3 cups deli-roasted chicken, chopped
2 cups celery, finely chopped
1 cup (4 ounces) cheddar cheese, grated
1/2 cup almonds, slivered
1/2 cup light sour cream
1/2 cup light mayonnaise
1 (10 3/4 ounce) can reduced-sodium cream of chicken soup
1 (4 ounce) can water chestnuts, drained and chopped
1 1/2 cups French fried onion rings

Steps:

  • Stir together first 8 ingredients in a large bowl. Spoon into a lightly greased 11- x 7-inch baking dish. Bake at 350° for 40 minutes; sprinkle onion rings evenly over top. Bake 5 more minutes or until bubbly around edges. Let stand 10 minutes before serving.

1 cup cheddar cheese, grated
1/2 cup light sour cream
1 (10 3/4 ounce) can cream of chicken soup
2 cups celery, chopped
1/2 cup almonds, silvered
1/2 cup light mayonnaise
1 (14 ounce) can water chestnuts, drained and chopped
1 1/2 cups French fried onion rings

Steps:

  • Stir together first 8 ingredients.
  • Spoon into greased 9x13 baking dish.
  • Bake at 350F for 40 minutes.
  • Sprinkle 1 1/2 cups french fried onion rings over top and bake 5 more minutes or until bubbly around edges.

How to make Unforgettable Chicken Casserole

3 cups chopped cooked chicken
2 cups finely chopped celery
1 cup (4 ounces) shredded Cheddar cheese
1 cup sour cream
1 cup mayonnaise
1 (4-ounce) can water chestnuts, drained and chopped
1 (10-¾-ounce) can cream of chicken soup
½ cup slivered almonds
1 (6-ounce) can French-fried onion rings

Steps:

  • Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • In a large bowl, stir together chicken, celery, cheese, sour cream, mayonnaise, water chestnuts, soup, and almonds. Spoon into prepared baking dish.
  • Bake, uncovered, for 30 minutes. Sprinkle onion rings evenly over top and bake 5 more minutes, or until bubbly around edges. Let stand 5 to 10 minutes before serving........OR
  • To make it EVEN BETTER, saute a large onion with celery in 2 T butter. When soft, add cheese (may use Velveeta or cheese whiz or Campbell's Cheddar Cheese soup-all work well) and Cream of Chicken soup. Cook over heat, stirring constantly until smooth. Add all other ingredients. Make a box of StoveTop Stuffing as directed. Place a bed of the prepared stuffing in the bottom of the pan, making a crust. Pour the chicken mixture over the top. Cook as directed above, topping with the onion rings for the last 5 minutes of cooking. I sometimes mix 1/2 the can of onion rings in the chicken mixture and reserve. The other 1/2 for the top. this is a little more work but makes a big difference
  • in flavor, especially in adding the onion. In cooking the onion and celery, there aren't
