"UNSTUFFED" GREEN PEPPER SOUP FOR THE CROCK POT



This soup is amazing! It smells and tastes just like stuffed peppers. When cooking, people will think you have stuffed peppers baking in the oven. The addition of V8 adds to the flavor. Next time I make this, I'm going to double the recipe!

1 lb ground round, or turkey, even venison
2 c V8 juice, low sodium
2 c fresh or frozen chopped green peppers
1 c dry instant rice (Minute Rice)
3 c beef broth or stock, low fat
2 can(s) 14.5 oz petite diced tomatoes
1 c fresh or frozen chopped onion
1 c shredded cheddar cheese, optional
1-2 Tbsp Worcestershire sauce
2 tsp garlic powder
1 pinch salt and pepper

Steps:

  • 1. Brown the ground beef or turkey, with onions, until no pink shows. Drain.
  • 2. Put cooked meat & all ingredients -- except rice -- in a large crock pot. Stir until well mixed.
  • 3. Cover and cook on high 4 -5 hours or low for 8-10 hours.
  • 4. Before serving, stir in dry rice, cover again and let sit for 5 minutes. Fluff with a fork. Top with cheese if desired. Makes about eight 1-cup servings.

We love stuffed peppers and had stuffed pepper soup in a restaurant that was very good. This is my version of the soup we had and enjoyed.

1 cup white onion, chopped
1 cup celery, chopped
2 cups green peppers, cut into bite size pieces
2 tablespoons oil
1 lb ground beef
28 ounces canned whole tomatoes, undrained
1 cup v- 8 juice
1/2 cup uncooked rice
6 cups vegetable broth
2 teaspoons brown sugar
1/4 teaspoon cinnamon
2 medium white potatoes, cubed
salt and pepper

Steps:

  • In a large dutch oven over medium heat add the oil, onion, celery, and green peppers.
  • Saute until just tender, stirring frequently.
  • Stir in ground beef to onion mixture and cook approximately 15 minutes or until the meat is browned and no longer pink.
  • Add uncooked rice and mix thoroughly.
  • Slowly stir in tomatoes, V-8 juice, 6 cups vegetable broth and diced potatoes.
  • Season soup with brown sugar, cinnamon, salt and pepper and cover with lid.
  • Let soup simmer slowly for one hour or until potatoes are fork tender.
  • Ladle soup into bowls and serve with fresh baked bread or hard rolls.

3 large green bell peppers, chopped
1 large onion, chopped
2 cans fat free beef broth
2 cans tomato soup
2 can diced petite tomatoes, undrained
2 cans (8 oz. each) mushrooms
1 1/2 cups cooked rice

Steps:

  • In large pan brown beef, green peppers, and onion; drain.
  • Stir into meat mixture, beef broth, tomato soup, tomatoes, and mushrooms, bring to boil, reduce heat cover and simmer for 30 min, stirring occasionally.
  • Cook rice, add to soup and heat through.

  • Put all ingredients except rice into crockpot.
  • Stir until well mixed & cover.
