A very versatile main course you can spice up with the addition of crushed red pepper flakes if you like your food on the spicey side. Goes great over rice or pasta or can stand on its own.

2 lbs veal, cubes
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
3 garlic cloves (minced)
1 cup dry red wine
2 (14 1/2 ounce) cans diced tomatoes (with Italian herbs)
1 cup chicken broth
1 large onion, thinly sliced
1 large red pepper, thinly sliced
1 large green pepper, thinly sliced
1 (13 ounce) can mushrooms (optional)

Steps:

  • Combine flour with salt and pepper.
  • Coat veal cubes with flour.
  • Saute the veal cubes in olive oil in dutch oven until lightly browned.
  • Add additional oil if pot appears too dry.
  • Add minced garlic and saute a few minutes to release the flavor of the garlic.
  • Remove veal and garlic from pot.
  • Add wine to pot, scraping up browned bits.
  • Bring to boil and cook for a few minutes to reduce the wine by half.
  • Add diced tomatoes and chicken broth to the pot.
  • Bring to boil, while stirring.
  • Return veal to pot, cover and simmer approx 1 hr or until veal is tender.
  • Add peppers and onions, cover and simmer approx 30 minutes.
  • Add mushrooms (if desired).
  • Stir until heated.
  • Serve in bowls wih crusty bread for dipping into the sauce.
  • Entree is also excellent served over rice, pasta, or a side of mashed potatoes.

HEARTY VEAL STEW WITH RED WINE AND SWEET PEPPERS

2 pounds 1-inch pieces trimmed veal stew meat
1/4 cup all purpose flour
2 tablespoons extra-virgin olive oil
3 garlic cloves, flattened
2 tablespoons (1/4 stick) butter
3/4 cup dry red wine (preferably Sangiovese)
2 cups canned Italian-style tomatoes with juice
1 tablespoon crumbled dried sage leaves
2 red bell peppers, cut into 2x1/2-inch strips
2 tablespoons drained capers

Steps:

  • Toss veal with flour in medium bowl; shake off excess. Sprinkle veal with salt and pepper. Heat oil in heavy large pot over medium-high heat. Add garlic; sauté 1 minute. Discard garlic. Add butter to same pot and let melt. Working in batches, add veal to pot and sauté until brown, about 6 minutes per batch. Using slotted spoon, transfer veal to bowl. Add wine, tomatoes with juices and sage to pot, breaking up tomatoes with back of spoon and scraping up any browned bits. Return veal and any accumulated juices to pot; bring to boil. Reduce heat to medium-low, cover and simmer 30 minutes.

4 tablespoons olive oil
1 pound veal stew meat, cut into 1-inch cubes
All purpose flour
12 large mushrooms, quartered
1 large red bell pepper, sliced
1 tablespoon dried oregano, crumbled
1/2 teaspoon ground allspice
1/4 teaspoon dried crushed red pepper
3/4 cup dry Marsala wine
3 large garlic cloves, minced
1/2 cup low-salt chicken broth
Steamed white rice

Steps:

  • Preheat oven to 350°F. Heat 2 tablespoons oil in heavy large ovenproof skillet over medium-high heat. Dredge veal in flour, shaking off excess. Add veal to skillet and cook until brown, stirring occasionally, about 5 minutes. Transfer veal to plate using slotted spoon. Heat remaining 2 tablespoons oil in same skillet. Add mushrooms, bell pepper, oregano, allspice and crushed red pepper to skillet. Sauté until mushrooms are just beginning to brown, about 3 minutes. Stir in Marsala and garlic and boil until skillet is almost dry, about 4 minutes. Add veal and any juices accumulated on plate to skillet. Mix in chicken broth and bring to boil. Cover and bake in oven until veal is very tender, about 1 hour. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Transfer stew to stove and boil until liquid thickens to sauce to consistency, about 12 minutes. Serve with rice.

