VEGGIE PIZZA ROLL-UPS



Veggie Pizza Roll-Ups image

These Veggie Pizza Roll-Ups combine two of my favorite appetizer ideas into one easy and delicious recipe everyone is going to love.

Number Of Ingredients 8

1 package (8 ounce) cream cheese (softened)
1 cup sour cream
1 package powdered ranch dressing mix
1 cup finely chopped broccoli
1 cup finely chopped cauliflower
1 cup finely chopped carrots
1 cup finely chopped red pepper
6 each (8-inch) flour tortillas

Steps:

  • In a medium bowl beat together the cream cheese, sour cream, and ranch dressing mix until smooth.
  • In a large bowl combine the broccoli, cauliflower, carrots, and red pepper. Mix to combine.
  • Evenly divide your cream cheese mixture (about 1/3 cup each) onto your six tortillas. Spread into an even layer leaving about a 1/2" boarder clear around the edges.
  • Sprinkle each tortilla with the vegetable mixture.
  • Roll up tightly. Then place the rolls onto a plate. Cover with plastic wrap and refrigerate for at least 45-60 minutes. Once chilled, cut into 1/2" slices with a serrated knife.
  • Add the roll-ups to a dish or platter and you're ready to serve them!

2 cups cauliflower florets
1 tablespoon salt
1 teaspoon ground white pepper
1/4 cup finely grated Parmesan
Heavy cream
2 tablespoons grapeseed oil
1 cup yellow squash (cut in 1/4-inch half-moons)
1 cup zucchini (cut in 1/4-inch half-moons)
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon chopped fresh thyme
2 store-bought whole wheat flatbreads
1 cup cooked corn kernels
1 cup steamed broccoli florets
2 cups reduced-fat shredded Parmesan
1/4 cup green onions, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • For the sauce: Over medium heat in a saucepan, bring cauliflower, water to cover, salt and white pepper to a simmer. Reduce the heat and allow to cook until soft, for 7 to 8 minutes. Remove from the heat, drain and puree until smooth. After pureeing, add the Parmesan and heavy cream as needed and puree again.
  • For the vegetables: In a saute pan over high heat, add the oil and allow to heat until on the verge of smoking. Then reduce the heat to medium and add the squash, zucchini, salt and black pepper. Cook, stirring until softened, 3 to 4 minutes. Remove from the heat and add the thyme.
  • For the pizza: Place the flatbreads on a cookie sheet and spread the sauce on top, evenly coating from edge to edge. Add half the zucchini, squash, corn, broccoli and top with shredded Parmesan. Once built, repeat the process with the second pizza. Bake until crisp, 7 to 8 minutes. Once cooked, remove from the oven and top with the green onions. Slice and serve.

It's freakin' amazing. This is how I learned to like veggies. Use 6 cups assorted chopped veggies to your taste.

2 (8 ounce) packages refrigerated crescent rolls
2 (8 ounce) packages cream cheese, softened
⅓ cup mayonnaise
1 (1.4 ounce) package dry vegetable soup mix (such as Knorr®)
1 cup radishes, sliced
⅓ cup chopped green bell pepper
⅓ cup chopped red bell pepper
⅓ cup chopped yellow bell pepper
1 cup broccoli florets
1 cup cauliflower florets
½ cup chopped carrot
½ cup chopped celery

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread crescent roll dough out into an 11x14-inch jelly roll pan; pinch perforations and seams together to make a crust.
  • Bake in the preheated oven until crust is lightly golden brown, about 10 minutes. Let cool completely.
  • Mix cream cheese, mayonnaise, and vegetable soup mix together in a bowl. Spread cream cheese mixture over the crust. Sprinkle pizza with radishes, green, red, and yellow bell pepper, broccoli, cauliflower, carrot, and celery, pressing vegetables into the cream cheese mixture.
  • Cut pizza into squares, cover with plastic wrap, and refrigerate overnight to blend flavors.

2 whole-wheat English muffins, sliced
1/4 cup marinara sauce
1/4 cup diced bell pepper
1/4 cup sliced black olives
4 to 5 fresh basil leaves, roughly chopped
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F. Place English muffins on a baking sheet lined with aluminum foil. Top with marinara sauce, bell pepper, olives and basil. Sprinkle with cheese and bake for 12 to 15 minutes until cheese is melted.

No Bake Veggie Pizza Bites image

2 pieces of Naan {any flavor} or Flat Bread
1 tub of onion & chive cream cheese {any flavor will work, but this was my favorite}
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
2 green onions, diced
1/2 cup broccoli, diced
3/4 cup shredded mild cheese

Steps:

  • Lay naan or flatbread on a clean surface. Spread a medium layer of cream cheese on each slice of naan/flat bread, covering fully. Sprinkle diced veggies onto cream cheese layer. Gently press veggies into cream cheese. Sprinkle cheese on top and gently press into cream cheese layer again. Cut naan/flat bread into squares and serve immediately.
