3 small tomatoes, chopped
1 cup thinly sliced green onions
1 cup each chopped celery, sweet red pepper, zucchini and carrots
3 tablespoons balsamic vinegar
2 tablespoons minced fresh basil or 2 teaspoons dried basil
2 tablespoons olive oil
1 tablespoon sugar
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
2 garlic cloves, minced
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the vegetables, vinegar, basil, oil, sugar, oregano, garlic, salt and pepper. , Drain pasta and rinse in cold water; stir into vegetable mixture. Add Parmesan cheese and toss to coat. Cover and refrigerate for at least 2 hours before serving.

1 pound fusilli
2 ears corn, husked
1 yellow squash, sliced lengthwise into 1/2-inch-thick planks
1 zucchini, sliced lengthwise into 1/2-inch-thick planks
1 orange bell pepper, cut into 1-inch strips
4 scallions
2 tablespoons extra-virgin olive oil, plus more for brushing
Salt and freshly cracked black pepper
3 tablespoons store-bought pesto
Juice and zest of 1 lemon
1 pint grape tomatoes, halved
1/4 cup fresh parsley, chopped

Steps:

  • Preheat an outdoor grill to medium-high heat. Cook the pasta according to the package directions. Drain and let cool.
  • Brush the corn, yellow squash, zucchini, bell pepper and scallions lightly with oil and season lightly with salt and pepper. Grill the corn, turning frequently, until cooked through and the kernels are charred, about 10 minutes. Grill the zucchini and squash slices, turning once, until charred but not mushy, about 2 minutes per side. Grill the pepper slices until they are charred on both sides, about 3 minutes per side. Grill the scallions whole, turning them frequently, until charred and soft, about 2 minutes.
  • Meanwhile, in a large bowl, whisk together the pesto, olive oil, lemon juice and zest. Season to taste with salt and pepper.
  • Cut the yellow squash, zucchini and bell peppers into 1/2-inch pieces and add them to the bowl with the dressing. Cut the kernels off the corn and add them to the zucchini; chop the scallions and add them, too. Add the pasta and grape tomatoes and gently toss until everything is coated with the dressing. Add the parsley, toss and season to taste. Serve at room temperature.

1 zucchini, cut into cubes
1 green bell pepper, chopped
1 onion, cut into 1/2-inch pieces
3 tablespoons olive oil

1 (16 ounce) package rotini pasta
¾ cup prepared pesto sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread roma tomatoes, zucchini, green bell pepper, and onion onto a large baking sheet and drizzle with olive oil. Toss vegetables to coat evenly with oil; season with salt and black pepper.
  • Bake in the preheated oven until vegetables are tender and starting to brown, about 30 minutes. Let vegetables cool.

1 yellow squash (diced)
1 small bunch asparagus (sliced)
1 red bell pepper (diced)
Salt and Pepper, to taste
1 (16 ounce) box Rotini pasta
8 ounces balsamic vinaigrette (we used Kraft's Balsamic Vinaigrette)

Steps:

  • Preheat oven to 350 degrees.
  • Line baking sheet with tinfoil.
  • Spread out chopped vegetables on tin foil and sprinkle with salt and pepper
  • Roast vegetables for 12-15 minutes or until softened, and beginning to brown.
  • While vegetables are cooking, prepare pasta according to box directions.
  • In a large bowl, toss together pasta and cooked vegetables.
  • Pour balsamic dressing over salad and toss until all vegetables and noodles are coated. Feel free to add more or less dressing to your liking.
  • Serve immediately or store in refrigerator.
  • We love this salad the next day when the dressing has soaked into all the vegetables.

It's been so hot the past few days I've been trying to keep cooking to a minimum. I came up with this pasta salad to put some garden herbs and veggies and ones I had in the refrigerator to use.

2 cups rotini pasta, dry
water, to cook
1 dash salt
1 dash olive oil
2 medium carrots, julienned
1 medium red bell pepper, 1/2 inch dice
1 cup fresh green beans, ends trimmed and halved
2 tablespoons fresh peas (or frozen)
3 spring onions or 3 scallions, chopped
2 roma tomatoes, chopped
4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon minced garlic
1 teaspoon mustard
1 -2 teaspoon capers (optional)
2 teaspoons fresh parsley, chopped
1 teaspoon fresh tarragon, chopped
1 teaspoon sugar
salt & fresh ground pepper, to taste

Steps:

  • Cook pasta in boiling salted water according to directions, (usually about 10 minutes) but do not overcook. Mushy pasta will not work well for this recipe. Add a dash of olive oil to keep pasta from sticking while cooking.
  • In a bamboo or other type of steamer, steam the julienned carrot, fresh peas and green beans for about 5 minutes until just tender. Alternately, you could parboil them for just a few minutes to get them softened just a bit.
  • Drain and rinse pasta under cold water in a colander. Add to large bowl.
  • Mix steamed carrots, green beans and peas together into pasta. Add red bell pepper, green onions/scallions, and chopped tomatoes.
  • Mix ingredients for dressing together, and pour over pasta and veggies. Mix well to combine.
  • Place lid or plastic wrap over the bowl and let chill in refrigerator for at least an hour to let flavors meld.

