A friend and I have recently become addicted to coffee with flavoured creamers (mmm... International Delight...), and then... I ran out - and so did the local store! So I hunted down recipes online until I found this one - it's sweet and creamy and (most importantly - to me, at least) not a powder!!! It's from thriftyfun.com.

1 (300 ml) can low fat sweetened condensed milk (or regular... but I use low fat)
1 1/2 cups nonfat milk
1 tablespoon vanilla

Steps:

  • Combine all ingredients in a blender and blend well (or in a mason jar and stir up sweetened condensed milk as it will settle at the bottom, and then put lid on it and shake like crazy!). Store in the fridge. Will keep for approximately two weeks.
  • Variations:
  • a) Add 1 Tbsp cocoa and 1 tsp almond extract for a chocolate almond flavor.
  • b) Add 1 tsp almond extract and 1/2 tsp orange extract for cappuccino.
  • c) Add 1/2 tsp cinnamon and 1 tsp almond extract for amaretto.
  • d) Add specialty flavor syrups (from specialty coffee shops and the like) as needed for additional flavors.
  • Please note that so far I've only tried the vanilla - and it's wonderful!

This is the basic recipe for McDonald's iced coffee. NOTE: We use Dunkin Donuts coffee beans (available at most supermarkets in the USA now) we ground at the store and brewed in a French press. If you can't find that, I recommend that you use a fairly mellow light roast. Millstone Kona Blend or Hawaiian blend are also great. You won't need a French press, but obviously, well made coffee couldn't hurt this. If you follow the directions and use quality ingredients, you'll wonder why you're paying $2.50 or more for iced coffee anywhere else. Feel free to double or quadruple the recipe if you have guests.

1 cup brewed coffee (give or take a tablespoon depending on the kind of ice you have, so have more than a cup ready)
1/4 cup half-and-half cream
2 1/2 tablespoons vanilla-flavored coffee syrup (We use Torani)
ice (enough to fill 22 ounce cup to top)

Steps:

  • Brew coffee.
  • When coffee is done brewing, you may place it in the freezer for 15 minutes to cool it down a little so less ice will be melted.
  • Fill 22 ounce cup to top with ice.
  • Add syrup and half & half to cup.
  • Fill cup rest of way to top with coffee.
  • Mix carefully but thoroughly with spoon.
  • Add straw.
  • Enjoy!

Successful Baking for Flavor and Texture (1934) won me over with its gorgeous pink cover. I found a simple coffee cake recipe there and I substituted oil for the butter and added a couple of egg yolks to make it as moist as possible. With Greek yogurt so popular these days, I decided to use it instead of buttermilk--it gives the cake a wonderful tang. I also added a generous amount of vanilla (strangely, the original recipe called for none!). A buttery brown sugar-cinnamon crumb that goes both inside and on top of the cake (and can be doubled if you're all about the topping and swirl) rounds out this perfect breakfast treat.

1/2 cup [110 g] unsalted butter, melted and cooled slightly
1 1/4 cups [175 g] all-purpose flour
1 cup [200 g] packed dark brown sugar

3 1/4 cups [455 g] all-purpose flour, plus more for the pan
1 1/4 teaspoons baking powder
1 1/2 teaspoons baking soda

2 1/3 cups [465 g] granulated sugar
1 cup [240 ml] mild olive oil or vegetable oil
1 tablespoon pure vanilla extract
2 eggs
2 egg yolks
1 3/4 cups [420 g] plain whole Greek yogurt
Confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F [180 degrees C]. Generously grease a 10- to 12-cup [1.4- to 2.8-L] tube pan with nonstick cooking spray or softened butter and dust with flour, knocking out any excess.
  • For the topping and swirl: Mix all of the ingredients together in a medium bowl with a fork until thoroughly combined. Refrigerate, covered in plastic wrap, until ready to use.
  • For the cake: In a large bowl, whisk together the flour, baking powder, baking soda and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat the granulated sugar, oil and vanilla on medium-low speed until well combined, stopping and scraping the bowl with a rubber spatula, as needed, 2 to 3 minutes. On low speed, add the eggs and yolks, one at a time, stopping and scraping the bowl after each addition.
  • Add the dry ingredients on low speed in three additions, alternating with two additions of the yogurt, scraping the bowl as needed with a rubber spatula. Stop the mixer and remove the bowl when there are still streaks of flour in the batter. Finish mixing by hand.
  • Transfer half of the batter to the prepared pan and smooth the top with a small offset spatula or butter knife. Sprinkle half of the crumb mixture evenly over the batter. Add the remaining batter and smooth the top again. Using your fingers, sprinkle the remaining crumb mixture evenly over the top of the cake, pressing down lightly.
  • Bake for 60 to 70 minutes, rotating the pan at the halfway point. The cake is ready when a cake tester inserted in the center comes out with a moist crumb or two. Let cool to room temperature before removing from the pan. Run a paring knife around the edges to release the cake from the pan.
  • Dust with confectioners' sugar before serving. The cake will keep, tightly wrapped in plastic wrap, for up to 3 days on the counter.

Steps:

  • For the cupcakes: Preheat the oven to 325 degrees F. Line muffin pans with 24 muffin liners. In the bowl of an electric mixer with the paddle attachment, whisk both flours, the granulated sugar, baking powder and salt until well combined. With the mixer on low speed, add the butter. Add the eggs, one at a time, scraping the bowl as needed. Add the milk, rum and vanilla, and mix for about a minute until well combined. Fill the prepared muffin pans three-quarters full with batter and bake until a toothpick inserted comes out clean, about 24 minutes.
  • For the coffee rum syrup: Combine the hot coffee, granulated sugar and rum in a bowl and whisk until the sugar dissolves. Refrigerate until cool.

Quantities are a little vague because I'm not sure how my favorite, huge mug scales down to smaller cups -- use your sense of smell to find proportions that are flavorful, but not too candy-sticky because this is coffee to go with dessert rather than to substitute for the dessert. :) Since I like flavored coffees in the evening I usually use decaf -- brewed strong. Most of the prep time is brewing the coffee.

1/4 cup milk (a tbs more or less according to the size of the cup)
