2 cups chopped broccoli or 1 package (10 ounces) frozen chopped broccoli, thawed and drained
3 medium tomatoes, coarsely chopped (2 cups)
2 2/3 cups shredded Cheddar cheese
1 1/3 cups milk
1/3 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
4 eggs

Steps:

  • Heat oven to 350°F.
  • Layer Monterey Jack cheese, broccoli, tomatoes and Cheddar cheese in ungreased square baking dish, 8x8x2 inches. Beat milk, flour, salt and eggs until smooth; pour over cheese.
  • Bake uncovered 40 to 45 minutes or until egg mixture is set. Let stand 10 minutes before cutting.

1/4 cup water
1/4 teaspoon cream of tartar
2 eggs
1/4 teaspoon salt

1/2 teaspoon Italian seasoning
1/3 cup shredded reduced-fat cheddar cheese

Steps:

  • In a small bowl, beat the egg whites, water and cream of tartar until stiff peaks form. In a large bowl, beat eggs and salt until thick and lemon-colored, about 5 minutes. Fold in the whites., In a 10-in. ovenproof skillet coated with cooking spray, melt butter. Pour egg mixture into skillet. Cook for 5 minutes over medium heat or until puffed and lightly browned on the bottom. Bake, uncovered, at 350° for 10-12 minutes or until a knife inserted 2 in. from edge comes out clean., Meanwhile, in a large skillet, saute the tomato, zucchini, onion, green pepper and Italian seasoning until tender. Carefully run a knife around edge of ovenproof skillet to loosen omelet. With a knife, score center of omelet. Place vegetables on one side and sprinkle with cheese; fold other side over filling. Slide onto a serving plate; cut in half.

Light, Delicious Vegetable Egg White Omelet image

This recipe is a great way to start off the day without the cholesterol or fat of a whole egg without sacrificing any of the flavor! Usually egg white omelets are really bland unless you stuff them with cheese, which cancels out the entire purpose of using egg whites. Anyway, wanting a delicious egg white omelet for breakfast one sunday morning, i whipped this up and was astounded with its amazing flavor! Using a lot of veggies kept me full until lunch, and the protein in the egg whites kept me going all day. Enjoy! This recipe can be easily altered by adding meat or different vegetables, i am a vegetarian so i didn't put any meat in. Also, change the cheeses to whatever you like, i used mozerella to keep the flavor mild. Note: Braggs liquid aminos is a healthy soy sauce substitute that adds protein and flavor to any desired dish. It can be found at most regular grocery stores and if not, at any health food store. If you don't have braggs, use soy sauce to taste on top of omelet. It sounds weird, but adds delicious flavor to the omelet!

  • 1. Prepare all vegetables before hand, slicing mushrooms, chopping broccoli into small florets, and dicing tomato. Set aside.
  • 2. In a medium sauce pan, grease with non fat no stick spray. Let pan heat up, and add in four egg whites. Let cook until it begins to set slightly but still has clear coating, and add in salt, pepper, cumin, rosemary, cheese and vegetables.
  • 3. Let remaining egg white cook through, fold omelet.
  • 4. Plate omelet, and top with desired amount of braggs liquid aminos or soy sauce. Enjoy!

1 clove garlic, minced
1/2 cup chopped red onion

3 large whole eggs plus 6 large egg whites, lightly beaten
1/4 teaspoon salt
Pinch of freshly ground black pepper
1 teaspoon sesame oil
8 ounces medium shrimp (about 16 shrimp), peeled and deveined
1 small yellow onion, sliced into 1/8-inch half-moons
2 cloves garlic, minced
2 carrots, sliced diagonally 1/4 inch thick
1 red bell pepper, sliced into 1/4-inch-thick strips
1 cup snow peas (about 4 ounces)
1 cup bean shoots (about 3 ounces)
1 tablespoon hoisin sauce
1 tablespoon low-sodium soy sauce
1 teaspoon cornstarch dissolved in 1 tablespoon water
1 1/2 tablespoons finely chopped ginger
1 1/2 teaspoons finely chopped red chile
1/2 teaspoon canola oil
Snow pea shoots, stems trimmed, for garnish (optional)

