This recipe came from a Betty Crocker Cookbook, 1972. I have since lost that book, however, I have always made my pudding, pies including the best banana pudding you will ever taste! I have altered the recipe to cook in the microwave, and have included stove top directions also. Every time I take this to a potluck, I have to give out recipes--so I thought I would just refer them here! I use this crust Recipe #174625 Enjoy!

3/4 cup sugar
1/4 cup cornstarch
2 tablespoons cornstarch
1 teaspoon salt
4 cups milk
5 egg yolks, slightly beaten
3 tablespoons butter, softened
1 tablespoon vanilla
2 teaspoons vanilla

Steps:

  • Cooking on stovetop.
  • Bake pie shell. Stir together sugar, cornstarch (Cornstarch is 1/4 C PLUS 2 T - I was unable to enter that amount as one ingredient)and salt in saucepan. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; blend in butter and vanilla. Immediately pour into baked pie shell; press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. If desired, serve pie with sweetened whipped cream.
  • Microwave.
  • Bake pie shell. Stir together sugar, cornstarch and salt in microwave glass mixing bowl. Blend milk and egg yolks; Whip with whisk well. Cook on high for 2 minutes at a time, take out and use wire whip to blend well and return to microwave for 2 more minutes. Continue this until mixture is of pudding consistency. Blend in butter and vanilla. Immediately pour into baked pie shell; press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. If desired, serve pie with sweetened whipped cream.
  • Variations:.
  • Chocolate Cream Pie:.
  • Follow recipe for 9-inch pie except-increase sugar to 1 1/2 cups and cornstarch to 1/3 cup. Omit butter and stir in 2 ounces melted unsweetened chocolate with the vanilla.
  • Coconut Cream Pie:.
  • Decrease Vanilla to 2 teaspoons and stir in 1°C flaked coconut. Sprinkle flaked coconut over whipped cream on pie.
  • Banana Pudding:.
  • Make Vanilla Cream. Cool for 15-20 minutes. While cooling, line bottom of pan with vanilla wafers and top with sliced bananas.
  • Cover with cooled pudding. Top with heavy cream (for every 8 oz of heavy cream add 4 t of sugar -- whip cream until stiff. Crush a few wafers and sprinkle on top.

1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups milk
3 slightly beaten egg yolks
2 tablespoons butter or 2 tablespoons oleo
1 teaspoon vanilla
1 (9 inch) baked pastry shells
3 egg whites (for meringue)
1/4 teaspoon cream of tartar
1/2 tablespoon vanilla
6 tablespoons sugar

Steps:

  • in saucepan, combine sugar, flour, and salt; gradually stir in milk.
  • Cook and stir over medium heat till mixture boils and thickens.
  • Cook 2 minutes longer.
  • Remove from heat.
  • Stir small amount hot mixture into yolks.
  • Return to hot mixture; cook 2 minutes stirring constantly.
  • Remove from heat.
  • Add butter and vanilla; cool to room temperature.
  • Pour into baked pie shell----> Meringue: Beat 3 egg whites with cream of tartar and vanilla.
  • Gradually add 6 Tbsp sugar till soft peaks form, spread atop pie.
  • Bake in moderate oven 350°F 12 to 15 minutes.
  • Variations of Vanilla Cream Pie-------------.
  • Banana or Coconut or Butterscotch or Chocolate or Pineapple.
  • Follow directions for vanilla cream pie substituting the following: for butterscotch pie substitute 1 cup brown sugar and use 3 Tbsp butter.
  • For chocolate increase sugar to 1 cup and use approximately 4 tbsp cocoa.
  • For banana layer three sliced bananas on crust and pour pie filling over.
  • For pineapple, drain 1 8 oz can of crushed pineapple and stir into cream filling.
  • You may also make this into a pudding by using 3 cups of milk instead of 2.

RUM-VANILLA CREAM PIE

The first bite of this seemingly traditional 1950s-style cream pie is quite a surprise, with a hit of rum in both custard and piped whipped cream.

