BASIL RANCH DIP

Use prepared pesto in this buttermilk ranch-style dip for bold basil flavor.

Number Of Ingredients 10

1 small clove garlic
Kosher salt and freshly ground black pepper
1 1/2 cups mayonnaise
3/4 cup buttermilk
3 tablespoons finely chopped fresh parsley
2 tablespoons prepared basil pesto
3/4 teaspoon finely grated orange
2 scallions, finely chopped
Fresh basil leaves, for garnish (optional)
For serving: cut up vegetables and crackers

Steps:

  • Finely chop the garlic and then sprinkle with 1/4 teaspoon salt. Work into a paste with the side of a chef's knife. Transfer to a medium bowl and add the mayonnaise, buttermilk, parsley, pesto, orange zest, scallions, 1/2 teaspoon of salt and a few grinds of pepper. Whisk until well blended.
  • Refrigerator in an air-tight container until ready to use or up to 3 days. Garnish with fresh basil leaves if using and serve with cut vegetables and crackers for dipping.

VEGETABLE PARMESAN

Butter, for greasing
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 medium eggplant, cut into 1/4 to 1/2-inch thick slices
2 medium fennel bulbs, trimmed and sliced into 1/4-inch thick pieces
1 red bell pepper, cut into thirds
1 yellow bell pepper, cut into thirds
1 orange bell pepper, cut into thirds
1 (26-ounce) jar marinara sauce
3 cups shredded mozzarella cheese
1 cup grated Parmesan
1 cup plain bread crumbs

Steps:

  • Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 13 by 9-inch glass baking dish.
  • Drizzle the eggplant slices, fennel slices and peppers with olive oil. Season with salt and pepper. Grill the vegetables for 3 to 4 minutes each side until softened.
  • Spoon 3/4 cup of the marinara sauce over the bottom of the prepared baking dish. Arrange the eggplant slices on top. Sprinkle with 1 cup of mozzarella cheese and 1/3 cup Parmesan cheese. Arrange the peppers in a single layer on top. Spoon 3/4 cup of marinara sauce over the peppers. Sprinkle with 1 cup of mozzarella cheese and 1/3 cup Parmesan cheese. Arrange the fennel on top and cover with the remaining sauce. Sprinkle with the remaining cheese. Scatter the bread crumbs over the cheese and drizzle liberally with oil. Bake until the top is golden and forms a crust, about 30 to 35 minutes
  • Remove from the oven and cool for 10 minutes before serving.
  • Cook's Note: The vegetables can also be baked in a 375 degrees F oven for 15 to 20 minutes until softened.

One 15-ounce can white beans, drained and rinsed
1/3 cup extra-virgin olive oil
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon
1 1/2 tablespoons lemon juice (1/2 large lemon)
1/4 teaspoon anchovy paste
1/4 teaspoon salt
1 cup sour cream
1/2 cup aged Gorgonzola cheese
1/2 English cucumber, diced (about 1 cup)
2 tablespoons chopped fresh dill
1 teaspoon lemon zest (1 small lemon)
1/4 teaspoon salt
Store-bought guacamole or salsa
Serving suggestions: assorted vegetable crudites, pita chips, tortilla chips and pretzels

Steps:

  • For the green goddess white bean dip: In a food processor, puree the white beans, olive oil, basil, chives, tarragon, lemon juice, anchovy paste and salt together until smooth, scraping down the sides with a rubber spatula as needed. Refrigerate until ready to use.
  • For the Gorgonzola-cucumber dip: In a medium bowl, fold together the sour cream, Gorgonzola, cucumbers, dill, lemon zest and salt. Refrigerate until ready to use.
  • To serve, place white bean dip, Gorgonzola-cucumber dip and the guacamole in separate bowls. Surround the dips with vegetable crudites, pita chips, tortilla chips and pretzels.

SMOKY EGGPLANT DIP



Smoky Eggplant Dip image

2 large globe eggplants
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh mint
1 teaspoon chopped fresh oregano
2 tablespoons lemon juice
6 dried pequin chiles, crushed
1 teaspoon kosher salt
1/4 cup extra-virgin olive oil
Flatbread or crackers, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Pierce each eggplant with the tip of a knife in about 10 spots. Place on a rimmed baking sheet and roast until very soft and cracking in a few spots, about 50 minutes. Let cool slightly.
  • Cut each eggplant open lengthwise and scrape out the flesh with a large spoon; discard the skin. Place the flesh in the bowl of a food processor and pulse to coarsely chop. Add the parsley, mint, oregano, lemon juice, chiles, salt and olive oil. Puree for 20 seconds to combine. Allow to cool slightly before serving with crackers.
