Potato Lovage Soup image

Number Of Ingredients 8

2 tablespoon butter
10 ounces yellow onion (1 medium)
3 cups milk
1 quart chicken or vegetable stock
2.5 pounds potatoes
1 ounce Lovage leaves, de-stemmed
1/2 teaspoon Salt (optional)
1 teaspoon Celery seeds (optional)

Steps:

  • Peel and dice onion and potatoes.
  • Melt butter in a stock pot and saute onions until lightly browned, about 8 minutes.
  • Add potatoes and soup stock and bring to a boil. Then reduce the heat to a simmer and cook covered for until potatoes are tender. About 20 minutes.
  • Add lovage leaves and simmer an additional 5 minutes.
  • Remove the soup from heat and allow to cool for several minutes. Then stir in the milk.
  • With an immersion (stick) blender, liquify the potatoes and lovage leaves.
  • Season with fresh pepper, julienned lovage leaves for garnish, and/or celery seeds. Serve hot or cold.
