Grab some Granny Smith (or other tart) apples and make this easy iron skillet apple cake. This is a rustic, lumpy, imperfect cake-which is my favorite kind!

1 stick unsalted butter
3/4 c. granulated sugar
4 whole granny smith apples, cored, halved and each half cut into six equal pieces
1 stick butter, softened
2/3 c. granulated sugar
1 1/2 tsp. vanilla extract
2 large eggs
1/2 c. sour cream, room temperature
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1 granny smith apple, peeled, cored and chopped finely
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 375 F.
  • For the apple topping: In a 9 to 10-inch skillet, melt the butter over low heat. Add sugar to the pan and stir around, then place apple slices, cut side down, in the pan. Don't pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter, about 10 minutes.
  • In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Mix in the vanilla and eggs. Add the sour cream and mix well.
  • In a bowl, mix the flour, baking powder, salt, and cinnamon. Stir together then gradually add the flour mixture into the creamed butter mixture until just combined. Gently stir in the chopped apple.
  • Remove the skillet from the heat. Spoon the batter over the top, then spread gently so the batter is evenly distributed. Place on a sheet tray lined with foil and bake for 25 -30 minutes, or until cake is golden brown and bubbly. Allow the cake to sit in skillet for five minutes, then invert onto a serving plate. Don't worry if some of the topping isn't perfect---it'll taste perfect!
  • Serve warm with vanilla ice cream.

3/4 c butter, softened and divided
2 c sugar, divided
3 large granny smith apples , peeled and cut into ½ inch thick slices
1 c chopped pecans, divided
2 large eggs
1 1/2 c all purpose flour
1 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 c milk

Steps:

  • 1. Melt ¼ cup butter in a 10 inch cast iron skillet over medium to medium high heat.
  • 2. Add 1 cup sugar and cook, stirring constantly, for 2 minutes or until sugar is melted and begins to turn golden brown.
  • 3. Add apple slices, and continue to cook, stirring constantly for 5 minutes or until apples have softened and juices are thickened and syrupy.
  • 4. Remove from heat and sprinkle the apple mixture with ½ cups of pecans. Set aside.
  • 5. Beat the remaining ½ cup of butter at medium speed until creamy. Gradually add the remaining sugar, beating until smooth.
  • 6. Add eggs one at a time, beating until just blended with each additions.
  • 7. In another bowl, stir together flour, baking powder, and cinnamon. Add to butter / sugar mixture alternating with milk, beating on low until well blended, beginning and ending with flour mixture.
  • 8. Gently stir in the remaining ½ cup of chopped pecans. Spoon batter evenly over the apple mixture in the skillet.
  • 9. Bake in a preheated 350 degree oven for 30 minutes or until a toothpick in the center comes out clean. Remove from the oven and allow to cool in the skillet for 5 minutes. Invert cake onto a serving plate.
  • 10. This is awesome served warm, topped with ice cream and drizzled with caramel sauce.

1 ½ cups brown sugar, or more to taste
3 tablespoons ground cinnamon, divided
5 medium apples - peeled, cored, and sliced
4 cups all-purpose flour
1 ½ cups unsweetened apple juice
1 ½ cups white sugar
1 cup butter, softened
4 eggs
½ cup milk
1 tablespoon vanilla extract
2 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cover the bottom of a 10x15-inch baking pan with brown sugar and 2 tablespoons cinnamon. Layer apple slices on top.
  • Place flour, apple juice, white sugar, butter, eggs, milk, remaining 1 tablespoon cinnamon, vanilla extract, baking powder, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix until completely smooth, 5 to 10 minutes; the longer you mix, the fluffier the cake will be.
  • Pour batter over apples in the baking pan, making sure they are evenly covered.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool for 20 to 30 minutes. Place a large serving dish over the cake and carefully flip over.

½ cup milk

Steps:

  • Preheat oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.
  • In a bowl, cream together the butter and sugar.
  • Whisk in the eggs, vanilla and milk until fully incorporated.
  • Add the flour, baking powder, salt, and cinnamon. Whisk until combined.
  • For the sauce, melt butter in a saucepan over medium heat, and stir in the brown sugar. Bring to a boil and continue to stir for 30 seconds, or until vigorously bubbling.

  • Bake for 45-55 minutes, or until the cake is done (the top will spring back when gently poked).

  • Place a plate upside down on top of the pan, then invert the pan, flipping the cake onto the plate.

I got two of my Mom's cast-iron skillets. In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

1/3 cup light butter
1/2 cup splenda brown sugar
1 teaspoon ground cinnamon (or use ground apple pie spices)
3 medium green apples, peeled, cored and sliced
1 (18 ounce) box spice cake mix (i use Duncan Hines with less sugar)
1/2 cup light butter, melted
1 cup ligh sour cream
1/3 cup light dark corn syrup
2 eggs (I use 1 cup egg beaters)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 green apple, chopped
1/2 cup pecans, chopped (optional)

Steps:

  • Place your oven rack in the middle of the oven and preheat oven to 350ºF.
  • Prepare the topping, melting the 1/3 cup butter in a 10" cast iron skillet ((2" deep), over low heat.
  • Remove skillet from heat and stir in the brown sugar and ground cinnamon (or apple pie spices) using a fork.
  • Spread this mixture evenly over the bottom of the skillet and arrange the apple slices over the butter/sugar mixture in the skillet.
  • In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
  • Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
  • Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
  • Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
  • Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
  • I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
  • NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.
  • Here is a guide to bake the cake in those pan sizes:

  • Pour butter into an ungreased 9-in. round baking pan; sprinkle with 1/2 cup brown sugar. Arrange apples in a single layer over brown sugar; layer with walnuts and remaining brown sugar., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, salt and cinnamon; add to the creamed mixture alternately with buttermilk and sour cream, beating well after each addition.
