CHICKEN AND PINEAPPLE SKEWERS



Chicken and Pineapple Skewers image

1 cup ketchup
1/4 cup low sodium soy sauce
1/4 cup honey
1 tablespoon yellow mustard
1/4 cup brown sugar
2 whole garlic cloves
1 lemon, juiced
8 boneless skinless chicken thighs
1 fresh pineapple
16 wooden skewers, soaked in water for 30 minutes
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground black pepper

Steps:

  • In a saucepan over medium heat, add the ketchup, soy sauce, honey, mustard, sugar, garlic, and lemon juice. Bring to a simmer and cook gently until thickened, about 10 minutes. Set aside and cool.
  • Heat an outdoor grill or a grill pan. Cut each chicken thigh into 2 pieces. Peel the pineapple and cut it into 1 1/2-inch chunks. Alternating between the chicken and pineapple, thread the pieces onto the skewers. Brush them with olive oil and season them with salt and pepper. Remove the garlic cloves from the barbecue sauce and discard; put about half the sauce into a small bowl for later. Brush skewers with some of the sauce. Cook them on the grill, basting regularly with the barbecue sauce, until cooked through, about 10 to 15 minutes. Serve with reserved barbecue sauce on the side for dipping.

PINEAPPLE IN LIME, VANILLA AND RUM SYRUP



Pineapple in Lime, Vanilla and Rum Syrup image

1/2 cup turbinado or raw sugar
3/4 cup water
1 vanilla bean
Zest of 1 lime
2 tablespoons rum, optional
1 large ripe pineapple
Ice cream, for service

Steps:

  • Soak the wooden skewers in cold water for at least 30 minutes before broiling or grilling the pineapple.
  • Gently heat the sugar and water together in a saucepan, until the sugar dissolves. Halve the vanilla bean, scrape the seeds from the pod, and add them to the pan. Add the rest of the bean pod, and the lime zest, as well. Simmer the ingredients gently for 10 to 12 minutes, or until the liquid is reduced and syrupy. Add the rum to the mixture, if using.
  • Preheat the broiler on high or preheat a grill to medium-high, and lightly oil the grate.
  • Meanwhile, remove the top and tail of the pineapple. Carve away the skin and scoop out the spiny eyes. Cut the pineapple crosswise into eighths, and discard the inner core from each piece. Slide the pineapple slices onto the presoaked wooden skewers.
  • Broil the skewered pineapple pieces for 8 to 10 minutes on a baking pan lined with aluminum foil or grill the skewers 8 to 10 minutes. Spoon the hot spiced syrup over the skewers, and serve with ice cream, if desired.

GRILLED FRUIT SKEWERS WITH CHILI AND LIME



Grilled Fruit Skewers with Chili and Lime image

1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

VANILLA LIME PINEAPPLE SKEWERS

1 vanilla bean
8 ounces dark brown sugar, approximately 1 cup firmly packed
1/2 cup freshly squeezed lime juice
Pinch kosher salt
1 whole pineapple
8 (12-inch) metal skewers

Steps:

  • Split open the vanilla pod and scrape out the pulp, and add the pod and the pulp to a small saucepan along with the brown sugar, lime juice, and salt. Whisk together and place the mixture over medium high heat and bring to a boil, stirring just until the sugar has dissolved. Remove from the heat and allow to sit for 2 hours before using. Remove the vanilla pod. Once cool, place the syrup in a squeeze bottle or other sealable container. Store in the refrigerator.
  • Preheat grill on high.
  • Peel and remove the core from the pineapple. Cut the pineapple into eighths, lengthwise, and remove any prickly brown eyes.
  • Thread the pieces of pineapple onto the skewers lengthwise. Coat the skewered pineapple on all sides with the syrup. Grill on all sides until golden brown, approximately 4 minutes per side, 12 minutes total, or until the pineapple is tender. Serve with any remaining sauce.