1/2 recipe Pate Brisee for Rum-Vanilla Cream Pie
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 1/2 cups whole milk
1 vanilla bean, split and scraped, pod reserved
4 large egg yolks
1/4 cup plus 1 tablespoon (2 1/2 ounces) golden rum, preferably Appleton
2 ounces (4 tablespoons) unsalted butter, softened
1 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • On a lightly floured work surface, roll pate brisee to 1/8-inch thickness. Fit into a 9-inch pie dish. Trim edges, leaving a 1-inch overhang. Tuck overhang under dough so edges are flush with rim, and crimp edges. Lightly prick bottom of dough with a fork. Refrigerate for 30 minutes.
  • Preheat oven to 375 degrees. Line dough with parchment, and fill with pie weights or dried beans. Bake until edges begin to turn gold, 15 to 18 minutes. Carefully remove weights and parchment. Bake until bottom and sides are golden brown, 12 to 15 minutes. Let cool completely on a wire rack. (Crust can be stored overnight.)
  • Combine granulated sugar, cornstarch, and salt in a medium saucepan. Whisk in milk and vanilla seeds, and cook over medium-high heat, stirring constantly, until bubbling and thick, about 7 minutes (about 2 minutes after it comes to a boil).
  • Whisk yolks in a medium bowl until combined. Pour in milk mixture in a slow, steady stream, whisking until completely incorporated. Return the mixture to saucepan, and cook over medium heat, stirring constantly, until it returns to a boil, 1 to 2 minutes.
  • Remove from heat, and stir in 1/4 cup rum. Add butter, 1 tablespoon at a time, whisking until butter melts before adding next piece. Let cool in saucepan on a wire rack, whisking occasionally, for about 10 minutes.
  • Pour custard into piecrust. Press plastic wrap directly on surface of custard. Refrigerate until custard filling is chilled and firm, at least 4 hours (or overnight).
  • Meanwhile, place cream and vanilla pod in a bowl. Cover, and refrigerate for at least 4 hours (or overnight).
  • Just before serving, remove vanilla pod from cream, and discard. Whisk cream until soft peaks form. Add confectioners' sugar and remaining tablespoon rum, and whisk until stiff peaks form. Transfer to a pastry bag fitted with a 1/2-inch star tip (such as Ateco #826), and pipe whipped cream over pie. Serve immediately.

COCONUT CREAM PIE WITH SUGAR-FREE VANILLA PUDDING

2 small boxes sugar-free instant vanilla pudding
2 3/4 c cold low fat milk
1 Tbsp pure vanilla extract
1 8oz. carton frozen whipped topping, thawed
1 1/2 c flaked, sweetened coconut
1 graham cracker or cookie crust, prepared or store bought
extra whipped topping for garnish
3/4 c toasted coconut, cooled

Steps:

  • 1. In a large mixing bowl,whisk dry pudding mixes, milk & vanilla extract until pudding becomes slightly thickened. Allow to rest a few minutes & fold in 8 oz. whipped topping. Add the 1 1/2 c. coconut.
  • 2. Pour into crust. Garnish with extra whipped topping & the toasted coconut.
  • 3. Chill pie, covered, at least 2 - 4 hrs. before serving. Refrigerate leftover pie.

APPLE CINNAMON PIE WITH VANILLA ICE CREAM

1 1/2 pounds Red Delicious apples, 1/4-inch-thick slices
1 1/2 pounds Golden Delicious apples, peeled, cored, cut into 1/4-inch-thick slices
1/4 cup plus 1 tablespoon sugar
1/4 cup all purpose flour
3 1/2 teaspoons ground cinnamon
1 tablespoon cider vinegar
1/2 teaspoon salt
Basic Pie Crust
1/4 cup honey
1 tablespoon milk
Vanilla ice cream

Steps:

  • Position rack in bottom third of oven and preheat oven to 400° F. Combine sliced apples, 1/4 cup sugar, flour, 2 teaspoons ground cinnamon, vinegar and salt in large bowl; toss to blend.
  • Roll out 1 dough disk on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter deep-dish glass pie dish. Trim overhang to 1/2 inch. Brush edge of crust lightly with water. Transfer apple mixture to crust, mounding in center and pressing lightly to compact. Drizzle with honey. Sprinkle with 1 teaspoon cinnamon. Roll out second dough disk to 13-inch round. Place atop apples. Trim dough overhang to 1 inch. Fold top crust edge under bottom crust edge, pressing to seal. Crimp edge decoratively. Cut several slits in crust to allow steam to escape.
  • Place apple pie on baking sheet. Bake 45 minutes.
  • Combine remaining 1 tablespoon sugar and 1/2 teaspoon ground cinnamon in small bowl. Brush top crust of pie with milk. Sprinkle with sugar mixture. Bake until crust is golden brown, apples are tender and juices bubble thickly, covering crust edges with foil if browning too quickly, about 20 minutes. Transfer pie to rack and cool.
  • Cut pie into wedges and serve with vanilla ice cream.

