This is a great low fat low carb salad. Very satisfying. Use as side or main dish for lunch. Throw whatever into this salad. I love the salty from the feta along with the sweet of the strawberries and dressing. I find using the veggetti with vegetables give You that full feeling pasta does. Enjoy!!

1 english cucumber
6 strawberries chopped
DRESSING
2/3 c exxtra virgin olive oil
1/3 c apple cider vinegar
1 Tbsp sweetner of choice (splenda) strawberry jam
s&p
TOPPING
1/4 c feta cheese

Steps:

  • 1. Start By slicing or using You veggeti for the cucumber. Place in collander and salt. This will allow water to be released. In the meantime cube Your strawberries.
  • 2. Whisk Your dressing ingredients. The strawberry jam works great. Combine all salad ingredients drizzle with dressing, then feta and serve. Wouldent this be great served on top of a steak???
  • 3. There will be dressing left over. Cap and refrigerate for another salad. Love my new gadget! If You dont have one, You can grate Your cucumber.

GREEK FETA AND CUCUMBER SALAD

Number Of Ingredients 8

2 English cucumbers (also known as seedless or hothouse)
Salt
1 cup crumbled feta cheese
2 tablespoons fresh oregano leaves
1 clove garlic, minced
1 shallot, minced
Zest and juice of 2 lemons
2 ounces extra-virgin olive oil

Steps:

  • Slice cucumbers as thinly as you can. A mandolin or vegetable slicer will make quick work of it. Toss together the cucumbers and a large pinch of salt in a mesh strainer set over a bowl. Combine the feta, oregano, garlic and shallots in a separate bowl. Add the lemon juice and zest and whisk in the olive oil. Drain off and discard any water that has released from the cucumbers. Toss together the cucumbers and the dressing. Serve.

6 cups torn mixed salad greens
2 cups fresh strawberries, sliced
1 package (4 ounces) crumbled feta cheese
1/4 cup sunflower kernels

1 cup slivered almonds
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
ΒΌ cup raspberry vinegar
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
1 cup vegetable oil
1 head romaine lettuce, torn
1 pint fresh strawberries, sliced
1 cup crumbled feta cheese

Steps:

  • In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
  • In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
  • In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.
