This cake is beautifully moist and incredibly simple to make; it's also 100% vegan and nut free, so it's an all-around winner in my book. It can easily be cut into bars or squares, and you could even add icing on top for an extra something. I hope you enjoy this as much as I do!

1 cup water
1 tablespoon instant coffee, or as needed
1 teaspoon oil for greasing
2 ¾ cups all-purpose flour
1 cup white sugar
2 ½ teaspoons pumpkin pie spice
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon nutmeg
½ teaspoon ground ginger
¾ cup vegetable oil
¾ cup water
3 tablespoons pumpkin puree
1 teaspoon vanilla extract

Steps:

  • Boil 1 cup water and mix with instant coffee in a measuring cup or mug. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a rectangular 9x13-inch baking pan.
  • Combine flour, sugar, mixed spice, baking powder, salt, cinnamon, nutmeg, and ginger in a bowl and mix well. Add cooled coffee, oil, and 3/4 cup water and mix until well combined. Fold in pumpkin puree and vanilla extract; mix well. Pour batter evenly into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean or almost clean, as this cake can be quite sticky, about 30 minutes.
  • Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert cake carefully onto a serving plate or cooling rack. Cool at least 15 minutes more before cutting.

This pumpkin cranberry spice cake is my own recipe that makes an incredible, moist vegan cake! Your friends will never guess it's vegan. You can make it non-vegan if you like. I make this recipe with fresh pumpkin and fresh cranberries when those two items are in season. You can use canned pumpkin and frozen cranberries as well. The frosting is an orange/vanilla butter cream (using vegan butter). Enjoy!

1 1/2 cups whole wheat pastry flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 cup pumpkin (fresh or can)
1/4 cup orange juice
1/4 cup soymilk (or any non-dairy milk or reg. milk)
1/2 cup butter (melted, vegan butter like Earth Balance or reg. butter)
1 cup cranberries (fresh or frozen)

Steps:

  • Preheat oven to 350 degrees. Grease two round baking pans.
  • Combine pumpkin, spices, sugar, melted butter, soy milk and orange juice.
  • Mix in flour, baking soda and powder, and salt.
  • Cut cranberries in half and then add to mixture, mixing until well combined.
  • Pour mixture into the two prepared baking pans and bake for approximately 35 minutes at 350 degrees.
  • To make vegan buttercream frosting, mix 1 cup (1 stick) Earth Balance butter with 2 cups powdered sugar, 1/2 teaspoons vanilla, and 1/8 to 1/4 cup orange juice.
  • Frost when cake is cool.

Steps:

  • Position a rack in the center of the oven. Preheat to 350°F Grease and flour inside of a 9 inch square baking pan.
  • Sift together the flour, baking soda, cinnamon, ginger, nutmet, and salt into a bowl. Whisk to combine well, and set aside.
  • In the bowl of an electric mixer with the whisk attachment, beat egg replacer and sugars at low speed about 2 minutes until pale. Add oil, pumpkin, milk, and vanilla and mix until blended.

2/3 cup pumpkin
1 teaspoon vanilla

200 g brown sugar
120 g white sugar
vegan egg replacer powder for 2 egg
100 g soymilk
1 teaspoon vanilla extract
200 g pumpkin puree, I used fresh but canned is OK
250 g flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon mace
50 g walnuts, coarsely chopped

Steps:

  • Preheat oven to 350°F or 180°C Grease and flour a 9in square cake pan.
  • Mix butter and sugars 10 seconds/speed 4 - or until combined.
  • Add the egg replacer, soy milk, vanilla and pumpkin. Mix 10 seconds/speed 5. Scrape down. Mix 10 seconds/speed 5 again.
  • Add the flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves. Mix 10 seconds/speed 5. Scrape down. Mix 10 seconds/speed 5 again.
  • Add the walnuts and stir in by hand - the Tmix will pulverize them!
  • Spoon mixture into the prepared pan. Bake for 30-35 minutes, or until a cake tester comes out clean.