Steps:

  • Soften gelatin in cold water. Scald the milk.

8 ounces semi-sweet chocolate chips
1 cup hazelnuts, skinned and toasted
1/4 cup all-purpose flour, plus more to dust the pie dish
3/4 cup sugar
1/4 cup hot water
4 eggs
1 stick butter, cut into 3/4-inch pieces, at room temperature, plus more to grease the pie dish
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1 cup heavy whipping cream
2 tablespoons powdered sugar
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Position an oven rack in the lower 1/3 of the oven and preheat to 350 degrees F.
  • Put 1/2 of the chocolate chips, hazelnuts, and flour in the bowl of a food processor. Pulse until the hazelnuts are coarsely chopped. Pour the hazelnut mixture into a small bowl and set aside. Combine remaining chocolate chips and sugar in the food processor. Blend until the mixture is finely ground. With the machine running, gradually add the hot water until the chocolate is melted and mixture is smooth. Add the eggs, butter, vanilla and cinnamon. Pulse until mixture is blended. Return the hazelnut mixture to the food processor and pulse to incorporate. Pour the mixture into a buttered and floured 9-inch pie dish. Bake for 35 minutes. Place the pie on a cooling rack and cool for 1 hour. (Top may crack during cooling.) Refrigerate for 2 hours. (Pie can be made 1 day in advance and stored in the refrigerator). Allow the pie to return to room temperature for 30 minutes before serving.
  • In a large mixing bowl, beat the cream until it forms soft peaks. Add the powdered sugar, vanilla, and cinnamon. Continue to beat until cream holds stiff peaks.
  • To serve: Cut the pie into slices and dollop with the Vanilla Cream.

MICROWAVE VANILLA CREAM PIE & VARIATIONS

This is a breeze to make! We love cream pies but I have arthritis and a lot of times I don't feel like all the stirring it takes to make a cream pie the traditional way. This cuts out all of that! The taste is exactly the same, delicious! This recipe comes from an old Tappan O'keefe & Merrit Microwave Cooking Guide.

1 baked 9 inch pie shell
1/2-3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 slightly beaten egg yolks
2 tablespoons butter (or maragaine)
1 teaspoon vanilla
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Mix together sugar, cornstarch, salt and 1/2 cup milk in a 1 1/2 qt.
  • casserole until smooth.
  • Stir in remaining milk.
  • Microwave on HIGH for 5 to 8 minutes or until thickened.
  • Stir occasionally the last half of cooking.
  • Beat a little of the hot mixture into the beaten egg yolks, then add the egg yolk mixture to the remaining hot mixture.
  • Microwave on HIGH for 1 1/2 to 2 minutes or until thickened.
  • Stir occasionally.
  • Blend in butter and vanilla.
  • Pour into the cooled baked pastry shell.
  • Beat egg whites and cream of tartar until foamy.
  • Gradually add sugar, beating until stiff peaks form.
  • Spread over filling.
  • Seal around edges.
  • Microwave on MEDIUM-HIGH for 3 to 4 minutes.
  • *Ifmicrowave has a browning element, brown as desired.
  • Variations:.
  • BANANA CREAM PIE.
  • Follow Vanilla Cream Pie recipe as directed except slice 2 medium bananas in the bottom of the 9 inch baked pastry shell.
  • Pour vanilla cream pie filling over the bananas.
  • Top with meringue.
  • BUTTERSCOTCH CREAM PIE.
  • Follow Vanilla Cream Pie recipe as directed except substitute the granulated sugar with dark brown sugar and add 3 tablespoons butter instead of the 2 tablespoons butter.
  • COCOA CREAM PIE.
  • Follow Vanilla Cream Pie recipe as directed except add 1/3 cup cocoa in Step 1 and increase cornstarch to 1/4 cup.
  • (I use the larger amount of sugar for this one.) COCONUT CREAM PIE.
  • Follow Vanilla Cream pie recipe as directed except add 1 cup coconut to cream pie filling and sprinkle 1/3 cup toasted coconut over the meringue.