400g can chickpeas, drained and liquid reserved
1 tbsp tahini
2 tbsp extra virgin olive oil
½ garlic clove
½ lemon, zested and juiced
250g short pasta of your choice
50g baby spinach, roughly chopped
200g cherry tomatoes halved (we used a mixture of red and yellow)
¼ cucumber, quartered lengthways and cut into small triangles
75g pitted olives of your choice, roughly chopped

Steps:

  • Boil the kettle. Tip half the chickpeas into a food processor, add roughly half the reserved liquid from the can (the liquid should come to just below the level of the chickpeas in the blender), the tahini, olive oil, garlic, lemon zest and juice and some seasoning. Blitz until you have a smooth, loose hummus. Check for seasoning.
  • Cook the pasta following pack instructions. Drain, reserving a mugful of the cooking water, and rinse the under cold running water for a few seconds until cool.
  • Toss the cooked pasta, spinach, tomatoes, cucumbers, olives, the rest of the chickpeas and the hummus dressing together in a large bowl until everything is well-coated. Add a splash of the reserved pasta cooking water if the dressing is too thick. Will keep covered and chilled for up to 6 hrs, or in an airtight container in a cool bag for 2 hrs. Add a splash of water to loosen the dressing again before serving.

1/2 cup Miracle Whip
4 ounces nonfat plain yogurt
1/3 cup Italian dressing
4 cups pasta, cooked, rinsed in cool water & drained (any pasta, I used wacky mac veggie spirals)
1 (16 ounce) bag frozen vegetables, cooked and cooled (I used california mix)
1/3 cup parmesan cheese, grated
1 teaspoon herbes de provence
1 dash celery salt
1 dash dill

Steps:

  • Cook the pasta in water with a dash of salt.
  • Combine all other ingredients in a large bowl with a lid.
  • When pasta is cooked through, drain and rinse in cold water.

  • Let sit in fridge for several hours before serving.

This recipe pleasantly proves that making pasta salad doesn't have to be a time-consuming task, thanks to the head start from bottled salad dressing.

1-1/2 cups uncooked elbow macaroni
1 pint cherry tomatoes, quartered
1/2 cup chopped green pepper
1 celery rib, chopped
2 green onions, chopped
1/2 cup Italian salad dressing
1 tablespoon mayonnaise
1/4 teaspoon pepper

Steps:

  • Cook macaroni according to package directions. Drain and rinse in cold water. In a large bowl, combine the macaroni, tomatoes, green pepper, celery and onions. In a small bowl, whisk the salad dressing, mayonnaise and pepper. Pour over salad; toss to coat. Refrigerate until serving.

Great summer side salad. I use extra sharp cheddar, because in my world, the sharper the better. The recipe calls for fresh dill, which I never have on hand so I always use dry, probably about 1 teaspoon, to taste. I do not remember where I got this, oops, so if someone knows, please let me know so I can put it here! Time to chill not included in cooktime.

1 lb penne, rotini or 1 lb radiatore shaped pasta
1 red bell pepper
1 orange bell pepper
1 bunch scallion
1 (3 7/8 ounce) can black olives (sliced or whole does not matter, your pref)
8 ounces cheddar cheese, shredded
1 cup mayonnaise
3 tablespoons fresh dill, chopped

Steps:

  • Cook the pasta al dente Drain and run under cold water until cool.
  • Chop all the vegetables finely.
  • Once the pasta is completely cooled and dry, mix in the vegetables. Add mayo then dill. Mix very well.
  • Add shredded cheddar and mix well. Chill in the fridge at least two hours to let flavors meld.

This recipe is great for those of us that "eyeball" (as opposed to measuring) ingredients. Very healthy, heavy on the veggies and lots of good fat from the E.V.O.O. This salad is ideal for camping, the beach, pot lucks, packed lunches, picnics, etc. as it has no mayo and therefore travels gracefully. Not to mention it is DELICIOUS. Try this salad- you will be addicted instantly and your body will thank you for it!!

1 lemon, for zest and juice
4 -6 garlic cloves, minced, crushed, pressed, whatever is your method
extra virgin olive oil (I probably use 1/3-1/2 C. when I make this)
1/2-1 bunch basil, finely chopped
salt and pepper
1 (12 ounce) package uncooked pasta
1 red bell pepper
1 green bell pepper
2 -4 stalks celery
1/2 red onion
1 cup sliced pepperoncini pepper (more or less ( )
1 (13 7/8 ounce) can (chopped or 1 small sliced olive)
4 (6 ounce) cans tuna (in water or oil, drained)

Steps:

  • Cook the pasta according to directions, drain, and set aside (I cook them while I chop the veggies). Zest the lemon into the bowl. Squeeze the lemon's juice into the bowl (tip: zap the lemon in the microwave for 5 seconds and then roll it on the counter with your palm to get more juice out of it). Add the garlic and basil. Add the olive oil (I base my "correct" amount of E.V.O.O. based on the consistency of the dressing- I like it to be about the consistency of salsa). Whisk everything together (and take a big whiff while you're at it- you'll think you've died and gone to heaven). Start chopping the veggies as chunky or fine as you want. Throw them in the bowl with the dressing as you go. When you're done with the veggies, add the pepporicini slices and olives. Then add the well drained tuna and mix everything together just until the dressing is totally incorporated. Now is a good time to adjust the seasonings and/or olive oil, so take a taste test and make your additions (or don't) accordingly. Finally, when the pasta is reasonably cool, add it in gradually and mix thoroughly (and as gently as possible). Let it chill in the fridge for a couple hours and enjoy!
