1-2/3 cups fresh or frozen corn, thawed
1 small zucchini, finely chopped
1 small onion, finely chopped
1 tablespoon canola oil
1 can (15 ounces) black beans, rinsed and drained
1/4 cup salsa
8 flour tortillas (6 inches), warmed
1/2 cup sour cream
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, saute the corn, zucchini and onion in oil until tender. , Stir in beans and salsa. Cook, uncovered, over medium heat for 3-4 minutes or until heated through, stirring occasionally. , Spoon a heaping 1/3 cupful onto half of each tortilla; top with sour cream and cheese. Fold tortilla over filling.

1 1/2 cups sour cream
1 tablespoon chopped canned chipotle chiles* (about 2)
2 tablespoons (packed) golden brown sugar
1 tablespoon smoked hot Spanish paprika (Pimentón de la Vera)**
2 1/4 teaspoons chili powder
1 1/2 teaspoons coarse kosher salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
2 small zucchini, quartered lengthwise
1 red bell pepper, seeded, cut lengthwise into 3/4-inch-thick strips
2 tablespoons canola oil
1 pound skinless boneless chicken breast halves, each halved horizontally
12 5- to 6-inch-diameter corn tortillas, warmed
Cilantro Slaw
2 limes, each cut into 6 wedges

Steps:

  • Prepare barbecue (medium heat). Whisk sour cream and chipotle chiles in small bowl; season with salt. Whisk brown sugar and next 5 ingredients in another small bowl to blend for spice rub.
  • Place zucchini and bell pepper on rimmed baking sheet. Drizzle with canola oil; toss to coat. Sprinkle spice rub over both sides of vegetables and chicken.
  • Place chicken and vegetables on barbecue. Grill until vegetables are tender and browned in spots and chicken is cooked through, turning occasionally, about 5 minutes. Transfer to work surface; cut chicken crosswise into 1/2-inch-thick strips. Cut vegetables crosswise into 3/4-inch pieces. Place chicken and vegetables in large bowl; toss to blend.
  • Place chicken and vegetables, chipotle cream, tortillas, slaw, and lime wedges on table. Allow guests to assemble their own soft tacos.

1 cup sliced fresh mushrooms (3 ounces)
1 medium onion, cut into wedges
1 medium bell pepper, cut lengthwise into eighths
1 medium zucchini, cut into 1/4-inch slices
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1 cup shredded Cheddar or Monterey Jack cheese (4 ounces)
12 Old El Paso™ taco shells
3/4 cup Old El Paso™ salsa (any variety)
Chopped fresh cilantro, if desired

Steps:

  • Heat oven to 425°F. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray.
  • Place mushrooms, onion, bell pepper and zucchini in single layer in pan. Spray with cooking spray. Sprinkle with salt and red pepper. Bake uncovered 20 to 25 minutes, turning vegetables once, until tender.

1 ounce taco seasoning
3/4 cup water
2 large tomatoes, diced
2 cups shredded low-fat cheddar cheese

8 taco shells or 8 whole wheat tortillas

Steps:

  • Warm meatless burger crumbles in sauté pan.
  • Add water and taco seasoning and bring to a boil. Simmer and stir until desired consistency is reached.

2 T olive oil, divided
2 T lime juice
2 3/4 t kosher salt, divided
2 t ground cumin
1/2 t black pepper, divided
2 bell peppers, cored and thinly sliced
1 large red onion, sliced
1 1/2 t smoked paprika
15-oz can black beans, rinsed and drained
2 c thinly sliced green cabbage
1 c cilantro, roughly chopped
2 T distilled white vinegar
1 1/2 t sugar
1 avocado, peeled, pitted, chopped
1 bunch radishes (6-8), thinly sliced
3/4 c sour cream
2 canned chipotle peppers in adobo, seeded and diced, plus 2 t sauce
8 whole wheat flour tortillas

Steps:

  • (1) Preheat oven to 425F. Toss together corn, 1 T oil, lime juice, 1 t salt, cumin, 1/4 t black pepper, bell peppers, and onion, then spread on a large baking sheet. Toss together remaining oil, paprika, 1/2 t salt, and black beans, then spread on a second large baking sheet. Roast vegetables and beans, tossing occasionally and rotating sheet trays halfway through, until beans are dried out and just crisp, 20-25 minutes, and vegetables are deep golden brown and softened, about 40 minutes. (2) Toss together cabbage, cilantro, vinegar, sugar, avocado, radishes, 3/4 t salt, and 1/4 t pepper; set aside. In a small bowl stir together sour cream, chipotle peppers, and adobo sauce, and 1/2 t salt. (3) Wrap tortillas in foil, and place in oven for a few minutes to warm. 1 medium onion, chopped
2 red bell peppers, coarsely chopped
2 large garlic cloves, chopped
1 jalapeño chili, seeded, chopped

1 tablespoon ground cumin
1 teaspoon dried oregano
3/4 cup tawny Port
1 15- to 16-ounce can pinto beans, rinsed, drained
1 15- to 16-ounce can golden or white hominy, rinsed, drained

12 warm corn tortillas

Steps:

  • Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper, garlic and chili. Sauté until vegetables soften, about 10 minutes. Add chili powder, cumin and oregano and sauté 2 minutes. Add Port and simmer until liquid reduces by half, about 10 minutes. Mix in beans and hominy and heat through. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm mixture over medium heat before continuing.) Add spinach and stir until wilted, about 2 minutes.

1 large red onion, sliced into thin rounds
3 medium yellow squash, cut into 1/4-inch half-moons
2 red bell peppers, cut into 1/2-inch strips
1 can (15.5 ounces) black beans, rinsed and drained
1/2 teaspoon chili powder
16 corn tortillas
1/4 cup sour cream
1/2 cup salsa

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon olive oil over medium-high. Add onion and cook, stirring occasionally, until browned and soft, 6 minutes. Transfer to a plate and add 1 tablespoon oil to skillet. Add squash and bell peppers and cook until crisp-tender, 7 minutes. Return onion to skillet and add black beans and chili powder; stir to combine.
  • Meanwhile, wrap tortillas in foil and heat in oven 8 minutes. Serve tortillas with bean mixture, sour cream, and salsa.

1 (1 lb) package ground turkey
8 taco shells
1 tablespoon olive oil or 1 tablespoon vegetable oil
1/2 cup onion, chopped
1 (16 ounce) bag loose-pack frozen broccoli carrots cauliflower mix, thawed
1 (10 ounce) can tomatoes and green chilies
1 teaspoon ground cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
shredded low-fat cheddar cheese
fresh cilantro leaves
sour cream (optional)

Steps:

  • Warm taco shells according to package directions.
  • In a large skillet over medium-high heat, heat oil until hot. Crumble in turkey and add onion. Cook and stir until turkey is no longer pink and onion is tender, about 5-6 minutes, and drain.
  • Stir in vegetables, tomatoes, cumin, garlic salt and oregano. Cook and stir until vegetables are tender and mixture is hot for about 10 minutes.
