1 tablespoon olive oil
1 large onion, chopped (about 2 cups)
2 cups chopped cabbage (see hint below)
3 garlic cloves, minced, up to 4
18 ounces canned sweet potatoes, drained and chopped
14 1/2 ounces tomatoes, wedges undrained or 14 1/2 ounces diced tomatoes, undrained
1 1/2 cups tomato juice
3/4 cup apple juice
1 teaspoon grated fresh gingerroot, up to 2
1/4 teaspoon red pepper flakes, up to 1/2
2 cups frozen cut green beans
1/3 cup natural-style peanut butter

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add onion; cook, stirring, until tender, about 5 minutes.
  • Mix in cabbage and garlic; cook, stirring, until cabbage is tender-crisp, about 5 minutes.
  • Stir in sweet potatoes, tomatoes, tomato juice, apple juice, ginger, and red pepper flakes.
  • Reduce heat to medium-low; cover.
  • Simmer until hot and bubbling, about 6 minutes.
  • Stir in green beans and simmer, uncovered, for 5 minutes.
  • Stir in peanut butter until well blended and hot, about 1 minute.
  • Serve stew with crusty bread and a salad, or spoon it over rice or mashed potatoes.

Spicy Vegetarian Sweet Potato Stew image

Nutritious and spicy vegetarian stew that is light and delicious.

1 (16 ounce) package dry kidney beans
1 teaspoon olive oil
½ medium red onion, chopped
4 cloves garlic, minced
2 cups vegetable broth, or more as needed
2 medium tomatoes, diced, or more to taste
1 medium red bell pepper, seeded and cubed
½ medium sweet potato, peeled and cubed
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ teaspoon ground cinnamon
¼ teaspoon red pepper flakes
1 cup frozen corn
½ cup chopped fresh cilantro

Steps:

  • Place beans in a large bowl with 10 cups water. Soak at room temperature for 8 hours, or overnight.
  • Drain and rinse beans and transfer to a large pot. Cover with 10 cups fresh water and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until they reach desired tenderness, about 45 minutes. Drain and set aside.
  • Heat oil in a large pot over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in 2 cups broth, tomatoes, bell pepper, and sweet potato. Season with chili powder, salt, cumin, oregano, cinnamon, and red pepper flakes. Increase heat to medium-high and bring to a boil.
  • Reduce heat to medium-low and cover. Simmer, stirring occasionally to keep stew from sticking, until potatoes are tender but not mushy, 10 to 20 minutes, adding more broth if it gets too thick.
  • Stir in kidney beans and corn. Cook until heated through, about 3 minutes. Stir in cilantro just before serving.

1 cup chopped onions
3 tablespoons finely chopped gingerroot
5 cloves garlic, finely chopped
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon ground red pepper (cayenne)
2 cans (15 oz each) chickpeas, drained, rinsed
2 cans (14 oz) unsweetened coconut milk (not cream of coconut)
1 can (28 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 lb sweet potatoes, peeled and cut into 1-inch pieces (about 3 cups)
1 bag (5 oz) baby spinach
1/2 cup fresh mint leaves, chopped
1/2 cup fresh cilantro leaves, chopped
1/2 cup chopped roasted cashews
2 red Fresno or jalapeño chiles, thinly sliced, if desired

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Add onions, gingerroot and garlic. Cook 4 to 5 minutes, stirring frequently, until softened and beginning to brown. Add coriander, turmeric, salt, cumin, pepper and red pepper. Cook and stir 30 seconds. Add chickpeas; cook and stir 5 to 6 minutes or until chickpeas begin to brown. Add coconut milk, tomatoes and sweet potatoes; heat to boiling. Reduce heat to medium-low; cover and simmer 25 to 30 minutes, stirring occasionally, until sweet potatoes are tender. Add spinach; stir 1 to 2 minutes or until wilted.
  • Divide among serving bowls; garnish with mint, cilantro, cashews and chiles.

2 tablespoons vegetable oil
1 small onion (diced)
2 garlic cloves (finely chopped)
1/2 yellow bell pepper (seeded and chopped)
1/2 red bell pepper (seeded and chopped)
1 1/2 cups water (more for thinner stew)
1 (14 ounce) can diced tomatoes
1 1/2 cups sweet potatoes (diced and peeled)
1 (15 ounce) can black beans (rinsed and drained)
1/4 cup green chili (diced)
1/4 cup tomato sauce
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon lime juice

Steps:

  • Heat oil in large saucepan. Add onions and garlic, cook until lightly browned. Add bell peppers, cook for 5 minutes. Stir in water, tomatoes, sweet potatoes, beans, chiles, tomato sauce, chili powder and cumin.
  • Cook over medium heat for 20 to 25 minutes or until thickened and potatoes are cooked through. Season with salt and ground black pepper.
