German Potato Salad image

This is a nice change from the regular potato salads. It is the closest recipe I have that reminds me of going to the Friday fish frys when Catholics were not allowed to eat meat on Friday. All the local bars had kitchens and a room in the back where the owner's wife cooked the dinner. One week it would be regular potato...

Number Of Ingredients 9

6 medium potatoes
6 slice bacon
3/4 c chopped onions
2 Tbsp flour
1 1/2 Tbsp sugar
1/2 tsp celery seeds
dash(es) pepper
1/3 c vinegar
2/3 c water

Steps:

  • 1. Boil potatoes in their jackets. Peel and slice thinly.
  • 2. Fry bacon slowly and drain. Saute the onions in the bacon grease until golden brown.
  • 3. Blend in the flour, sugar, salt, celery seeds and pepper; cook over low heat, stirring until smooth and bubbly. Remove from heat.
  • 4. Stir in vinegar and water and bring to a boil for 1 minute, stirring constantly. Stir in potatoes and crumbled bacon.
  • 5. Remove from heat and cover until served.
