1 can (12 ounces) white water-packed tuna, drained and flaked
1/2 cup frozen mixed vegetables, thawed and chopped
1/3 cup mayonnaise
2 tablespoons finely chopped onion
1 tablespoon ranch salad dressing mix
4 hamburger buns, split

Steps:

  • In a large bowl, combine the first five ingredients. Spoon tuna mixture onto bun bottoms; replace tops., Place each sandwich on a piece of heavy-duty foil (about 12 in. square). Fold foil around each sandwich and seal tightly; place packets on a baking sheet. , Bake at 400° for 10-15 minutes or until heated through.

This is based off of one of my favorite sandwiches that is sold in a nearby grab 'n go place. Use your favorite tzatziki sauce, if desired.

Number Of Ingredients 16

1 foccacia bun
tzatziki, sauce (your favorite, or see below)
1 slice provolone cheese
1 slice cheddar cheese
1/4 red pepper, sliced
1 slice large tomatoes
2 rings large red onions
1/4 cucumber, sliced
1/2 cup mixed greens
1 (6 ounce) container fat free Greek yogurt
1/2 cucumber, seeds removed, grated and squeezed so as much liquid as possible is removed
1 tablespoon red wine vinegar
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1/2 teaspoon garlic powder
salt and pepper, to taste

Steps:

  • Split open foccacia bun. Spread tzatziki sauce on top half of bun and cover with provolone slice. Place cheddar slice on bottom half of bun.
  • Layer the remaining ingredients over the bottom half of the bun.
  • Cover with top half of bun, slice in half, and enjoy!
  • For tzatziki sauce: Combine all ingredients and mix well. Allow flavors to blend in fridge overnight. If using the recipe included, it will make more than needed for one sandwich.

I found these bolillo rolls at the local marketplace. They were perfect for sandwiches. I had a salad ready for lunch, but didn't have time for both a sandwich and salad. So, I compromised! A veggie salad sandwich!. Great served with a side of potato salad or chips anytime.

- bolillo rolls or sandwich rolls of your choice - 1 per person
- mayonnaise
- slice of cheese, your choice, optional
YOUR CHOICE SALAD INGREDIENTS
- romaine lettuce leaves, rough chop
- cucumber slices
- zucchini slices
- tomato slices
- green onion, thin sliced
- sprouts
- sweet and/or hot pepper, thin sliced

Steps:

  • Slice open the bolillo roll, horizontally lengthwise.
  • Slather with mayonnaise.
  • Add the salad and enjoy.
  • You can also add mustard, salad dressing (sparingly) or any other vegetable to the salad that you like. (For people who love their meat, add thin slices of the meat of your choice.)
