QUAKER VANISHING OATMEAL RAISIN COOKIES

Yield Makes about 4 dozen cookies

Number Of Ingredients 11

1/2 cups plus 6 tablespoons butter, softened
3/4 cups firmly packed brown sugar
1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins

Steps:

  • Heat oven to 350°F.
  • In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon, and salt; mix well. Add oats and raisins; mix well.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Just add 1/2 cup raisins, 1/2 cup craisins, tblsp or more of Orange peel or Orange extract or both, 2 Tblspoons or more of Crystalized Ginger or minced fresh ginger.and 1/2 cup of minced pecans. Watch people you know beg you for more is the best of all.

1 cup - brown sugar, firmly packed
1/2 cup - granulated sugar
2 - eggs
1 teaspoon(s) vanilla extract
1 teaspoon(s) orange extract
2 tablespoon(s) minced orange peel
1 tablespoon(s) hot water added to ginger below
2 tablespoon(s) crystalized or fresh ginger

3 cup(s) quaker oatmeal, quick or old fashion, uncooked

Steps:

  • Cream together room temp butter with brown and white sugar until creamy and light looking. Add eggs,vanilla,cinnamon, orange, ginger finely minced in warm water about a tablespoon if using crystalized only! Add flour, baking soda, and remaining ingrediants. Mix well.
  • I use a large soup spoon about 1 1/2 Tblsp. of dough and put 6 on a very large rimmed cookie sheet with a silacone peel on it. Bake 10 to 12 if smaller and 17 if larger. They will be light brown around the edges. You can let them cool on one sheet and pop in the other one if you have two.I can make about 17 or 20 cookies in one shot and put them in a plastic container on the counter. A cookie jar would be great huh? Enjoy!
