Make the BEST veggie pizza at home! This mouthwatering vegetarian pizza recipe features fresh cherry tomatoes, bell peppers, artichoke, spinach and more. Recipe yields two 11-inch pizzas or 1 large (about 6 to 8 servings).

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
1 cup pizza sauce or marinara
2 cups baby spinach
2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
1/2 cup jarred or canned artichoke, cut into 1" pieces
1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
1/2 cup red onion, cut into thin wedges
1/2 cup halved cherry tomatoes
1/2 cup pitted Kalamata olives, halved lengthwise
1/2 cup sliced almonds (optional)
Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

Steps:

  • Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it on the upper rack. Prepare dough through step 5.
  • Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (use all three cups if you want a cheesy pizza as shown here).
  • Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it).
  • Transfer pizzas to a cutting board and sprinkle with with fresh basil, red pepper flakes and Parmesan, if using. Slice and serve! Leftover pizza keeps well in the refrigerator for 4 days, or for several months in the freezer.

These tamales are a great base recipe that can actually be used with a meat filling instead, but this jalapeno, cheese and tomato filling is really amazing.

2 cups masa corn flour
1/2 cup butter, cubed
1 teaspoon salt
1 pinch sugar
1/2 cup broth
1 teaspoon baking powder
1/4 teaspoon black pepper
2 1/2 cups corn (fresh or thawed frozen will work)
1 1/2 cups cheddar cheese (mexican cheese is better, reserve about half for filling)
4 ounces roasted chilies (fresh roasted skinless peppers work too)
2 tomatoes, deseeded, pealed and sliced (can immerse in boiling water for 20 seconds, and then ice water to loosen skins)
parchment paper or corn husk

Steps:

  • In a food processor blend corn and cheese until corn is in nearly a meal consistency.
  • Add butter, Masa flour, salt, sugar, pepper and baking powder and process until the mixture is loosely mixed.
  • Add broth and mix until just smooth.
  • Place about 2 tbsp of mixture into soaked corn husk or parchment paper.
  • Fill with some cheese, slices of roasted chili pepper and tomatoes.
  • Close parchment paper or corn husk around filling, trying to cover filling with Masa flour mixture. If you have trouble closing or have too much filling try using less in your subsequent tamales.
  • Roll wrapper closed, roll and fold over ends and set aside.
  • Once they're done they can be refrigerated or frozen, or placed immediately in steaming tray above boiling water for about 30 minutes, or until Masa flour mixture is set.

This is from Fast-Scratch Vegetarian by Land O' Lakes, and it was a staple during my veg days. It is quick and easy to throw together and quite a hearty meal! I usually make my own crust, and often make it much larger than 12 inch.

1 (15 ounce) can chili beans, drained (do not rinse)
2 tablespoons canned diced green chiles
12 inches prepared pizza crust
1 (7 ounce) can corn, drained
1 cup reduced-fat cheddar cheese, shredded
3 green onions, sliced
2 roma tomatoes, chopped

Steps:

  • Heat oven to 425.
  • Place drained beans in a small bowl and mash with fork or pastry blender. Stir in chiles.
  • Place crust on baking sheet and spread with bean mixture to 1/4 inch of edge.
  • Top with corn, cheese, green onions, and tomatoes.
  • Bake 10-12 minutes or until cheese is melted and pizza is heated through. Sprinkle with some cilantro if desired.