4 rib veal chops, each 1-inch thick
Juice of 1 lemon
1/3 cup extra-virgin olive oil
3 cloves garlic, crushed
Salt and freshly ground black pepper
4 sprigs fresh rosemary, lightly crushed
2 sweet red peppers

Steps:

  • Select a dish large enough to hold the veal chops in a single layer. In the dish combine the lemon juice with one-fourth cup of olive oil, the garlic, salt and pepper and rosemary. Add the chops, turn them to coat all sides and allow to marinate for one-and-a-half hours, refrigerated.
  • Preheat grill or broiler.
  • Seed the peppers and cut them into inch-wide strips lengthwise. Brush with remaining olive oil and season with salt and pepper. A good way to do this is to place the peppers, oil and seasonings in a plastic bag and shake them.
  • Start grilling the peppers. When they are just beginning to sear, place the chops on the grill and grill them over very hot coals to the desired degree of doneness. They should take eight to 10 minutes for medium. Remove the chops and the pepper strips as they are done and arrange them on a platter.
  • Serve at once, hot, or within 30 minutes at room temperature.

4 bone-in veal chops, at least 1-inch thick
Kosher salt
Extra-virgin olive oil
4 cloves garlic, smashed
1/2 pound fingerling potatoes, cut in rounds about 1/2-inch thick
1 1/2 pounds assorted mushrooms (shiitake, chanterelle, oyster, or cremini), sliced
5 to 6 hot cherry peppers with their vinegar, stems and seeds removed, quartered
1 bunch chives, cut into 1-inch lengths

Steps:

  • Preheat the grill to medium.
  • Season the veal chops generously with salt and let them sit for 15 to 20 minutes.
  • Rub the chops with oil on both sides and arrange on the preheated grill on a very hot spot. After about 3 to 4 minutes, when the chops have developed lovely grill marks, rotate the chops 90 degrees to create the cross-hatch pattern. Cook the chops for an additional 3 to 4 minutes on that side and then repeat the process on the other side. This will cook the chops to about medium-rare. Remove the chops to a serving platter and set aside in a warm place to let the juices redistribute.
  • While the chops are cooking, coat a large saute pan with extra-virgin olive oil and over medium heat add the garlic cloves.
  • When the garlic has become golden brown and is very aromatic, remove and discard the garlic. It has fulfilled its garlic destiny. Add the potatoes, season with salt and brown the potatoes on each side. When the potatoes are brown on each side, add the mushrooms and season with salt. Saute the mushrooms for 5 to 7 minutes. When the mushrooms have become soft and aromatic, add in the cherry peppers and 2 to 3 tablespoons of the pepper vinegar (more if you like things REALLY spicy). Add the vinegar in baby steps, it can make things VERY spicy and there will not be any recovery. Check for seasoning and season with salt if needed (it will). Toss in the chives. Transfer the potato mixture to a serving bowl or platter and serve immediately with the veal chops drizzled with extra-virgin olive oil.
  • Mouthwateringly spicy and delicious!

1/3 cup all-purpose flour
Salt to taste
Freshly-ground black pepper to taste
2 tablespoons unsalted butter
3 tablespoons olive oil
1 red bell pepper seeded, and thinly sliced
1/2 pound white button mushrooms brushed clean, and sliced
1/2 cup white wine
2 ounces thinly-sliced prosciutto cut narrow strips
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • One at a time, place the veal scallops between 2 sheets of plastic wrap and pound gently with a meat tenderizer until 1/4 inch thick. Spread the flour on a plate and season with salt and pepper. Lightly dust the veal scallops, shaking off the excess. In a large fry pan over medium heat, melt the butter with the olive oil. Add the veal and cook, turning once, until browned on both sides, about 6 minutes total. Transfer the veal to a plate. Add the bell pepper and mushrooms to the fry pan and cook, stirring occasionally, until the bell pepper is tender, about 10 minutes. Add the wine and cook, stirring, until the liquid evaporates, about 2 minutes. Stir in the prosciutto and season with salt and pepper. 1 5.3-ounce package basil and roasted garlic goat cheese or 6 ounces soft fresh goat cheese (such as Montrachet), room temperature

1 4 3/4-pound center-cut veal rib roast (also known as rack of veal), boned, trimmed of all fat and outer membrane
1 bunch fresh arugula, stems trimmed
16 large fresh basil leaves
14 oil-packed sun-dried tomatoes, drained
2 tablespoons (1/4 stick) butter
8 bacon slices
Sauce
2 3/4 cups canned low-salt chicken broth
3 medium shallots, finely chopped
1/4 cup fresh lemon juice
2 tablespoons drained capers
1/2 cup (1 stick) butter, cut into pieces, room temperature
2 tablespoons chopped fresh Italian parsley