THREE-BERRY PIE WITH VANILLA CREAM

1 cup granulated sugar
3 tablespoons cornstarch
2 tablespoons quick-cooking tapioca
1/4 teaspoon salt
3 cups fresh blackberries (3/4 to 1 pound)
2 cups fresh raspberries (1/2 to 3/4 pound)
2 cups fresh blueberries (1/2 to 3/4 pound)
Pastry dough
1 large egg, lightly beaten
1 tablespoon sanding or granulated sugar
Accompaniment: vanilla cream
Special Equipment
a 9-inch metal or glass pie plate (4-cup capacity)

Steps:

  • Put a large baking sheet in middle of oven and preheat oven to 450°F.
  • Whisk together granulated sugar, cornstarch, tapioca, and salt, then toss with berries.
  • Roll out 1 piece of dough (keep remaining piece chilled) on a lightly floured surface with a lightly floured rolling pin into a 13-inch round and fit into pie plate. Trim edge, leaving a 1/2-inch overhang. Chill shell while rolling out dough for top crust.
  • Roll out remaining piece of dough on lightly floured surface with floured rolling pin into an 11-inch round.
  • Spoon filling into shell, then cover pie with pastry round and trim with kitchen shears, leaving a 1/2-inch overhang. Press edges together, then crimp edge decoratively. Brush top of pie with egg and sprinkle all over with sanding sugar. Cut 3 steam vents in top crust with a small sharp knife.
  • Bake pie on hot baking sheet in middle of oven 15 minutes, then reduce oven temperature to 375°F and continue to bake until crust is golden brown and filling is bubbling, about 45 minutes more.
  • Cool pie on a rack at least 3 hours before serving to allow juices to thicken slightly (filling will still be juicy).

1 1/2 cups water
3/4 cup (packed) light brown sugar, divided
2 tablespoons cornstarch
1/2 teaspoon salt
3 1/4 teaspoons cinnamon
3/4 teaspoon nutmeg
Pinch of black pepper
2 pounds peaches, peeled, pitted and cut into wedges (about 3 cups)
1/2 cup flour
1 cup ground pecan pieces
1/2 stick butter, cut into small pieces
1 unbaked 9-inch pie crust
Vanilla Ice Cream, recipe follows
1 quart of heavy cream
2 cups sugar
8 egg yolks
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • In a saucepan, combine the water, 1/2 cup brown sugar, cornstarch, salt, 1 teaspoon of cinnamon, 1/2 teaspoon of grated nutmeg, and pepper, whisk until smooth. Place the pan over high heat and bring to a boil. Reduce the heat to medium and simmer for 2 minutes. Remove from the heat. Place the peaches in a mixing bowl and pour the syrup over the peaches. Toss well and cool for 10 minutes.
  • In a mixing bowl, combine the 1/4 teaspoon cinnamon, remaining nutmeg, 1/4 cup brown sugar, flour, pecans, and butter. Using your fingers, work the mixture together until it resembles a coarse crumb-like mixture.
  • Pour the peaches into the prepared pie shell. Sprinkle the topping over the top of the peaches. Bake for 1 hour, or until the crust is golden.
  • Remove the pie from the oven and cool for 15 minutes before slicing. Serve each slice, warm, with a scoop of Vanilla Ice Cream.
  • In a saucepan, combine the cream and sugar. Whisk until smooth. Place the pan over medium heat and bring to a gentle boil. In small mixing bowl, whisk the eggs, vanilla, and remaining 2 teaspoons of cinnamon together. Add 1 cup of the hot liquid to egg yolks. Whisk until smooth. Whisk the egg mixture back into the hot cream. Continue to cook for 4 minutes. Remove from the heat and cool completely. Strain the liquid. Pour the liquid into the electric ice cream container and process according to manufacturer's directions.