Steps:

  • Place the shiitake mushrooms in a small bowl, add 3/4 cup boiling water, and let sit 30 minutes. Strain; cut the mushrooms into 1/4-inch slices. Set aside. Pour the liquid through a coffee filter to strain; set aside. Place the eggs, egg whites, salt, and pepper in a medium bowl, and whisk to combine. Divide egg mixture evenly between 2 small bowls, and set aside.
  • Place the wok over high heat. Add 1/2 teaspoon sesame oil. When hot, add the shrimp, and cook, stirring frequently, until bright pink and just cooked, 2 to 3 minutes. Remove from wok, and place in a small bowl. Add the remaining 1/2 teaspoon sesame oil to the wok. Add the onion and garlic, and cook, stirring constantly until the onion is translucent, about 3 minutes. Add the carrot and red pepper, and cook, stirring frequently, until just tender, about 4 minutes. Add the reserved soaked mushrooms, reserved shrimp, snow peas, and bean shoots, and stir to combine.
  • Push the vegetables and shrimp to the sides of the wok. Add the reserved mushroom-soaking liquid, hoisin sauce, low-sodium soy sauce, cornstarch mixture, ginger, and chile to the center of the wok, and stir until combined and slightly thickened, about 2 minutes. Combine sauce with the vegetables and shrimp. Transfer vegetable-and-shrimp mixture to a bowl, and cover to keep warm.
  • Wipe out the wok, and return to high heat. Add canola oil, and swirl to coat wok. Pour half the egg mixture into the wok; swirl so the egg mixture coats the wok creating an omelet of even thickness, about 10 inches in diameter. Continue to swirl as the egg cooks, about 3 minutes. Once the omelet is completely set and browned on the bottom, use a spatula to loosen it, and slide it onto a plate. Cover to keep warm. Repeat the process with the remaining egg mixture to make a second omelet. Add half the reserved vegetable-and-shrimp mixture to half of each omelet; fold the omelets to cover the vegetable-and-shrimp mixture. Cut omelets in half, and transfer them to serving plates; garnish with snow-pea shoots if desired.

I just love eggs and often eat breakfast for dinner. Came across this recipe on the Internet and decided to post it for the Zaar World Tour. This particular one is so loaded with good things, it's a one dish meal. Or you can serve it with a simple salad and a little garlic or peasant bread. The original recipe calls for 4 tablespoons of oil, but I'm planning to cut that in half.

1 1/2 lbs potatoes (about 3 medium sized)
salt and black pepper
1 medium red onion, chopped
1 garlic clove, crushed
1 medium red pepper, diced
2 -4 tablespoons olive oil
4 ounces frozen peas
2 tablespoons chopped fresh parsley
6 large eggs
2 ounces low-fat cheddar cheese, grated (mild is best)

Steps:

  • Peel and cut the potatoes in 1/2 - 3/4 inch cubes. Cook in boiling, salted water for 5 minutes or until tender. Drain.
  • While potatoes are cooking chop the onions and peppers, crush the garlic.
  • Heat half the oil in a large frying pan, add the onions and garlic, cook for 4 minutes, add the red pepper and peas, cook for 3 minutes then transfer to a plate.
  • Heat the remaining oil in the pan, add the potatoes and cook for 8 minutes stirring, add the onion mixture, sprinkle the parsley, and mix well with the potatoes.
  • Beat the eggs, add with the cheese and season with pepper to taste. Pour over the mixture evenly. Reduce the heat and cook for about 10 minutes or until the eggs are set.
  • This omelette works well either hot or served at room temperature.

2 dashes white pepper
1 dash cayenne pepper
1/4 cup unsalted butter

Steps:

  • Preheat oven to 350°F.
  • Lightly grease a large tart pan.
  • Take a circular cut-out of pastry dough and lay it on the bottom of the pan so that it conforms to the pan and reaches up the sides.
  • Whip together eggs and cream. Top the dough with egg/cream mixture. Add onions, spinach, peppers, zucchini, and cheese.
  • Place another layer of puff pastry over the top of these ingredients and form a pouch around the filling. Bake for 30 minutes.

