VEGETABLE NOODLE SALAD WITH SESAME VINAIGRETTE



Vegetable Noodle Salad With Sesame Vinaigrette image

This pasta salad is bursting with more than two pounds of sweet summer vegetables and brightened by a rich, tangy sesame-ginger vinaigrette. The angel hair pasta is broken into pieces for easy scooping, making it perfect for picnics and potlucks. It's a great make-ahead meal that travels well - and develops even more flavor as it sits. You can prepare it a few hours ahead and keep it at room temperature.

Kosher salt and black pepper
1/2 cup low-sodium soy sauce
2 tablespoons toasted sesame oil
2 tablespoons distilled white vinegar
2 teaspoons grated peeled ginger
1 teaspoon grated garlic
1 pound angel hair pasta, noodles broken into thirds
2 tablespoons safflower or canola oil
1 small yellow onion, halved and thinly sliced
3 red or yellow medium bell peppers, cored, seeded and sliced lengthwise 1/8-inch thick
8 ounces snap peas, halved lengthwise
8 ounces cherry tomatoes, halved
1/4 cup thinly sliced scallions, plus more for garnish
Toasted white sesame seeds, for garnish (optional)

Steps:

  • Bring a pot of water to a boil, and season generously with salt.
  • In a small bowl, combine soy sauce, sesame oil, vinegar, ginger and garlic. Season with salt and pepper, and mix well.
  • Once the water boils, cook the pasta according to package directions until al dente. Reserve 3/4 cup pasta cooking water, then drain. Transfer pasta to a large bowl. Add half the dressing and 1/4 cup pasta water, season with salt and pepper and toss to evenly coat.
  • Meanwhile, in a large deep-sided saucepan, heat safflower oil over medium. Add onion and bell peppers, season with salt and pepper, and cook, stirring occasionally, until deep golden and tender, about 10 minutes. Add snap peas and cook, stirring occasionally, until crisp-tender, 2 minutes. Add tomatoes, 1/4 cup pasta water and the remaining dressing. Stir to deglaze the pan and lift the browned bits on the bottom of the skillet, then add vegetable mixture (with sauce) and scallions to pasta and toss until well combined (add more pasta water if thinner sauce is desired). Season with salt and pepper.
  • Serve warm or at room temperature. Garnish with scallions and sesame seeds, if using.

SOBA NOODLE-VEGETABLE SALAD



Soba Noodle-Vegetable Salad image

This salad is very lightly dressed, so as not to compete with the strong flavors of the Sate's peanut sauce.

4 ounces soba noodles, or whole-wheat spaghetti
1 large shallot, very thinly sliced
1 1/2 cups shredded carrot
1 red pepper, julienne
1/3 cup shredded fresh basil leaves
1/3 cup shredded fresh mint leaves
1 tablespoon chopped fresh cilantro leaves
1/4 cup rice vinegar
1 teaspoon sugar
1 tablespoon walnut oil (or canola oil)
1/2 teaspoon sesame oil
1 teaspoon finely minced garlic
1/2 teaspoon chili flakes
1/2 teaspoon lime zest
1 teaspoon lime juice
1/2 teaspoon fish sauce, or 1 teaspoon low-sodium soy sauce
Salt
6 large Bibb lettuce leaves

Steps:

  • Boil noodles according to package directions. Drain and cool. In a medium to large bowl, combine noodles, shallot, carrot, pepper, basil, mint, and cilantro. Combine all dressing ingredients, season with salt to taste, add to noodle mixture, and toss lightly.
  • Snap off Bibb lettuce leaves and wash and dry. To serve, scoop spoonfuls of noodle salad into the lettuce leaves.

SESAME SOBA NOODLE AND VEGETABLE SALAD

2 tablespoons sesame seeds
12 ounces dried buckwheat noodles (fancy soba)*
4 tablespoons peanut oil
1 tablespoon oriental sesame oil
6 tablespoons seasoned rice vinegar*
12 ounces English hothouse cucumber, seeded, shredded
8 ounces carrots, peeled, shredded
6 large radishes, trimmed, sliced
3 green onions, thinly sliced
*Buckwheat noodles and seasoned rice vinegar are available at Asian markets and in the Asian section of some supermarkets.

Steps:

  • Toast sesame seeds in heavy small skillet over medium-low heat. Cool.
  • Cook noodles in pot of boiling salted water until just tender but still firm to bite, about 8 minutes. Drain. Rinse noodles under cold water until cool. Drain well; transfer to large bowl. Add both oils and toss to coat. Mix vinegar and all remaining ingredients into noodles. Season with salt and pepper. Sprinkle with sesame seeds and serve.