2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup unsalted butter, cold, cut into small pieces
1/4-1/2 cup ice water
1 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 1/2 cups whole milk
1 vanilla bean, split and scraped, pod reserved
4 large egg yolks
1/4 cup golden rum, preferably Appletonm plus
1 tablespoon golden rum
4 tablespoons unsalted butter, sogtened
1 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • PATE BRISEE:.
  • Pulse flour, salt and sugar in a food processor until comvbined. Add butter, and process, until combined. Add butter and process until mixture resembles coarse meal, about 1o seconds. WEith the machine running, add ice water in a slow, steady stream until mixture just begins to hold together.
  • Shape dough into two disks. Warp each in plastic, and refrigerate until form, about 1 hour, or up to 2 days.
  • On al lightly floured work surface, roll pate brisée to 1/8-inch thickness. Fit into a 9-inch pie dish. Trim edges, leaving a 1-inch overhang. Tuck overhand under dough so edges are flush with rim and crimp edges. Lightly prick bottom of dough eith a fork. Refrigerate for 30 minutes.
  • Preheat oven to 375°F Line dough with parchment, and fill with pie weights or dried beans, Bake until edges begin to turn gold, 15-18 minutes. Carefully remove weights and parchment. Bake until bottom and sides are goldenm brown, 12-15 minutes. let cool completely on wire rack. Crust can be stored overnight.
  • FILLING:
  • Combine sugar, cornstarch and salt in a medium saucepan. Whisk in milk and vanilla seeds, and cook over medium-high heat, stirring constantly, until bubbling and thick, about 7 minutes, about 2 minutes after it comes to a boil.
  • Whisk yolks in a medium bowl umtil combined. pour in milk mixture in a slow, steady stream, whisking until completely incorporated. Return mixture to saucepan, and cook over medium heat, stirring constantly, until it returns to a boil, 1-2 minutes.
  • Remove from heat and stir in 1/4 cup rum. Add butter, 1 tablespoons at a time, whisking until butter melts, before adding the next piece. Let cool in saucepan on wire rack, for about 10 minutes.
  • Pour custard into piecrust. Press plastic wrap directly on surface of custard. Refrigerate until custard filling is chilled and firm, at least 4 hours or overnight.
  • Meanwhile, place cream and vanilla pod in a bowl. Cover, and refrigerate for at least 4 hours or overnight.
  • Just before serving, remove vanilla pod from cream, and discard. Whisk cream until soft peaks form. Add confectioner's sugar and remaining tablespoons rum, and whisk until stiff peaks form. Transfer to a pastry bag fitted with a 1/2 inch star tip, such as Ateco #3826, and pipe whipped cream over pie. Serve immediately.

1/2 recipe Pâte Brisée (page 322)
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 1/2 cups milk
1 vanilla bean, halved lengthwise and scraped, pod reserved
4 large egg yolks
1/4 cup plus 1 tablespoon (2 1/2 ounces) golden rum, preferably Appleton
4 tablespoons unsalted butter, cut into tablespoons and softened
1 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • On a lightly floured surface, roll out dough to a 13-inch round, 1/8 inch thick. Fit into a 9-inch pie plate. Trim dough, leaving a 1-inch overhang. Tuck overhang under, flush with rim, and crimp edges. Pierce bottom of shell all over with a fork. Refrigerate or freeze until firm, about 30 minutes.
  • Preheat oven to 375°F. Line shell with parchment; fill with pie weights or dried beans. Bake until edges begin to turn gold, 15 to 18 minutes. Remove weights and parchment. Bake until crust is golden brown, 12 to 15 minutes more. Let cool completely on a wire rack. (Crust can be wrapped in foil and stored overnight at room temperature.)

I love Vanilla, now don't get me wrong, I crave chocolate like everyone else, but vanilla holds a special place in my heart. Vanilla is available in so many different types and they all have their own subtle flavor differences. Isn't it time you rediscovered an old favorite !

3/4 c sugar
1/4 c plus 2 teaspoons cornstarch
1/8 tsp salt
3 egg yolks, beaten
3 c milk
1.5 Tbsp butter
1.5 tsp vanilla extract
1 9 inch baked pie shell
3/4 c whipping cream
1/3 c sifted confectioners' sugar

Steps:

  • 1. In a heavy sauce pan combine sugar, cornstarch and salt.
  • 2. In a separate bowl, whip together egg yolks and milk , stir into sugar mixture.
  • 3. Cook over medium heat, stirring CONSTANTLY, until mixture thickens and boils.
  • 4. Boil 1 minute, keep stirring . *Careful not to scorch the bottom of pan
  • 5. Remove from heat and pour mixture through a fine sieve. Then stir in butter and vanilla.
  • 6. Pour into a pastry shell and cover filling with saran wrap. *** Make sure wrap touches filling so a "skin" doesn't form. ***
  • 7. Allow to cool 30 min. on a cooling rack and then refrigerate until filling is firm. **Tip** I just remove one of my oven racks and elevate it on top of a couple coffee mugs of the same size. Makes a good cooling rack. ***
  • 8. Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form.
  • 9. Spread whipped cream over pie. Or fill a piping bag with whipped cream, use a star tip to decorate. Make it your own, you can even use a ziplock with the tip cut off ! Refrigerate and serve with berries, chocolate shavings, or grated citrus . Enjoy