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Wrap in paper bag; let stand 10 minutes. Peel peppers. Cut lengthwise into quarters; seed and stem peppers. Trim edges of peppers to flatten all sides if necessary.
  • Stir cream cheese and goat cheese in small bowl to blend.
  • Butterfly veal by staring at 1 long side of veal and cutting horizontally to within 1 inch of opposite long side. Open veal as for book. Place large sheet of plastic wrap over cut surface of veal. Using meat pounder or rolling pin, pound veal to generous 1/2-inch even thickness, forming rectangle approximately 10 X 12 inches. Season with salt and pepper.
  • Blanch arugula in saucepan of boiling water just until wilted, about 2 seconds. Drain; rinse with cold water. Drain well on paper towels; pat dry. Repeat blanching process with basil leaves. Overlap arugula leaves down center of veal, forming 2-inch-wide by 12-inch-long strip. Cover with half of bell peppers, skinned side down. Top with tomatoes, arranged in 2 rows.
  • Set aside 1/4 cup cheese mixture for sauce. Spoon remaining cheese mixture in even log atop tomatoes. Arrange remaining bell peppers, skinned side up over cheese. Arrange blanched basil leaves over peppers.
  • Fold 1 long side of veal over filling. Tightly roll up veal jelly roll style. Cover ends of veal roll with heavy-duty aluminum foil to enclose filling completely. Tie kitchen string around veal roll every 1 1/2 inches to maintain neat log shape. Wrap string lengthwise around veal roll to secure foil at ends, weaving string alternately under and over crosswise ties. Cover veal roll and reserved 1/4 cup cheese mixture separately; refrigerate until well chilled,at least 6 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat oven to 375°F. Melt butter in heavy large shallow roasting pan over medium-high heat. Season veal with salt and pepper. Place veal in pan and brown on all sides, turning frequently, about 10 minutes. Remove pan from heat; cool veal 15 minutes. Drape bacon slices over veal, tucking ends under veal.
  • Roast veal until thermometer inserted into center of meat (not filling) registers 140°F, about 45 minutes. Transfer to work surface. Let stand 15 minutes.
  • Combine broth and shallots in heavy medium saucepan. Boil over high heat until mixture is reduced to 1/2 cup, about 20 minutes. Whisk in lemon juice and capers. Reduce heat to low; gradually whisk in butter, then reserved 1/4 cup cheese mixture and parsley. Season sauce to taste with salt and pepper.
  • To serve, remove bacon, string and foil from veal roast. Cut veal roast crosswise into even slices. Spoon a few tablespoons sauce onto each plate. Top with 2 veal slices.

  • Make sauce:
  • Preheat broiler.
  • Quarter bell pepper lengthwise, discarding stem, seeds, and ribs. Put pepper, skin side up, on a rack of a broiler pan and broil about 2 inches from heat until skin is blistered and charred, 8 to 12 minutes.
  • Transfer bell pepper to a bowl and let stand, covered, until cool enough to handle. Peel pepper.

Sweet Italian Veal Sausage (If veal is not for you, sweet or hot pork sausage will be fine)
4 Red Bell Peppers, sliced thinly (mandolin's are God for this, just keep hold on to your fingers)
2 Sweet Vidalia Onions
Homemade Gravy, I.e. Tomato sauce
1 Aluminum tray

Steps:

  • Preheat oven to 350 degrees. Place the sweet sausage into a saute pan and punch a few holes in it with a fork. Let the sausage brown up in the pan on medium high heat until the sausage is fully cooked and nice and crispy on the outside. Take out of pan and let cool. Meanwhile, get rid of those drippings out of the pan and clean up. Meanwhile, use that mandolin or the second best thing - your hands with a thin, sharp knife - and slice up the bell peppers lengthwise and then in half. Take the onions and slice those with the mandolin as well, thinly too or use those hands again and mince into medium sized pieces. When the sausage is cooled, cut it up into medium sized or bite sized slices. Add sausage, peppers, onions, and enough sauce to make the sausage lightly covered. Do not add the whole batch of sauce, it will be too much. You can always add but it's hard to take away. Let cook in oven for 40 minutes, serve, and stuff your face.

