This is a perfect fruit salad to prepare all winter long! It's pretty enough to serve as a dessert, yet satisfying enough to enjoy as a snack.

1 can (20 ounces) unsweetened pineapple chunks
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 quart mixed fresh fruit chunks (apples, bananas, oranges, pears)
3/4 cup chopped pecans or walnuts
1/3 cup sweetened shredded coconut
Whipped topping, optional

Steps:

  • Drain pineapple and set juice and pineapple aside. In a saucepan, combine pudding mix and reserved pineapple juice. Cook and stir over medium heat until thickened. Transfer to a bowl and cool. , Fold in fruit, nuts, coconut and reserved pineapple. Chill until serving. Garnish with whipped topping if desired.

This easy, but showy, fruit salad recipe is perfect for parties, holidays and potlucks. The vanilla pudding topping makes it special.

1 (20-ounce) can pineapple chunks in juice
1 cup regular or low-fat sour cream
1 (3- to 4-ounce) package instant vanilla pudding mix
2 1/2 cups sliced red seedless grapes
2 cups sliced fresh strawberries
1 cup fresh blueberries
1 (10-ounce) can mandarin oranges, drained

Steps:

  • Drain the pineapple chunks, reserving the juice in a 1-cup measuring cup. You will need 3/4 cup of the pineapple juice; discard (or drink!) any extra. If you don't have enough pineapple juice, add enough water to the juice to make 3/4 cup.
  • Mix the pineapple juice, sour cream and instant vanilla pudding in a small bowl. Cover and refrigerate for 1 hour.
  • Meanwhile, also refrigerate the pineapple chunks.
  • Toss the grapes, strawberries, blueberries, mandarin oranges and pineapple chunks together. Place the fruit salad in a tall glass, crystal serving bowl or glass serving dishes.
  • Spoon the chilled pudding mixture over the fruit salad -- if you like your topping a bit fluffier, you can beat it with an electric hand mixer for a minute before spooning it over the fruit.

2 cups strawberries (sliced)
2 cans sliced peaches (15 ounces each)
1 can mandarin orange segments (11 ounces)
1 can pineapple chunks (15 ounces)
2 bananas (sliced)
1 green apple (cored & diced)
1 ½ cups blueberries
1 ½ cups purple grapes
1 lime
2 tablespoons instant vanilla pudding mix

Steps:

  • Zest the lime.
  • Drain one of the cans of peaches into a large bowl. Stir 2 tablespoons pudding mix into the juice.
  • Drain remaining can of peaches, mandarin oranges and pineapple chunks. (Juice is not needed for this recipe).
  • Add all fruit and lime zest to the pudding mixture. Gently stir to combine.
  • Chill at least 30 minutes before serving.

5 cans (20 ounces each) plus 1 can (8 ounces) pineapple chunks
4 packages (5.1 ounces each) instant vanilla pudding mix
8 cans (15 ounces each) mandarin oranges, drained
10 medium red apples, chopped

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. Add enough cold water to juice to make 6 cups. , In a very large bowl, whisk juice mixture and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in the oranges, apples and reserved pineapple. Refrigerate until chilled.

1 (20 ounce) can pineapple chunks, undrained
1 (3 1/8 ounce) box dry vanilla instant pudding mix
1 lb strawberry, stemmed and quartered
1 banana, sliced
1/2 pint blueberries
1 bunch grapes (I use the red ones)
1 -2 tablespoon sugar (optional)

Steps:

  • In a large bowl, combine peaches, pineapples, and vanilla pudding mix.

1 can (20 ounces) pineapple chunks
1 can (11 ounces) mandarin oranges
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup sliced fresh strawberries
1/2 cup maraschino cherries
1 to 2 medium ripe bananas, sliced

Steps:

  • Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.

1 lemon, juice of
1 (20 ounce) can pineapple tidbits, drained, juice reserved
2 cups sliced strawberries
2 cups grapes

1 (1 1/2 ounce) box sugar-free instant vanilla pudding mix or 1 (1 1/2 ounce) box vegetarian sugar-free instant vanilla pudding mix
1/2 cup water

Steps:

  • Combine bananas, apples and lemon juice in large mixing bowl.
  • Toss until evenly coated.
  • Add pineapple, strawberries, grapes and pecans.
  • In small mixing bowl, combine pudding mix, water and pineapple juice with a wire whisk until smooth.
  • Add pudding mixture to fruit.
  • Mix gently until throughly coated.
