Yield 2 1/4 cups mixed nuts

Number Of Ingredients 6

2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
2 teaspoons Maldon or other sea salt
1 tablespoon unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven until light golden brown, about 10 minutes.
  • In a large bowl, combine the rosemary, cayenne, sugar, salt and melted butter.
  • Thoroughly toss the toasted nuts in the spiced butter and serve warm. And once you eat these, you will never want to stop.

At first glance these may look like normal nuts, but when you take your first bite you realize they are anything but normal! I'm a big fan of rosemary and spice, so these nuts were a real winner for me. When Lindsey says they're addicting she's not kidding!

Number Of Ingredients 6

2 c mixed nuts
1 Tbsp butter
2 Tbsp fresh rosemary chopped
1/2 tsp cayenne pepper
2 tsp brown sugar
1 tsp kosher salt (if using salted nuts you can omit this)

Steps:

  • 1. Pre heat oven to 350 degrees.
  • 2. Line a baking sheet with aluminum foil. Toast nuts on baking sheet until warm, lightly golden and fragrant, about 5 min.
  • 3. In a small sauce pan on med. to low heat combine butter, rosemary, cayenne pepper and brown sugar and stir until melted and thoroughly combine.
  • 4. In a large bowl toss warm nuts with hot butter mixture. Make sure to do this right away while everything is hot or it wont stick properly. Season with salt if using and toss to coat thoroughly.
  • 5. Serve warm.

1 1/2 cups walnuts, unsalted

1 tsp coarse salt

  • Preheat oven to 350. On a baking sheet spread nuts and toast in middle of oven until golden, about 10 minutes. While nuts are toasting, in a large bowl, toss together remaining ingredients. Toss nuts with rosemary mixture and serve warm. Makes about 4 cups.

1 pound unsalted, assorted nuts - pecans, walnuts, cashews, whole almonds, peanuts are all good choices
2 tablespoons coarsely chopped fresh rosemary (from at least two sprigs)
1/2 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons coarse salt
1 tablespoon butter, melted (vegan shortening works just as well)

Steps:

  • Preheat oven to 350 degrees. Spread nuts on a cookie sheet. Toast in the oven until they become light golden brown, about 10 minutes. Meanwhile, in a large bowl, combine the rosemary, cayenne, brown sugar and salt. Melt the butter, in a small saucepan over the stove, or using a dish in a microwave oven. Place warmed nuts into a large mixing bowl, and pour butter on top; you will hear a crackling noise. Using a wooden spoon or rubber spatula, coat nuts with butter, then add spice mixture, stirring and tossing nuts for even coverage of seasonings. Serve warm or at room temperature. These can be made in advance; will keep for about two weeks if stored in an airtight container.