ROAST VEAL BREAST WITH PEPPERS AND ONIONS

1 veal breast with bones attached
Salt and pepper
1/4 cup olive oil
2 pounds cipollini or small white onions, peeled
2 red peppers, seeded and quartered
2 yellow peppers, seeded and quartered
1 cup white wine

  • Trim any excess fat and gristle from the veal. Heat a large casserole on the stove top and add the olive oil. Season the veal well with salt and pepper and add to the hot casserole. Brown well on both sides turning only when fully caramelized. Remove the veal and set aside. Add the cipollini to the pot and brown well before adding the peppers. When the vegetables are well browned, put the veal back into the pot, add the wine. Reduce the heat to a simmer and cover with a tight fitting lid. Allow to cook for 1 1/2 to 2 hours, checking occasionally that the pot has not cooked dry. If it has, add some water to keep the pot moist throughout the cooking process. When cooked slice and serve with vegetables.;

3 pounds boneless veal shoulder, cut into 1-inch cubes
6 canned plum tomatoes, seeded and chopped
3 green bell peppers
3 red bell peppers
1 pound mushrooms

Steps:

  • directions: In a large flame-proof casserole, cook the onions in oil over moderate heat, stirring, for 8 to 10 minutes, or until golden, and remove the casserole from the heat. Add the garlic, paprika, salt, and veal, combine the mixture well, and cook it in a preheated 325 degree F oven, stirring occasionally, for 30 minutes. Stir in the tomatoes and bake the stew, stirring occasionally, for 30 minutes. Stir in 2 of the green peppers, chopped fine, 2 of the red peppers, chopped fine, and 3/4 pound of the mushrooms, chopped fine, and bake the mixture for 30 minutes. Add the remaining green and red peppers, both cut into 3/4 inch pieces, and the remaining 1/4 pound mushrooms, quartered, and cook the stew, stirring occasionally, for 30 minutes. Transfer the casserole to the top of the stove and reduce the sauce over moderate heat, stirring, for 15 minutes, or until thickened.

A stylish dinner party dish with a bonus: Much of the prep work can be done a day ahead. At the store, have the butcher bone and trim all of the fat and membrane from a 4 3/4-pound center-cut veal rib roast, resulting in a 3-pound oblong boneless veal loin.

2 large yellow bell peppers
1 3-ounce package cream cheese with chives, room temperature
1 5.3-ounce package basil and roasted garlic goat cheese or 6 ounces soft fresh goat cheese (such as Montrachet), room temperature
1 4 3/4-pound center-cut veal rib roast (also known as rack of veal), boned, trimmed of all fat and outer membrane
1 bunch fresh arugula, stems trimmed
16 large fresh basil leaves
14 oil-packed sun-dried tomatoes, drained
2 tablespoons (1/4 stick) butter
8 bacon slices
2 3/4 cups canned low-salt chicken broth
3 medium shallots, finely chopped
1/4 cup fresh lemon juice
2 tablespoons drained capers
1/2 cup (1 stick) butter, cut into pieces, room temperature
2 tablespoons chopped fresh Italian parsley

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Wrap in paper bag; let stand 10 minutes. Peel peppers. Cut lengthwise into quarters; seed and stem peppers. Trim edges of peppers to flatten all sides if necessary.
  • Stir cream cheese and goat cheese in small bowl to blend.
  • Butterfly veal by staring at 1 long side of veal and cutting horizontally to within 1 inch of opposite long side. Open veal as for book. Place large sheet of plastic wrap over cut surface of veal. Using meat pounder or rolling pin, pound veal to generous 1/2-inch even thickness, forming rectangle approximately 10 X 12 inches. Season with salt and pepper.
  • Blanch arugula in saucepan of boiling water just until wilted, about 2 seconds. Drain; rinse with cold water. Drain well on paper towels; pat dry. Repeat blanching process with basil leaves. Overlap arugula leaves down center of veal, forming 2-inch-wide by 12-inch-long strip. Cover with half of bell peppers, skinned side down. Top with tomatoes, arranged in 2 rows.
  • Set aside 1/4 cup cheese mixture for sauce. Spoon remaining cheese mixture in even log atop tomatoes. Arrange remaining bell peppers, skinned side up over cheese. Arrange blanched basil leaves over peppers.
  • Fold 1 long side of veal over filling. Tightly roll up veal jelly roll style. Cover ends of veal roll with heavy-duty aluminum foil to enclose filling completely. Tie kitchen string around veal roll every 1 1/2 inches to maintain neat log shape. Wrap string lengthwise around veal roll to secure foil at ends, weaving string alternately under and over crosswise ties. Cover veal roll and reserved 1/4 cup cheese mixture separately; refrigerate until well chilled,at least 6 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat oven to 375°F. Melt butter in heavy large shallow roasting pan over medium-high heat. Season veal with salt and pepper. Place veal in pan and brown on all sides, turning frequently, about 10 minutes. Remove pan from heat; cool veal 15 minutes. Drape bacon slices over veal, tucking ends under veal.
  • Roast veal until thermometer inserted into center of meat (not filling) registers 140°F, about 45 minutes. Transfer to work surface. Let stand 15 minutes.
  • Combine broth and shallots in heavy medium saucepan. Boil over high heat until mixture is reduced to 1/2 cup, about 20 minutes. Whisk in lemon juice and capers. Reduce heat to low; gradually whisk in butter, then reserved 1/4 cup cheese mixture and parsley. Season sauce to taste with salt and pepper.
  • To serve, remove bacon, string and foil from veal roast. Cut veal roast crosswise into even slices. Spoon a few tablespoons sauce onto each plate. Top with 2 veal slices.

