This cinnamon roasted sweet potatoes and apples recipe is a healthy and easy fall side dish. Made with only 6 nutritious ingredients including pure maple syrup and ground cinnamon, it's a perfect dish to serve on Thanksgiving.

2 medium sweet potatoes (4 cups, cut into 1" cubes)
2 medium apples (about 2 cups, cut into 1" cubes)
3 TBS coconut oil (melted & divided)
1 tsp sea salt
2 TBS pure maple syrup
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease a large baking pan, set aside.
  • In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
  • Add sea salt and stir until evenly distributed.
  • Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
  • While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
  • After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
  • Return to the oven and bake for 20 more minutes, stirring halfway through.
  • Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

3 large or 5 medium sweet potatoes
2 tablespoons olive oil
4 medium crisp (and if you prefer, tart) apples, peeled, cored, and cut into eighths
1/4 cup maple syrup
Cinnamon
Ground nutmeg
Salt
1/2 cup chopped dried fruit such as apricots or mission figs

Steps:

  • Preheat the oven to 425º F.
  • Peel the sweet potatoes, cut in half lengthwise, and slice 1/4 inch thick crosswise. Combine the sweet potatoes with the oil in a mixing bowl and toss to coat.
  • Transfer to a parchment-lined roasting pan. Bake for 15 minutes, stirring after the first 10 minutes.
  • Add the apples to the roasting pan and drizzle the mixture evenly with maple syrup. Sprinkle with a small amount of cinnamon, nutmeg and salt, and carefully stir the mixture together.
  • Bake for 15 minutes or so longer, stirring occasionally, or until the sweet potatoes and apples are fork-tender and lightly browned here and there on the outside. If using, stir in 1/2 cup chopped pitted prunes or mission figs into the mixture once the dish is out of the oven. Either way, serve at once.

3 cups sliced peeled cooked sweet potatoes
3 cups sliced peeled tart apples (about 2 large)
3/4 cup packed brown sugar
3/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
Dash pepper
1 tablespoon butter

Steps:

  • In a greased 1-1/2-qt. baking dish, layer half of the sweet potatoes and apples. In a small bowl, combine the brown sugar, nutmeg, allspice, salt and pepper; sprinkle half over apples. Dot with half of the butter. Repeat layers. , Cover and bake at 350° for 15 minutes. Baste with pan juices. Bake, uncovered, 15 minutes longer or until apples are tender.

I've looked at a number of sweet potato kugel recipes, and experimented with this one a few times until I was satisfied with it. The trick is to bake the kugel long enough so that the sweet potato softens properly without the top drying out and browning too much. I cover the kugel during the first 45 minutes of baking to prevent this. After you uncover it, it's important to baste the top every 5 to 10 minutes with melted butter.

4 eggs
Salt to taste
2 large sweet potatoes (1 3/4 to 2 pounds total), peeled and grated
2 slightly tart apples, like Gala or Braeburn, peeled, cored and grated
1 tablespoon fresh lime juice
1 tablespoon mild honey or agave nectar
3 to 4 tablespoons melted unsalted butter, as needed

Steps:

  • Heat the oven to 375 degrees. Butter a 2-quart baking dish
  • In a large mixing bowl, beat the eggs with salt to taste (I suggest about 1/2 teaspoon). Add the grated sweet potatoes and the apples. Pour the lime juice over the grated apples and sweet potatoes, then stir everything together. Combine the honey and 2 tablespoons of the melted butter and stir together, then toss with the sweet potato mixture and combine well
  • Transfer the mixture to the prepared baking dish. Cover the dish tightly with foil and place in the oven. Bake 45 minutes. Remove the foil and brush the top of the kugel with melted butter. Return to the oven and bake for another 15 to 20 minutes or longer, brushing every 5 minutes with butter. The kugel is ready when the edges are browned, the top is browned in spots and the mixture is set. Remove from the heat and allow to cool for 10 to 15 minutes before serving