1 teaspoon baking powder

3/4 cup pumpkin puree or 3/4 cup squash
1/4 cup coconut oil
1 tablespoon pure vanilla extract
2 teaspoons maple extract
1/2 cup apple cider
2 tablespoons apple cider
2 tablespoons apple cider vinegar
1 cup pepitas
1 tablespoon agave nectar
1 tablespoon maple sugar
1 teaspoon sea salt

Steps:

  • Preheat the oven to 375 degrees and position rack in center of oven. Line two six-inch-diameter cake pans with 2-inch-high sides with parchment paper. Coat parchment paper and pan sides with nonstick spray. Whisk flour, baking soda, spices, salt, and sugar in a large bowl to blend well. Whisk pumpkin, oil, maple extract, vanilla extract, and cider together in small bowl to blend well, then whisk into the flour mixture until well blended. Whisk in cider vinegar and stir quickly (pale swirls will be in the batter, which is the baking soda reacting with the vinegar, which allows the cake to rise since there are no eggs). Transfer cake batter to prepared pan and bake cakes until tester inserted into center comes out clean, about 25-30 minutes. Cool cake completely in pan on rack, about 1 hour. Cut around sides of pan to loosen. Turn cake out onto platter; peel off parchment paper. Let cool completely, then place in the fridge to chill until very cold to make slicing easier (since cakes with no eggs crumble easier). When chilled, slice cakes horizontally in half so that you have 4 layers.
  • To make spiced pepitas, heat oven to 375, line a baking sheet with foil, and spray with non-stick spray. Toss seeds with agave nectar, sugar, spices, and sea salt and mix until well combined. Spread out on prepared sheet, and bake for 10-15 minutes until seeds are fragrant and toasted. Remove pan from oven and let cool completley. Set aside until finished frosting the cake. You will only need some of these for the cake decorations, so you can snack on the rest!
  • To make frosting, beat cream cheese in a large bowl until very fluffy and smooth, Then beat in remaining ingredients until well blended. To assemble cake, place a layer of cake on a plate, and spoon a heaping 1/2 cup frosting over, almost to the sides, then top with another layer and repeat. Top with another cake layer, another frosting layer, then the top cake layer. Spread the frosting over the top and the sides of the cake, and press spiced pepitas decoratively around the top of the cake, and a couple in the middle on the top. Place around the bottom of the cake as well. If you have leftover frosting, you can also pipe some of it decoratively on top of the cake. Chill the cake at least a few hours to set filling before serving.
  • *if you would like a 4 layer 9 inch cake, double this entire recipe and bake in two 9 inch cake pans.

How to make Eggless Pumpkin Bundt Cake with Yogurt Glaze (Vegan)

All purpose flour - 3 Cups
Baking soda - 2 tsp
Baking powder - 1 tsp
Ground cinnamon - 1 tsp
Ground Nutmeg - 1 tsp
Ground Cloves - 1/4 tsp
Salt - 1/2 tsp
Oil - 1 Cup (I used sunflower oil. You can also use other flavorless oil like canola)
Sugar - 2 Cups
Silk Non Dairy Yogurt (Vanilla) - 2 packs (about 1 Cup)
Pumpkin puree - 1 can (15 Oz)
Silk Non Dairy Yogurt (Vanilla) - 1 pack (about 1/2 cup)

Steps:

  • First add all the dry ingredients (all purpose flour, baking soda, baking powder, cinnamon, nutmeg, cloves, salt) and mix well until combined. To a large mixing bowl, add the oil, sugar, yogurt, pumpkin puree and beat using a hand whisk / blender until mixed well and fluffy. Add the dry ingredients little by little to the wet mixture and fold nicely until combined. Preheat oven to 350 F. Grease a 10' bundt cake pan with oil. Transfer the cake batter to the bundt pan. Using a spoon slightly smooth the surface and then bake in the oven for about 1 hr. Inserting a toothpick in the thickest portion of the cake should come out clean. Leave the cake to cool for about 5 mins in the pan. Then transfer it to a cooling rack and cool to room temperature. Beat the Silk Non Dairy Yogurt until light and fluffy and drizzle it over the cake. Enjoy.
  • - In case of using regular yogurt :- For the cake, add 1/2 cup more sugar and 1 Tbsp vanilla extract. For the glaze, you can add sugar and vanilla extract to the yogurt as per your taste.
  • - For the glaze, if you feel that the yogurt is thick, you can thin it out with a little water/milk.
  • - The Silk Non Dairy Vanilla yogurt itself is sweet, delicious and perfect for the glaze. However, If you want your glaze to be sweeter, you can add confectioner's sugar per taste.

Steps:

  • Preheat oven to 350 degrees. Spray loaf pan with nonstick spray or line cupcake pan with paper liners.
  • Whisk pumpkin puree, brown sugar, canola oil and coconut milk in a bowl.
  • Mix flour, whole wheat flour, sugar, baking soda and pumpkin pie spice in another bowl. Whisk in pumpkin mixture until blended.
  • Stir in flaked coconut. Scrape batter into pan or divide into cupcake liners. Bake until toothpick inserted into center comes out clean, about 1 hour 15 minutes for loaf and less for cupcakes. Let cool in pan 5 minutes. Unmold and let cool completely on rack. **If making muffins, reduce baking time to 35-40 minutes.
