Number Of Ingredients 11

3 1/2 lbs red potatoes
1/4 cup sweet pickle juice, from the jar
3/4 cup mayonnaise
1/3 cup buttermilk
4 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon black pepper
3 hard-boiled eggs
1/2 cup red onion
1/2 cup celery
1/2 cup sweet gherkin

Steps:

  • Cook Potatoes in a largge pot of boiling Salted water until jus tender. (Most people let Potatoes boil to long. Remember, they keep cooking after you stop) approximately 10 minutes.
  • Drain: transfer back to the large pot.
  • Drizzle the pickle juices over potatoes and toss gently. Let cool to room temperature (important).
  • Whisk Mayo, Buttermilk, mustard, sugar, and Black pepper in medium bowl to blend.
  • Pour over potatoes.
  • Add Hard Boiled eggs/chopped, onion/chopped, celery/chopped, and pickles/sliced thinly.
  • Toss gently to blend.
  • Season to taste with salt.
  • Can be made 8 hours ahead.
  • CHILL.
  • Bring to room temp to serve.
  • 6/8 servings

Best with BBQ'd meat, but good in the winter too! My neice got the recipe from her Dad, he likes to dabble with recipes, and passed this one along!

1 seedless cucumber
2 stalks celery
3 -4 radishes
1/2 red onion
2 -3 eggs
4 -5 potatoes
1 red pepper
3 -4 tablespoons Miracle Whip
1 -2 teaspoon mustard
1 dash paprika

Steps:

  • Cook potatoes about halfdone. Hardboil eggs.
  • Cut cucumber in half lenghthwise, and then slice.
  • Slice celery, radish, red pepper, eggs, then finely chop onion.
  • Mix in some Miracle Whip and mustard, enough to lightly coat
  • everything, and sprinkle paprika overtop.
  • Chill until ready to eat.
  • Enjoy!

This is potato salad the old-fashioned way, with eggs, celery and relish. It's really good to serve with chili.

5 potatoes
3 eggs
1 cup chopped celery
½ cup chopped onion
½ cup sweet pickle relish
¼ teaspoon garlic salt
¼ teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
¼ cup mayonnaise

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.
