VA-VA-VOOM VEGGIE CASSEROLE
Va va voom is right. I'm not a big fan of mixed veggies but this recipe changed my mind at the first bite. Every time I make it, I have copies of the recipe ready so that I can hand them out to the many who ask for it.

Steps:
- 1. Mix first five ingredients together and pour into a greased casserole dish.
- 2. Sprinkle crushed Ritz crackers over the top, then pour melted butter over the crackers.
- 3. Bake at 350 degrees for 25 minutes or until bubbly around the edges.
- 4. Note: our family motto is, "if a little cheese is good, a lotta cheese is better," so feel free to add extra cheddar (we like sharp), but seriously, don't overdo it.
VA VOOM VEGGIE BURGERS
I got this recipe when I worked at Colonial Pines Inn, a bed and breakfast in Highlands, N.C. Delicious! Feel free to put in what you like, maybe some chopped mushrooms,wheat germ,seasonings, etc.

Steps:
- Mix ingredients all together.
- Shape into patties.
- Fry on low heat in olive oil, till each side is browned.
- Serve with lettuce and tomato and grilled onions on a bun, with your favorite toppings.
- Enjoy!
