These cookies were made at a coffee shop in the town where my wife went to college. Luckily we knew someone who worked there and we ended up bringing home the recipe!

6 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
15 ounces vegan margarine (such as Earth BalanceĀ®)
2 cups white sugar
2 cups brown sugar
2 medium ripe bananas, mashed
3 teaspoons vanilla extract
3 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat vegan margarine, white sugar, and brown sugar together in a separate bowl. Mix in mashed bananas and vanilla. Add flour mixture and chocolate chips slowly while mixing together.
  • Drop spoonfuls of dough 2 inches apart onto ungreased cookie sheets.
  • Bake in the preheated oven until golden, about 20 minutes.

1 1/2 cups chocolate chips (get a reliable kind that for sure doesn't add milk)
1 cup brown sugar
1/4 cup white sugar
1/4 cup mashed up banana
1 1/4 teaspoons vanilla
2 1/2 teaspoons baking soda
2 tablespoons applesauce (it wont taste like apples once its baked. Its just added to take the place of butter)
1 teaspoon olive oil
1 1/4 cups flour

Steps:

  • Preheat oven to 350 degrees.
  • Mix together brown and white sugars, bananas, vanilla, baking soda and applesauce.
  • Add Chocolate Chips.
  • Place on greased (with olive oil) baking sheet.
  • Bake for 15 -20 minutes or until Golden Brown.
