My Easy Meatloaf is a kid-friendly classic, easy to pull together and sure to be a hit. You'll love this sweetly saucy, perfectly seasoned baked meatloaf!

2 pounds ground beef
½ cup plain breadcrumbs
½ cup diced onion
1 large egg, (lightly beaten)
1 cup barbecue sauce, (divided)
2 tablespoons Worcestershire sauce
1 tablespoon minced garlic
3 tablespoons Italian Seasoning
1 teaspoon kosher salt
1 teaspoon ground black pepper
chopped fresh parsley, (for garnish)

Steps:

  • Preheat the oven to 350˚F.
  • Line a loaf pan with foil and lightly grease both pan and foil. Leave plenty of overlap to make it easier to remove the meatloaf after cooking.
  • In a large bowl, mix ground beef, breadcrumbs, onion, egg, ½-cup barbecue sauce, Worcestershire sauce, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but do not overmix or the meatloaf will be tough.
  • Shape the beef mixture into a loaf in the prepared pan. Spread the remaining barbecue sauce over the top.
  • Bake for 50 minutes, or until the internal temperature registers 165˚F. Let the meatloaf stand for 5 to 10 minutes before cutting.
  • Garnish with parsley and serve.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

This is my all time favorite recipe for meatloaf. You can substitute the ketchup for barbecue sauce.

1 pound ground beef
¾ cup cooked rice
1 tablespoon brown sugar
¾ cup chopped onion
1 tablespoon ketchup
½ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

3 tablespoons butter
1 tablespoon EVOO, plus more for drizzling
1 tablespoon chopped fresh thyme
2 to 3 small stalks celery with leafy tops, finely chopped
1 small Honeycrisp or McIntosh apple, peeled and chopped
1 small onion, finely chopped
Kosher salt and freshly ground pepper
1 1/2 cups cubed seasoned cornbread or traditional stuffing cubes
1 to 1 1/2 cups chicken stock
1/3 cup dried sweetened cranberries
2 pounds ground turkey (mix of white and dark meat)
1 cup shredded or crumbled extra-sharp white Cheddar
1 tablespoon poultry seasoning
1 large egg
Cider Gravy, optional, recipe follows
Whole berry cranberry sauce (homemade or store-bought), for serving
3 tablespoons butter
2 rounded tablespoons all-purpose flour
2 cups chicken or turkey stock
1/2 cup cloudy apple cider
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
1 egg yolk, optional
Finely chopped fresh flat-leaf parsley, optional, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Heat the butter and EVOO in a large skillet over medium heat. Add the thyme, celery, apples, onions, and salt and pepper to taste and cook until tender, 7 to 8 minutes. Transfer the mixture to a bowl and let cool. Pulse the stuffing cubes in a food processor until crumbs form, then transfer to a bowl and moisten with the chicken stock to soften. Cover the cranberries with hot water in a bowl and let soften, then drain. Put the turkey in a large bowl and sprinkle with salt and pepper. Add the stuffing crumbs, apple mixture, cranberries, cheese, poultry seasoning and egg and mix gently to combine. On a parchment-lined baking sheet, form the turkey mixture into a loaf that is 10 inches long and 4 inches high. Drizzle with EVOO and bake until golden and cooked through, 50 to 60 minutes. Slice the meatloaf and serve with Cider Gravy and cranberry sauce. Cook's Notes: Steamed green beans and mashed sweet potatoes are great alongside this meatloaf. For the sweet potatoes, boil 1 peeled and cubed potato per person until tender, then mash with chicken stock, salt, pepper, nutmeg and maple syrup to taste. The meatloaf can be covered and refrigerated for a make-ahead meal. Reheat in a moderate oven or slice and heat in a pan with chicken stock. The gravy, without the egg yolk, can be made ahead of time and refrigerated. Reheat over medium heat and add the egg yolk as directed.
  • Heat the butter in a saucepan over medium heat. Add the flour and cook, whisking, for 2 minutes. Whisk in the stock, cider and Worcestershire sauce. Season with salt and lots of pepper. Simmer until the gravy is thick enough to coat the back of a spoon. Lightly beat the egg yolk, if using, in a medium bowl. Slowly pour in some of the gravy, whisking constantly to temper the yolk. Whisk in the remaining gravy. Transfer to a gravy boat or serving dish and garnish with parsley, if desired.

UNCLE RAY'S MEATLOAF

My Uncle Ray was a great guy. Hard working, hard playing and liked to cook for the family... This was loved by everyone and feeds a lot of folks. It can be cut in half just fine.

4 lb ground beef or meat loaf mix of beef, pork and veal
2 large onions chopped
1 pkg envelope onion mix (the kind you use for making a dip)
3 eggs
1 c seasoned bread crumbs
1 or 2 green sweet peppers chopped
1 pkg brown gravy mix

Steps:

  • 1. Mix together the first 6 ingredients until evenly mixed, don't over do it as it will make the ground beef tough. Shape like a loaf of bread and place on a large baking dish or cookie sheet. I like to use foil that is sprayed with Pam, and leave the sides of the loaf uncovered and not touching the sides of a dish.
  • 2. Mix the gravy according to the directions on the package. Punch a hole in the center of the loaf and add the gravy in the hole. Cover lightly with foil and bake at 350 degrees for 1 1/2 to 2 hours. For the last 1/2 hour uncover the top and let brown but not to crispy. (unless you like crispy.)
  • 3. I like to serve this with sour cream mash potatoes, stewed tomatoes and a salad, Enjoy!

STUFFING-MIX MEATLOAF

1 (6 ounce) box uncle ben's stuff and such country style seasoned stuffing mix
2 teaspoons Worcestershire sauce
1 egg, lightly beaten
1/2 cup milk
1 1/2 lbs ground beef
1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon mustard

Steps:

  • Combine contents of crumb pouch and milk.
  • Add egg Worcestershire sauce and contents of seasoning pouch; mix well.
  • Add ground beef and mix until combined.
  • Press into loaf pan.
  • Blend ketchup brown sugar and mustard.
  • Brush sauce over meatloaf.
  • Bake at 350°F for 45 minutes.
