1/2 cup boiling water
1/3 cup natural cocoa powder
3 ounces semisweet chocolate, finely chopped (1/2 cup)
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
1 cup sour cream
1/2 recipe Vanilla Swiss-Meringue Buttercream
Chocolate curls, for serving (optional; see note, above)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan. Line bottom with parchment; butter parchment. Stir together boiling water, cocoa, and chocolate; let cool 10 minutes. Meanwhile, whisk together flour, baking powder, baking soda, and salt in another bowl.
  • Beat butter with sugar on medium-high speed until fluffy, 2 to 3 minutes. Beat in eggs, one at a time, beating to combine after each addition and scraping down sides of bowl as needed. Beat in vanilla, then chocolate mixture. Reduce speed to low; beat in flour mixture in two batches, alternating with sour cream, until just combined. Scrape batter into prepared pan, smoothing top with an offset spatula.
  • Bake until a tester inserted in center comes out with a few moist crumbs, 35 to 40 minutes (top will not spring back). Let cool in pan 10 minutes. Invert onto a wire rack and remove parchment; let cool completely. Cake can be made up to 1 day ahead and stored at room temperature, wrapped in plastic.
  • Spread buttercream evenly over top and sides of cake. Sprinkle with chocolate curls. (Leftovers can be refrigerated, wrapped in plastic, up to 3 days; return to room temperature before serving.)

2 cups cake flour, plus more for pan
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 3/4 cups granulated sugar, divided
4 large eggs, separated
1 teaspoon vanilla extract
1 cup buttermilk
For the Vanilla Syrup:
1/4 cup granulated sugar
1 vanilla bean, split lengthwise
For the Orange Cream-Cheese Frosting:
1 (8-ounce) package cream cheese, chilled
5 tablespoons unsalted butter, room temperature
1/2 teaspoon finely grated orange zest
1 1/2 teaspoons fresh orange juice
1/2 teaspoon vanilla extract
6 Tbsp. powdered sugar, sifted
For the assembly:
4 ounces raspberries
Edible flowers (for garnish; optional)

Steps:

  • Bake the Buttermilk Cake:
  • Place a rack in middle of oven; preheat to 350°F. Flour a 13x9" pan, tapping out excess. Whisk baking powder, baking soda, salt, and remaining 2 cups flour in a medium bowl; set aside.
  • Using an electric mixer on medium-high speed, beat butter and 1 1/2 cups granulated sugar in a large bowl, scraping down sides of bowl as needed, until light and creamy, about 5 minutes. Add egg yolks in 2 additions, scraping down bowl after each. Beat in vanilla.
  • Reduce mixer speed to low, then add dry ingredients in 2 additions alternately with buttermilk in 2 additions, scraping down sides of bowl as needed.
  • Using electric mixer on medium speed, beat egg whites in another large bowl until soft peaks form, 2-3 minutes. Slowly add remaining 1/4 cup granulated sugar and continue to beat until stiff, glossy peaks form, about 3 minutes more. Fold half of the egg whites into flour mixture, then gently fold in remaining egg whites.
  • Scrape batter into prepared pan; smooth surface. Bake, rotating pan halfway through and covering with foil during the last 15 minutes of baking, until golden brown, firm to the touch, and a tester inserted into the center comes out clean, 35-40 minutes. Transfer pan to a wire rack and let cake cool.
  • Make the Vanilla Syrup:
  • Combine granulated sugar and 1/4 cup water in a medium saucepan. Scrape in vanilla seeds, add pod, and stir to combine. Bring to a boil, cover, and steep at least 15 minutes. Set aside to cool. Discard pod before using.
  • Make the Orange Cream-Cheese Frosting:
  • Using electric mixer on medium-high speed, beat cream cheese and butter in a large bowl until smooth, about 1 minute. Beat in orange zest, orange juice, and vanilla. Reduce mixer speed to low and beat in powdered sugar, scraping down bowl as needed, until light and fluffy, 2-3 minutes.
  • Assemble the cake:
  • Using a pastry brush, brush top of cooled cake with 2 Tbsp. vanilla syrup; reserve remaining syrup for another use. Spread frosting over top of cake, swirling decoratively. Top with raspberries and edible flowers, if using.
  • Do Ahead
  • Cake can be made 3 days ahead; wrap tightly in plastic and chill, or freeze up to 2 weeks. Syrup can be made 5 days ahead; store in an airtight container and chill. Frosting can be made 3 days ahead; cover with plastic wrap, pressing directly on surface, and chill. Bring to room temperature before using.