2 Italian turkey sausage links (4 ounces each), casing removed
1/4 cup each chopped green, sweet yellow and red peppers

1 cup fat-free egg product

Steps:

  • Gently stir dill weed, avocado and tomato into sour cream; reserve. Spray 8-inch nonstick skillet with nonstick cooking spray; heat until hot.
  • Quickly pour 1/2 cup egg product into skillet. Slide skillet back and forth rapidly over heat and, at the same time, quickly stir with fork to spread eggs continuously over bottom of skillet as they thicken. Let stand over heat a few seconds to brown bottom of omelet lightly. (Do not overcook--omelet will continue to cook after folding.)
  • Tilt skillet and run fork under edge of omelet, then jerk skillet sharply to loosen from bottom of skillet. Spoon half of sour cream mixture onto center of omelet. Fold portion of omelet nearest you just to center. (Allow for portion of omelet to slide up side of skillet.) Turn omelet onto plate, flipping folded portion of omelet over so far side is on bottom, tuck sides under if necessary.

This is great cause if you have a hard time making the omelet work just right, it still tastes great all scrambled up.

1 cup cooked ham
1 cup chopped tomato
2 green onions with tops
1 pinch oregano
6 eggs
3 tablespoons water
3 tablespoons butter
1 teaspoon salt
1 teaspoon pepper

Steps:

  • For each omelet whisk together 2 eggs and 1 T. water, then season.
  • Over medium heat melt 1 tsp butter.
  • Pour in beaten eggs.
  • When cooking lift edges for uncooked egg to run underneath.
  • When fairly set place ham & vegetable mixture over omelet and fold in half and let stand for 1 minute.

4 garlic cloves, chopped
4 tablespoons cooked spinach, squeezed dry
12 artichoke hearts, quartered
12 eggs
4 tablespoons olive oil
1 red bell pepper, chopped
1 red jalapeno, minced
4 ounces prosciutto, diced
8 asparagus spears, sliced
2 tablespoons minced chives
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 cup shredded Gruyere
Salt and pepper
Pinch cayenne pepper
2 tablespoons grated Parmesan

Steps:

  • To make omelets, using 2 eggs each, make variations using the above ingredients.
  • For the first omelet, combine 1 clove of garlic, spinach, artichokes, eggs, and mix well. Fry in a small omelet pan with olive oil. Flip and cook other side, then transfer to a plate.
  • For the second omelet, saute the red bell pepper, and jalapeno with 1 garlic clove. Cook until pepper is softened. Add the prosciutto, 2 eggs, and cook flat, then flip and cook the other side. Transfer to a plate.
  • For the third omelet, saute the asparagus with the remaining garlic, and cook until asparagus is tender. Pour 2 beaten eggs and chives over asparagus, and cook until done on first side. Flip, cook other side, and transfer to a plate.
  • Repeat each step for each omelet depending on how many omelets you wish to serve.
  • Preheat the broiler.
  • To make the sauce, melt the butter in a saucepan, sprinkle with the flour and cook for 1 to 2 minutes over medium low heat until flour begins to turn golden. Remove from heat; add milk, and stir, mixing well. Return to heat and stir as it cooks, thickening the sauce. Stir in the cheese, and season with salt, pepper, and cayenne pepper.
  • To serve, plate the omelets, pour cheese sauce over, sprinkle with grated Parmesan, and broil until lightly browned. Serve immediately.

Vegetable Omelet image

I just adopted this recipe, and I will be making some changes, I think I will omit the cream of tartar... I will also add cooked sausage and onion! We will see what else I change at the time I cook this. Sounds delicious just the way it is but I will be making it my own! ;)

1 tablespoon(s) mushrooms, sliced
2 - green onions, chopped
2 tablespoon(s) tomatoes, chopped
1/4 cup(s) monterey jack cheese, shredded
- cooking spray
- salt and pepper to taste

Steps:

  • Whisk eggs together with cream of tartar and pour into hot skillet coated with cooking spray.
  • As egg starts to cook place vegetables on one side of the egg.
  • When egg is cooked fold 1/2 the egg over the vegetables.
  • Salt and pepper to taste.