How to make Grilled Veal Chop with Fingerlings, Mushrooms and Cherry Peppers

4 bone-in veal chops, at least 1-inch thick
Kosher salt
Extra-virgin olive oil
4 cloves garlic, smashed
1/2 pound fingerling potatoes, cut in rounds about 1/2-inch thick
1 1/2 pounds assorted mushrooms (shiitake, chanterelle, oyster, or cremini), sliced
5 to 6 hot cherry peppers with their vinegar, stems and seeds removed, quartered
1 bunch chives, cut into 1-inch lengths

Steps:

  • Preheat the grill to medium.
  • Season the veal chops generously with salt and let them sit for 15 to 20 minutes.
  • Rub the chops with oil on both sides and arrange on the preheated grill on a very hot spot. After about 3 to 4 minutes, when the chops have developed lovely grill marks, rotate the chops 90 degrees to create the cross-hatch pattern. Cook the chops for an additional 3 to 4 minutes on that side and then repeat the process on the other side. This will cook the chops to about medium-rare. Remove the chops to a serving platter and set aside in a warm place to let the juices redistribute.
  • While the chops are cooking, coat a large saute pan with extra-virgin olive oil and over medium heat add the garlic cloves.
  • When the garlic has become golden brown and is very aromatic, remove and discard the garlic. It has fulfilled its garlic destiny. Add the potatoes, season with salt and brown the potatoes on each side. When the potatoes are brown on each side, add the mushrooms and season with salt. Saute the mushrooms for 5 to 7 minutes. When the mushrooms have become soft and aromatic, add in the cherry peppers and 2 to 3 tablespoons of the pepper vinegar (more if you like things REALLY spicy). Add the vinegar in baby steps, it can make things VERY spicy and there will not be any recovery. Check for seasoning and season with salt if needed (it will). Toss in the chives. Transfer the potato mixture to a serving bowl or platter and serve immediately with the veal chops drizzled with extra-virgin olive oil.
  • Mouthwateringly spicy and delicious!

1 to 1 1/2 pounds tenderized boneless veal cutlets
1 bag (1 pound 6 ounces) refrigerated shredded hash brown potatoes
1 jar (12 ounces) roasted red bell peppers, drained
3 medium onions, cut lengthwise in half, then cut crosswise into thin slices
3 cloves garlic, finely chopped
1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
1/2 teaspoon cracked black pepper
2 ounces feta cheese, crumbled (1/2 cup)

Steps:

  • Heat oven to 350° F. Spray rectangular baking dish, 13 x 9 x 2 inches, with cooking spray. Remove fat from veal. Cut veal into 6 serving pieces.
  • Spread potatoes in baking dish. Spread bell peppers over potatoes. Sprinkle with salt. Cover and bake 15 minutes.
  • While potatoes are baking, spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook veal in skillet about 5 minutes, turning once, until slightly pink in center. Remove veal from skillet.
  • Cook onions and garlic in same skillet over medium heat about 5 minutes, stirring frequently, until onions are tender.
  • Place veal on potato mixture. Spread onion mixture over veal. Sprinkle with oregano and pepper. Sprinkle with cheese. Cover and bake 20 to 25 minutes or until heated through.