GINGERED PINEAPPLE CHICKEN SKEWERS

2 (15 ounce) cans crushed pineapple
3 tablespoons lime juice
5 tablespoons soy sauce
1 tablespoon light brown sugar
1 tablespoon sesame oil
1 tablespoon grated ginger
3 pounds boneless skinless chicken breast or thigh meat, cut lengthwise into 1-inch wide strips
1 medium scallion, thinly sliced for garnish
36 (6-inch) wooden skewers

Steps:

  • Combine everything except chicken and skewers in a large nonreactive bowl and whisk to combine. Add chicken strips and toss to coat. Cover and marinate at least 4 hours.
  • When ready to cook, heat oven to 425 degrees and arrange a rack in the middle. Remove chicken from marinade (reserving marinade) and thread 1 piece of chicken on each skewer.
  • Heat the reserved marinade in a saucepan until boiling and boil for 3 minutes. Cool a bit before using.
  • Arrange skewers on a foil-lined baking sheet in a single layer. Bake for 10 minutes, flip skewers and baste with remaining marinade (you don't need to use it all). Bake about 5 more minutes, until golden brown on both sides. Transfer to a platter, garnish skewers with scallions, and serve.

MAPLE-MARINATED PINEAPPLE SKEWERS



Maple-Marinated Pineapple Skewers image

This in my eyes is the perfect summer dessert to go with a grilled meal. It's juicy, sweet, hot and icy cold all at the same time, and so easy to make. It can even be prepped a day ahead of time. It's fun for kids to help with the skewering and feel free to substitute what you like for the blueberries. Using maple gives a warm brown sugar flavor without all the sugar.

1 fresh pineapple or 1 (16-ounce) can pineapple chunks
1 cup maple syrup
2 tablespoons dark rum, optional
1/4 cup blueberries
8 to 9-inch wooden skewers, as needed (soaked in warm water for 10 minutes)
1 pint vanilla ice cream

Steps:

  • To prepare the pineapple, pull off the green top by "unscrewing" it. Reserve the best leaves for decoration by placing them in cold water, trimming them if needed to make their shape a little more perfect.
  • With a large sharp knife, cut the peel off the pineapple and halve it lengthwise. Reserve half the pineapple for another use. Cut the remaining pineapple in half lengthwise and cut out the core. Cut the pineapple into 1 1/2-inch thick slices and then into chunks.
  • In a bowl, whisk together the syrup and rum, if using. Toss the chunks in the maple syrup and thread them, alternating with blueberries, onto the wooden skewers. Lay the skewers in a shallow dish. Pour the remaining syrup over skewers. Cover and chill. (The skewers can be assembled up to a day in advance.)
  • To grill skewers: Brush the fruit 1 more time with maple syrup from the bottom of the dish. Fire up your grill and place the skewers on to cook them, turning occasionally, until caramelized.
  • To serve: Place scoops of vanilla ice cream in dessert bowls, arranging 2 pineapple leaves at the back like rabbit ears, then place a skewer across each bowl. Pour any remaining maple syrup over the ice cream and serve immediately.

GRILLED PINEAPPLE SKEWERS

A pretty and tasty side to grilled fish or meats. This can also be made on an indoor grill or stovetop grill pan.

1 pineapple, peeled
3 Tbsp honey
2 Tbsp freshly squeezed lime juice
1 Tbsp fresh mint, minced (optional)

Steps:

  • 1. Preheat grill on high. Slice off the top and bottom of the pineapple. Stand pineapple upright on cutting board; cut into quarters from top to bottom. Cut each quarter into 1/2-inch-thick slices. Thread three pineapple slices onto each skewer.
  • 2. In a small bowl, whisk together the honey and lime juice, and the mint, if using. Brush over the pineapple, reserving about half of the glaze.
  • 3. Coat pineapple with cooking spray. Grill the skewers for 2-3 minutes per side, or until it begins to brown. Brush with remaining glaze and serve.