1/2 cup buttermilk

1 cup semisweet chocolate chips
4 cups powdered sugar
2 sticks (1 cup) salted butter, softened
2 tablespoons whole milk

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Add the flour, granulated sugar and salt to a large bowl and stir together; set aside. Add the buttermilk, baking soda, vanilla and eggs to a separate bowl. Mix with a fork and set aside.
  • In a medium saucepan, melt the butter. Add the cocoa and whisk to combine.
  • Meanwhile, bring 1 cup water to a boil. Pour the boiling water into the butter and cocoa pan. Allow to bubble for a moment, then turn off the heat.
  • Pour the cocoa mixture into the flour mixture. Stir together for a moment to allow it to cool slightly, then pour in the egg mixture. Stir together until smooth. Add the chocolate chips, stirring, then pour into an ungreased jelly roll pan (or rimmed baking sheet). Bake until an inserted cake tester comes out clean, about 20 minutes. Allow to cool for about 20 minutes.
  • For the frosting: While the cake bakes, combine the powdered sugar, butter, milk, salt and vanilla bean caviar in a large bowl. Using a hand mixer, mix on low until incorporated. Increase the speed and mix until light and fluffy; set aside.

I was searching for a Vanilla Cake recipe for a friend's birthday and could not find what I wanted, so I combined a few recipes and came up with a very moist, flavorful cake. This recipe includes the cake mix extender I used.My DH who does not like a "white cake" loved it and our friend said it might be my best yet. I used bake even strips to ensure a flat top on the cake and baked at a lower temperature. Hope you enjoy it as much as they did.

1 (18 ounce) package vanilla cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix (4 serving size)
1 cup flour
1/2 cup sugar
1 teaspoon baking powder
4 eggs
1 1/4 cups milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1/2 cup butter or 1/2 cup margarine, softened
3 3/4 cups powdered sugar, sifted

  • Preheat oven to 325 degrees.
  • Grease and flour a 9X13 baking pan.
  • Mix cake mix, pudding mix, flour, sugar and baking powder together in a large mixing bowl.

With mixer on high speed, beat butter until smooth. Add cocoa mixture; beat until combined. Add chocolate and salt. Raise mixer speed to medium- high; beat until frosting is smooth and peaks form, about 3 minutes. Spread frosting over cake; sprinkle with malted milk balls, if desired.

This sheet cake is a delicious cake that can be made for a crowd. Perfect for potlucks.

1 - white cake mix
1 cup(s) water
1/4 cup(s) oil
4 - eggs, separated
1 package(s) small, instant vanilla pudding
PINEAPPLE CREAM CHEESE FROSTING
1/2 cup(s) butter, softened or hard margarine
8 ounce(s) cream cheese, softened
1 1/2 cup(s) powdered sugar
14 ounce(s) canned, crushed pineapple, well drained
2 cup(s) whipping cream, whipped until stiff peaks formed

Steps:

  • Beat all the ingredients together except egg whites. Beat egg whites until a nice soft peaks form and fold into the cake mixture.
  • Pour into a well greased 12 x 18 inch cookie sheet with 1 inch sides.
  • Bake at 350 degrees for 20 minutes.
  • For the frosting: Beat the butter and cream cheese together until soft and light.
  • Add the powdered sugar, continue beating until all the sugar is absorbed.
  • Add the 14 oz. Can of crushed pineapple, well drained, and the whipped cream. Mix all together .Spread on cake.
  • Cut into desired amount serving pieces. Top each piece with a slice of peaches ( or desired pie filling). This cake freezes well.
