One taste of this crowd-pleasing casserole brings compliments and requests for my recipe. It's been in my file for as long as I can remember. The blend of tender vegetables and rice is perfect for holiday meals and dish-to-pass affairs.

- In a greased 3-qt. baking dish, combine the broth, rice, 1 cup onion, soy sauce, butter and thyme. Steps:
- Preheat oven to 375 degrees.
- In a 9x13" or larger casserole dish stir together rice, soup, water, 2 tablespoons of dill weed, 1 teaspoon of paprika, salt and pepper to taste, celery, onion, and carrots.
- make sure rice is covered by liquid.
- Skin chicken pieces and place meat side up on top of rice and vegetable mixture, leaving about 1" between pieces.
- Cover casserole dish tightly with aluminum foil and bake for 1 hour.
- After 1 hour, remove casserole from oven and check chicken for doneness by piercing thickest pieces and looking for clear juices.
- If juices are pink or unclear put casserole back in oven and bake until juices run clear.
- Meanwhile in a medium saucepan melt butter or margarine over low heat.
- Remove pan from heat and add in the crushed crackers, remaining 2 tablespoons of dill, and remaining 2 teaspoons of paprika.
- Stir well until butter is absorbed and mixture is moist.
- Remove casserole from oven and discard aluminum foil.
- Spoon cracker mixture over chicken pieces only and spread.
- Place casserole back in oven and bake 10-15 minutes more or until cracker mixture is firm but not dry.
- Remove casserole from oven and let stand 10 minutes or until liquid is absorbed into the rice.
BROWN RICE AND VEGETABLE RISOTTO
While the nature of brown rice means that this dish will take longer to cook than standard risotto, it is well worth the wait. Feel free to adapt the recipe according to whatever seasonal produce is available to you.

- Bring vegetable broth and water to a boil in a saucepan over high heat. Add asparagus, reduce heat to low, and simmer until just tender, 2 to 3 minutes. Use a slotted spoon to transfer asparagus to a bowl of ice water; let chill for 5 minutes. Drain and set aside. Meanwhile, cover saucepan and keep broth mixture at a near-simmer on low heat.
- Heat olive oil in large skillet over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add rice and cook, stirring gently, until toasted and fragrant, 4 to 5 minutes.
- Pour 1 cup of the hot broth mixture into the rice and cook, stirring constantly, until liquid is almost absorbed. Adjust heat if necessary to maintain a simmer. Repeat, using 1/2 cup liquid at a time, until rice is just beginning to become tender, about 25 minutes.
- Stir in diced carrots. Continue adding broth and stirring rice mixture until carrots are just tender, about 20 minutes more. Mix in zucchini; if broth mixture gets low, add hot water as needed. Cook and stir, adding broth, until rice is tender, about 5 minutes.
- Mix in drained asparagus and peas and cook until heated through, 2 to 3 minutes, Add Parmesan and butter, stirring until butter melts. Season to taste with salt and pepper. Pour in an additional 1/2 cup hot broth to the finished risotto for a softer consistency, if desired.

- Fill a 2-quart saucepan three fourths full with salted water and bring to a boil. Add rice and boil, uncovered, stirring occasionally, until al dente, about 25 minutes. Drain rice in a colander and rinse under cold running water until cool. Drain rice well.
- While rice is cooking, cut zucchini, celery, carrot, and bell pepper into 1/4-inch dice. Remove tough stems from arugula and chop leaves. Chop scallions.
- Have ready a bowl of ice and cold water. In a saucepan of boiling salted water blanch zucchini, celery, carrot, and bell pepper 1 minute. Drain vegetables in a sieve and transfer to ice water to stop cooking. Drain vegetables well.
- In a large bowl whisk together lemon juice, broth, mustard, oil, salt, and pepper. Add rice, blanched vegetables, arugula, and scallions, tossing to combine well, and season with salt and pepper. Serve salad at room temperature.

- Heat the oil in a large non-stick pan and add the onion, garlic, celery, carrots, parsnips and thyme. Cover with a lid and cook gently for 15 mins, stirring occasionally, until the onions are softened and beginning to colour. Add the rice and pour in 1.2 litres cold water. Bring to the boil, then reduce the heat to a simmer and cook, uncovered, for 15 mins, stirring occasionally.

- Meanwhile, slice steak 1/4-inch thick, then cut slices crosswise in half. Whisk 1 T. peanut oil, the sherry, soy sauce, honey, cornstarch, and half the ginger and garlic in small bowl. Add steak and toss to combine.

- In a sauce pan on med heat pour in the pineapple juice, setting 1/3 c. to the side for the rice. Add the remaining ingredients and bring to a simmer. Remove from heat and let cool. Combine with the uncooked pork chops and let it marinade for 2-3 hours. (save a portion of the marinade to use later as a sauce) Start to prep the rice 20 minutes before cooking the pork chops. For the rice follow the boxed instructions. Saute the diced peppers and onions, when they are about half way cooked add in mushrooms and cilantro. Set aside when done. In a sauce pan put pork chops and marinade on med heat. When about half way cooked drain the liquid and let the pork chops sear. Next, check on the rice and add in pineapple juice- allow the rice to get really thick and sticky. Add in the sauteed vegetables and hot sauce. For the salsa saute the pineapple chunks and brown sugar on med-low heat. When cooked through drain the excess liquid from the pan. Add remaining ingredients and cook until browned. When done, add the pork chops to the salsa to finish cooking.

I came up with this recipe in an effort to make some food stretch until payday. Using random vegetables I had in the fridge, plus some leftover rice, I came up with this casserole and was pleasantly surprised with the results. - Reduce heat, cover & simmer 20 minutes or until all liquid is absorbed.
- In large skillet, heat peanut oil over medium heat. Add cooked rice & sauté until lightly golden.

BROWN RICE, CORN AND GRILLED VEGETABLE SALAD

- Add rice to large pot of boiling salted water. Cover partially and cook until just tender, about 30 minutes. Drain well. Transfer to large bowl and cool to room temperature, stirring occasionally.
- Place zucchini and onion slices in shallow dish. Mix 1/4 cup oil, 2 tablespoons soy sauce and 2 tablespoons Worcestershire sauce in small bowl. Pour over vegetables. Let stand 30 minutes, turning once.
- Prepare barbecue (medium-high heat). When coals turn white, drain chips, if using, and scatter over coals. - Whisk orange juice, lemon juice, 1/3 cup oil, 3 tablespoons soy sauce and 1 tablespoon Worcestershire sauce in medium bowl. Pour 1 cup dressing over salad and toss to coat. Stir in parsley. Season with salt and pepper. Serve salad, passing remaining dressing separately.

- Grill the vegetables until done (I marinate them in lf italian dressing first).
- In a large bowl, mix together the lemon juice, honey, garlic, salt and pepper. Whisk in the olive oil. Add warm rice and stir to combine.
- Dice the grilled vegetables and add to rice after slightly cooled.
- Stir in chopped herbs and top with the crumbled feta.

Found this in the magazine "The Best of Mr. Food 15-Minute Recipes". For a quick meal it is pretty good and quick to make. I did change it a little. I use regular brown rice, fresh minced garlic and ginger and chicken stock instead of bouillon and water. I have listed the ingredients from the magazine. You could add any cooked meat to make it a complete dinner.
