Not your typical fruit cake! We eat this one down South (Florida) and Granmama finally let me have the recipe. No baking, no aging and none of that "whatsit?" fruit!

Number Of Ingredients 6

1 lb graham cracker
1 lb raisins
1/2 lb pecans
1 (16 ounce) jar maraschino cherries
24 big marshmallows
1 (14 ounce) can condensed milk

Steps:

  • Crush the graham crackers into fine crumbs.
  • Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
  • Chop the nuts; drain and cut cherries in half (if they are whole).
  • Melt marshmallows in milk.
  • Mix all ingredients together.
  • Pack into regular sized loaf pan.
  • Refrigerated overnight and cut with a hot knife.
  • Coconut is an optional ingredient.
  • Cook time is refrigeration time.

Number Of Ingredients 6

1 cup of chopped pecans
1 cup of chopped walnuts
1 cup chopped raisins
1 (4oz) jar of maraschino cherries-drained and chopped
1 (14 oz )can sweetened condensed
1 (12 oz)package vanilla wafers -crushed

Steps:

  • 1. In a medium bowl ,stir together the pecans ,raisins ,walnuts,cherries,condensed milk and vanilla wafers..Dough will be thick,I use my hands
  • 2. Form dough,in to a log shape,(about the size of a pecan log) then wrap very well in wrap.Wrap in two or three layers of plastric wrap to make as air tight as possible.Allow to stay in the refrigertor for at least 5-7 day,s......I have seen my Mom make them in a round shape,but I do the log's....
  • 3. Personal Note ::::::Use a good vanilla wafer .I use the Nabisco brand.The condensed milk ,i often use the Wal-Mart brand .

1 large bag marshmallows
1 T butter
1 small or medium jar of cherries, chopped (save juice)
4 cups chopped pecans
1 package chopped dates
3/4 cup raisins
Grated orange peel
1 box Graham Crackers, crushed (or use box of crumbs)

Steps:

  • Melt marshmallows in top of a double boiler with butter and 3 T of reserved cherry juice. Stir as it melts. In large mixing bowl, put pecans, dates, raisins, cherries, orange peel and Graham Cracker crumbs. Pour melted marshmallow mixture over and mix with hands until it sticks together. Place in container and firmly press together. Cover and keep in refrigerator.

If you don't like traditional fruitcake, this one is a fabulous alternative. It's messy to mix, but it's fun to lick the excess off of fingers after all is done.

1 lb walnuts, chopped
1 box raisins
1 box dates, chopped
1 box candied cherry, chopped
1 box candied pineapple, chopped
1 box vanilla wafer, crushed
1 box graham cracker, crushed
1 bag marshmallows
1 can Carnation instant milk
1/2 cup oleo
1 bag coconut (optional)

Steps:

  • Mix milk, oleo& marshmallows.
  • Cook to dissolve.
  • Add to crushed wafers& graham crackers.
  • Add all other ingredients.
  • Stir or mix with buttered hands.
  • Press into containers lined with wax paper.
  • Wrap in foil& chill.
  • (Can use decorative aluminum mini-loaf pans with lids).
  • (Can freeze or refrigerate).