1/2 cup soy sauce
1/3 cup water
1 tablespoon cornstarch
1 tablespoon sugar
3 tablespoons fresh lemon juice
2 tablespoons Sherry
1 tablespoon distilled vinegar
1 tablespoon grated peeled fresh gingerroot
2 garlic cloves, minced
1 1/2 teaspoons Asian sesame oil
1 pound fresh shiitake mushrooms
1 tablespoon vegetable oil
1/2 pound bean-thread (cellophane) noodles
1 1/2 pounds Napa cabbage (about 1/2 medium head)
1/4 pound snow peas, trimmed
1 large red bell pepper
2 cups finely shredded carrot (about 3)
4 scallions, sliced thin
1 teaspoon sesame seeds, toasted golden

Steps:

  • Make dressing:
  • In a small saucepan stir together all dressing ingredients except sesame oil until cornstarch is dissolved. Bring dressing to a boil, stirring, and simmer, stirring constantly, 1 minute. Cool dressing completely and stir in sesame oil. Dressing may be made 2 days ahead and chilled, covered.
  • Discard mushroom stems and cut caps into thin slices. In a large non-stick skillet heat vegetable oil over moderately high heat until hot but not smoking and sauté mushrooms, stirring frequently, until just tender, about 5 minutes. On a platter chill mushrooms in one layer 15 minutes, or until cool.
  • In a saucepan bring 6 cups water to a boil and remove pan from heat. Stir in noodles and soak 15 minutes. Drain noodles well in a colander and with scissors cut into 6-inch lengths.
  • While noodles are soaking, cut cabbage crosswise into fine shreds and snow peas diagonally into slivers. Cut bell pepper into julienne strips.
  • In a large bowl toss together noodles, mushrooms, bell peppers, carrots, scallions, and dressing. Serve salad sprinkled with sesame seeds.

1 cup mirin
1/2 cup fresh lime juice
2 cloves garlic, minced
3 tablespoons soy sauce
1 tablespoon fish sauce
2 teaspoons sambal
1 1/2 cups rice vinegar
3 tablespoons sweet soy sauce
1/2 cup sake
2 bunches of green onions, white parts only, plus more for garnish
1 1/2 pounds of boneless chicken breasts
Wooden skewers, soaked one hour before use
4 large shiitake caps
1 large tomatoes, cut in cubes
1 medium red onion, cut into 1/2 inch chunks
1 Chinese eggplant, cut into 1/2 inch rounds
Peanut Sauce, recipe follows
4 radicchio cups
Somen Noodle Salad, recipe follows
Roasted peanuts, for sprinkling
1/2 cup canola oil
2 cups shallots, diced
1 1/2 tablespoons fish sauce
2 (13.5 ounce) cans unsweetened coconut milk
1 cup peanut butter
4 tablespoons sweet soy sauce
2 tablespoons sambal
3 bundles somen noodles
1 cup radicchio cut into thin strips
1 cup carrots, peeled and cut into thin strips
4 tablespoons green onions, diced, green parts only
1/2 cup Peanut Sauce, recipe precedes
2 tablespoons sweet soy sauce
2 tablespoons fresh lime juice
Salt and pepper, to taste
Canola oil, for drizzling

Steps:

  • Using a food processor, combine the mirin, soy sauce, fish sauce, rice vinegar, lime juice, garlic, sambal, sweet soy sauce, sake, and green onions. Blend at high speed until the mixture achieves a smooth consistency. Divide the marinade in half and place in 2 separate pans.
  • Trim the chicken breast, removing all of the fat and sinew. Cut the chicken lengthwise into 4-inch strips. Stab the skewers through the chicken and soak in 1 of the pans filled with marinade for at least 2 hours.
  • Thread the prepared shiitake caps, tomatoes, onion, and eggplant onto a new set of skewers, and soak in the other pan of marinade. Let sit for at least 2 hours.
  • When other elements are ready, grill skewers over medium-high heat for 3 to 4 minutes per side.
  • On a large plate, spread the Peanut Sauce to cover about 3/4 of the plate. Place a radicchio cup in the center of the plate and fill with the Somen Noodle Salad. Place 4 chicken skewers and 1 vegetable skewer on the plate and garnish with the remaining 2 tablespoons green onions and peanuts.
  • Prepare a medium saucepot coated with oil over medium heat. When the oil shimmers, add the shallots and saute until carmelized. Deglaze the pan with the fish sauce and add the coconut milk, peanut butter, sweet soy sauce, and sambal. Stir to combine and then bring to a boil for 2 minutes. Remove from heat, pour into a food processor, and blend until smooth.
  • Bring a large pot filled with salted water to a boil, add the somen noodles cook for about 2 minutes. Immediately transfer the noodles to a bowl filled with ice water to stop the cooking. Drain the noodles and drizzle with the canola oil to prevent them from sticking.
  • In a large mixing bowl, combine the noodles, radicchio, carrots, 2 tablespoons of green onions, peanut sauce, sweet soy sauce, lime juice, salt and pepper. Mix well to coat the noodles. Place in the refrigerator until ready for use.

