FRESH FRUIT WITH HONEY VANILLA YOGURT



Fresh Fruit with Honey Vanilla Yogurt image

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean (optional)
1 pint fresh strawberries, hulled and cut in half
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 golden papaya, peeled, cut in half, seeds removed and diced
Sprig of mint, for garnish

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the berries and papaya and gently mix the fruit together. Place in a serving bowl and garnish with the mint. For serving, spoon the yogurt mixture over the fruit.

6 oz. raspberries
4 oz. strawberries
5 oz. pitted whole cherries
3 1/2 tsp. fresh lemon juice
1/2 c. sugar
16 oz. blueberries
2 qt. vanilla ice cream
1/2 c. whole milk
1 tsp. pure vanilla extract

Steps:

  • Combine raspberries, strawberries, cherries, 1 1/2 teaspoons lemon juice, and 1/4 cup sugar in a small saucepan. Cook over medium heat, stirring frequently, until berries release their juices, about 10 minutes. Transfer to a bowl, and refrigerate until cold.
  • Combine remaining 2 teaspoons lemon juice and 1/4 cup sugar with 2 cups blueberries in a small saucepan. Cook over medium heat, stirring occasionally, until berries release their juices, about 10 minutes. Transfer to a bowl. Let cool completely. Stir in remaining 2 cups blueberries, cover, and refrigerate until cold.
  • Whisk ice cream, milk, and vanilla in a large bowl. Spoon 1/4 cup of either fruit mixture into the bottom of a glass. Top with milk shake. Repeat with remaining fruit and milk shake. Garnish milk shakes with fresh fruit, and serve immediately.

seedless grapes
2 cups skim milk
3 eggs
3 egg whites
1/4 cup sugar
2 tablespoons sugar
2 teaspoons vanilla extract
1 dash salt

Steps:

  • Scald milk in a large saucepan over medium heat (do not allow milk to boil), set aside.
  • Combine eggs, egg whites, and sugar in a medium bowl, beat with a wire whisk until blended.
  • Gradually stir about one-fourth of hot milk into egg mixture; add to remaining hot milk, stirring constantly.
  • Cook stirring constantly, over low heat until mixture thickens and coats a metal spoon, about 30 minutes.
  • Immediately pour sauce into a large bowl, stir with a wire whisk until cool.
  • Stir in vanilla and salt, cover and chill 2 hours.
  • Serve over fresh fruit.

1/4 cup confectioners' sugar

1 tablespoon gelatin powder
1 cup milk, divided
3 cups whipping cream
1/2 cup sugar
1 teaspoon vanilla
assorted seasonal fruit
mint, for decoration

Steps:

  • In a large bowl, add gelatin to 1/2 cup cold milk and let it soften.
  • In saucepan, combine whipping cream, 1/2 cup milk, sugar and vanilla and bring to a boil. Pour over gelatin mixture and stir until completely dissolved.
  • Fill a sink with cold water and add some ice cubes. Carefully, set the bowl over the very cold water and chill 1/2 hour, stirring ocassionaly, until almost set.
  • Pour mixture into 8 individual 1/2 ramekin dishes and store in the fridge. cover with plastic if making the night before.
  • To serve: Quickly, dip ramekins in warm water to loosen sides. Invert onto individual serving plates, Arrange fruit around panna cotta.
