HEARTY LENTIL SOUP WITH SPINACH - VEGETARIAN VERSION



Hearty Lentil Soup With Spinach - Vegetarian Version image

I usually make this with bacon, but I can't eat meat on my current restricted diet, so I've tossed that smoky slab and added some other stuff! I've also almost doubled the original amounts of original recipe - I can't make small batches of soup! I pack it up in plastic containers and take them to work. *Please note that preparation time may vary. I'm a slow chopper and I accounted for that in the given time below!

Number Of Ingredients 14

1/4 cup olive oil (or thereabouts)
1 1/2 large onions, chopped fine
4 medium carrots, peeled and chopped medium
4 celery ribs, chopped medium
6 garlic cloves
2 (14 1/2 ounce) cans diced tomatoes
1 large bay leaf
2 teaspoons minced fresh thyme leaves
2 cups lentils
1/2 teaspoon salt
ground black pepper
8 cups vegetable broth
3 cups water
8 ounces spinach, baby whole or 8 ounces regular spinach, chopped

Steps:

  • Heat olive oil at medium-high heat.
  • Add onions, carrots and celery; cook, stirring occasionally, until vegetables begin to soften (4-8 minutes).
  • Add garlic and cook until fragrant (30 seconds).
  • Stir in tomatoes, bay leaf and thyme; cook until fragrant (30 seconds).
  • Stir in lentils, salt and pepper to taste.
  • Cover, reduce heat to medium-low and cook until vegetables are softened and lentils have darkened *7-10 minutes).
  • Uncover, add vegetable broth and water.
  • Bring to a boil, cover partially, and reduce heat to low.
  • Simmer until lentils are tender but not mushy (30-35 minutes).
  • Discard bay leaf.
  • Puree 3 cups soup in blender until smooth, then return puree to pot.
  • Stir in spinach until wilted.
  • Serve! (or place in plastic containers for work!).

This comes from my favorite cookbook, Vegetarian cooking for everyone by Deborah Maddison. I LOVE this soup. It is earthy & so satisfying. I make it at least once a month and wanted to post for nutrition info! This soup gets better as it sits!

2 tablespoons olive oil
2 cups finely diced onions
3 large garlic cloves
salt
pepper
3 tablespoons tomato paste
1/2 cup diced celery
1/2 cup diced carrot
2 bay leaves
1/2 cup chopped parsley (I use dried)
1 1/2 cups french green lentils or 1 1/2 cups brown lentils, washed
1 tablespoon Dijon mustard
1 tablespoon red wine or 1 tablespoon sherry wine vinegar

Steps:

  • In soup pot, sauté onion in oil until soft.
  • Work minced garlic into 1 teaspoon of salt to form a paste and add to onions.
  • Mix in tomato paste. Add celery, carrot bay leaves and parley. Cook 3 minutes.
  • Add lentils, 2 quarts of water and 1/2 tsp of salt and bring to a boil.
  • Lower heat and simmer 25-30 minutes till everything is tender.
  • Stir in mustard and vinegar. Garnish with celery leaves and parsley if desired.

2 tablespoons vegetable oil
1 cup chopped onion
1 cup chopped green bell peppers
2 cloves garlic, minced
4 cups drained canned white hominy
2 (14.5 ounce) cans diced tomatoes with green chile peppers
2 (14 ounce) cans vegetable broth
2 (14 ounce) cans mild red enchilada sauce
1 (15 ounce) can black beans, undrained
1 (15 ounce) can red kidney beans, undrained
2 (4.5 ounce) cans diced green chile peppers
2 (2.25 ounce) cans sliced black olives, drained
1 pinch salt to taste
8 ounces corn tortilla chips, or to taste
¼ cup sour cream, or to taste
¼ cup shredded Mexican cheese blend, or to taste

Steps:

  • Heat oil in a large stockpot over medium heat; add onion, green bell peppers, and garlic. Cook and stir until onion and bell peppers are tender, 2 to 3 minutes.
  • Mix hominy, diced tomatoes with green chile peppers, vegetable broth, enchilada sauce, black beans, kidney beans, green chile peppers, and olives into onion mixture; bring to a boil. Reduce heat to medium-low and simmer until flavors combine, about 20 minutes. Season soup with salt.
  • Place tortilla chips into serving bowls and top with soup. Garnish each bowl with sour cream and Mexican cheese blend.

3 lbs frozen mixed vegetables
1 (46 ounce) can vegetable juice
2 bay leaves
salt
garlic powder
1 (16 ounce) package coleslaw mix

Steps:

  • I use my largest 6 Quart Smart Pot for this recipe.
  • I also use Low Sodium V-8 which comes in a 64 ounce bottle and adjust.
  • Spray a Slow Cooker with cooking spray ( I sometimes use those new Crock pot liners) for easy cleanup.
  • In the Slow Cooker mix together the Vegetables, Vegetable Juice, Bay Leaves, Cole slaw, Garlic Powder and Salt to taste (I substitute 1 Tbs ONLY of Ms. Dash Original Flavor for the garlic and salt and sometimes add chopped onions to taste).
  • Cover and cook on low 8 to 10 hours.

Prep your veggies ahead, and you'll have a delicious soup in 30 minutes. Note: Do not use broth in this recipe, because the cinnamon produces the flavor. This can been done in your Crock Pot.

1 sweet potato, peeled and chopped
1 (19 ounce) can chickpeas, drained and rinsed
1 (19 ounce) can navy beans, drained and rinsed (or use your favorite bean)
1 (28 ounce) can diced tomatoes
1 cup carrot, peeled and chopped
3/4 cup elbow macaroni (or your favorite small pasta)
4 cups water
1 cup celery, sliced
1 onion, diced
1 tablespoon vegetable oil
1 teaspoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon hot pepper flakes (optional)
2 bay leaves
1 cinnamon stick
2 teaspoons paprika

Steps:

  • In dutch oven heat oil over medium heat.
  • add onions, carrots, celery, garlic,cumin,salt, hot pepper flakes.
  • saute until onions are soft.
  • add water and bring to a boil, reduce heat to low-medium.
  • add sweet potatoes, tomatoes, chickpeas, beans, bay leaves, cinnamon, paprika.
  • simmer for 10 minutes covered.
  • add pasta, stir, cover and simmer for another 15 minutes.
  • before serving, give it a good stir.
  • remove bay leaves, and cinnamon stick.
  • serve with bread.