VEGETABLE SOBA NOODLE SALAD



Vegetable Soba Noodle Salad image

This salad is fantastic served at room temperature or chilled. It's a perfect addition to a buffet or a main dish. It may be vegan, but it lacks nothing when it comes to flavor. The sauteed shiitakes add a wonderful umami flavor and the chile oil a touch of heat. Of course you can always add various kinds of protein. One of my favorite additions is grilled and sliced hanger steak. Like I said, it's not necessary, but it's up to you. Enjoy!

8 ounces gluten-free soba noodles
6 tablespoons sunflower oil (or other neutral vegetable oil), plus more if needed
10 ounces shiitake mushrooms, stems removed, caps sliced (about 7 cups)
Kosher salt
1/4 cup rice vinegar
2 tablespoons sesame oil
2 tablespoons tamari soy sauce
1 tablespoons chile oil
1 clove garlic, grated
1/2 teaspoon grated ginger
7 ounces snow peas, trimmed and sliced into julienne strips (about 1 3/4 cups)
1 large carrot, sliced into julienne strips (about 1 cup)
4 scallions, thinly sliced (about 1/3 cup)
2 tablespoons toasted sesame seeds

Steps:

  • Cook the soba noodles in a large pot of boiling water according to package instructions. (I prefer my soba noodles to be al dente, so I usually check the noodles one minute before the recommended doneness.) Rinse the noodles in cold water and drain for at least 10 minutes.
  • Heat 2 tablespoons of the sunflower oil in a large skillet over medium heat. Add the mushrooms and cook on one side until golden brown, 2 to 3 minutes. Stir the mushrooms and continue cook until golden brown on the other side, 2 to 3 minutes. Add more oil as needed. Sprinkle with a pinch of salt and set aside.
  • Make the salad dressing: Mix the rice vinegar, sesame oil, tamari, chile oil, garlic, ginger, and the remaining 4 tablespoons sunflower oil in a small bowl. Set aside.
  • Place the drained noodles in a large bowl along with the mushrooms, snow peas, carrots, scallions and 1 tablespoon of the sesame seeds. Pour the dressing over the noodles and mix well until the dressing is evenly distributed. Taste the salad and adjust seasoning as needed. Sprinkle the remaining sesame seeds on top before serving.

1-inch piece ginger
2 tablespoons olive oil
2 tablespoons sesame oil
1 tablespoon peanut butter
1 teaspoon honey
1/2 teaspoon Dijon mustard
1/2 teaspoon soy sauce
Juice of 1 lime
Salt and freshly ground black pepper
4 cups cooked spaghetti
1 carrot, julienned
1 red bell pepper, julienned
1 scallion, thinly sliced
Handful fresh cilantro leaves, chopped

Steps:

  • For the dressing: Grate the ginger into a deep bowl (large enough to hold the salad ingredients). Add the olive oil, sesame oil, peanut butter, honey, mustard, soy sauce and lime juice. Season the dressing with salt and pepper. Whisk together until emulsified, about 1 minute.
  • For the salad: Add the spaghetti, carrots, peppers, scallions and cilantro to the bowl. Using tongs, toss until the noodles are coated with the dressing. Cover the bowl, and marinate for at least 30 minutes and up to overnight, so the noodles can absorb the flavors from the dressing.

CHILLI COCONUT PORK WITH VEGETABLE NOODLE SALAD



Chilli coconut pork with vegetable noodle salad image

Asian flavours made easy in chilli coconut pork, ready in 25 minutes

2 tsp sunflower oil
1 pork fillet , weighing about 400g/14oz, sliced into finger-thick strips
1 tbsp Madras curry paste
2 tbsp crunchy peanut butter
200ml carton coconut cream
300ml vegetable stock
200g medium or thin noodle
2 x 200g bags washed and ready-to-cook vegetable medley (we used beans, broccoli, carrot and baby corn mix)
3 tbsp sweet chilli dipping sauce
zest and juice 1 lime

Steps:

  • Heat the oil in a wok until really hot. Add the pork and stir fry for 2 minutes until lightly browned. Stir in the curry paste and cook for 1 minute until fragrant, then stir in the peanut butter. Pour over the coconut cream and stock and bring to the boil. Simmer for 7 minutes, stirring occasionally until you have a thickish sauce and the pork is cooked.
  • While the pork is simmering, cook the noodles according to the pack instructions. Cook the vegetables in the microwave as per the pack instructions.
  • Drain the noodles. Return the noodles to a bowl and toss in the cooked vegetables and sweet chilli dipping sauce. Stir the lime zest and juice in with the pork and season to taste. Ladle the pork and noodle salad into four serving bowls.
