VANILLA CINNAMON SUGAR SWIRL CUPCAKES



Vanilla Cinnamon Sugar Swirl Cupcakes image

A vanilla and cinnamon base cupcake with a vanilla and cinnamon buttercream frosting.

Number Of Ingredients 18

2 cup all purpose flour
1 1/4 cup sugar
1 3/4 tsp cinnamon
1/4 tsp baking soda
1 tsp baking powder
1/2 cup salted butter, room temperature
3 egg whites
2 1/2 tsp vanilla extract
1/2 cup sour cream
1/2 cup milk
2 tbsp cinnamon
1/3 cup sugar
1/2 cup butter, softened
1/2 cup shortening
4 cups powdered sugar
3 tsp cinnamon
1 tsp vanilla extract
2 tbsp milk

Steps:

  • Preheat oven to 350 degrees.
  • Mix together flour, cinnamon, sugar, baking soda, and baking powder in mixing bowl. I use my electric mixer.
  • Add butter (room temperature), egg whites, sour cream, vanilla, and milk - Mix until smooth (no lumps).
  • Add cupcake liners to cupcake pan.
  • Combine cinnamon and sugar in a small bowl.
  • Place 1 tbsp of batter into each cupcake liner
  • Sprinkle 1/4 tsp of cinnamon sugar mixture on top of cupcake batter.
  • Repeat steps until liners are half way full.
  • Sprinkle a little more cinnamon sugar mixture on top of half-filled liners
  • Bake for 16-18 minutes, or until a toothpick comes out with minimal crumbs
  • Allow to cool for a few minutes
  • Remove cupcakes and continue cooling on wire rack.
  • Mix room temperature butter and shortening until smooth.
  • Add 1 tsp of vanilla, mix until well blended
  • Add powdered sugar one cup at a time and mix until well blended. (Mixture will be stiff)
  • Mix in cinnamon until well blended.
  • Add in milk 1 tbsp at a time. Add until right consistency.
  • Pipe cupcakes with frosting.
  • Sprinkle with cinnamon sugar if desired.

1 1/2 cups self rising flour
1 t baking powder
1/4 t fine sea salt
1/2 cup sugar
1 large egg (lightly beaten)
1 cup whole milk
7 T unsalted butter (melted)
1 t vanilla
1 T Vietnamese cinnamon
6 T light brown sugar

Steps:

  • Preheat the oven to 375 F. Line your muffin tin (12 wells) with paper liners. Lightly spray the liners and the top of the muffin tin with nonstick spray and set aside.
  • Whisk together the brown sugar and Vietnamese cinnamon. Set aside.
  • Whisk together the flour, baking powder, salt and sugar. Set aside.
  • Whisk the egg, milk, melted butter and vanilla together. Add the flour mixture and fold gently just until combined.
  • Put about a tablespoon of batter into each muffin well. Sprinkle a heaping teaspoon of cinnamon sugar over the batter. Then repeat the layers, ending with a 3rd layer of batter.
  • Using a skewer or knife, swirl the batter to marble the layers (if kids are doing it, just accept it may not be the nicest swirl ever but it will still be tasty).
  • Bake for 18-20 minutes, or until risen and golden. Cool in the muffin tin for 5-7 minutes, then remove the muffins to a cooling rack. Be careful as the sugar is hot!

2 tbsp Golden Corn Syrup ((golden syrup))
1/2 cup Brown Sugar ((dark brown sugar))
3 tsp Ground Cinnamon
3 tbsp Butter ((melted))
1 cup Icing Sugar
1/4 cup Cream Cheese
2 tbsp Milk
1/2 tsp Vanilla Extract

  • Preheat oven to 350°F and line a muffin tray with liners
