/2 cups broth. Simmer until squash is very tender, about 35 minutes.
  • Working in batches, purée soup in blender. Return to same pot. Add tomato purée and cayenne. Season to taste with salt and pepper. Simmer 10 minutes to blend flavors; add more broth if soup is too thick. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm soup over medium heat before serving.)
  • Heat 1 teaspoon oil in small skillet over medium heat. Add cumin and mustard seeds and stir until fragrant, about 2 minutes. Ladle soup into bowls. Top with seed mixture and serve.

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 14

1 tablespoon butter
2 ounces shallots, chopped
1 clove garlic, chopped
1 bay leaf
1 sprig thyme
10 ounces white mushrooms
8 ounces water
8 ounces heavy cream
Salt and pepper
3 egg yolks
1 tablespoon water
1/4 tablespoon white truffle oil
Salt and pepper
6 slices white truffles

Steps:

  • To prepare the veloute, combine the butter, shallots, garlic, bay leaf, and thyme in a large saucepan. Sweat the shallots until translucent. Add the whole mushrooms, reduce to low heat, and cook, stirring for 3 minutes. Add the water, bring to a boil, and cook until mushrooms are tender. Pour the mixture into a blender or food processor, and process until smooth. Pour the veloute back into the saucepan, add the cream, and season with salt and pepper.
  • To make the sabayon, use a stainless steel bowl over a double boiler. Combine the egg yolks and water and beat for about 10 minutes, until eggs reach a stable foamy consistency. Remove the bowl from the double boiler, stir in the truffle oil, and season with salt and pepper.
  • To serve, divide the veloute among the bowls. Pour a few tablespoons of the sabayon in the center of each bowl, forming a circle. Finish with a slice of white truffle for each bowl.
