INSTANT POT® FRESH STEAMED OYSTERS WITH SPICY BUTTER
I have baked, grilled, steamed on the stovetop, and even air fried oysters, but steaming in the Instant Pot® is hands down the best method. They are easy to open up and tender without any rubbery texture whatsoever.

Steps:
- Pour water into a multi-functional pressure cooker (such as Instant Pot®) and set trivet inside. Place oysters on the trivet. Close and lock the lid. Select Steam function according to manufacturer's instructions; set timer for 2 minutes. Allow 15 minutes for pressure to build.
- Meanwhile, stir hot sauce and parsley into the melted butter until well combined.
- Release pressure using quick release according to manufacture's directions, 3 to 5 minutes.
- Carefully open the oysters using a spoon; set on a serving plate. Spoon butter over the top.

- In a large skillet over medium heat, melt the butter. Add the bread crumbs and sauté until they are just a tiny bit golden, about 1 minute or so. Stir in the watercress, parsley, celery and celery leaves, scallions, and garlic. Cook until fragrant, 1 minute. Stir in the Pernod and let it cook off for another minute. Remove from the heat and stir in the capers and a pinch of salt (not too much, those oysters are salty too).
- Preheat the broiler. Fill a baking pan (or two) with a 1/2-inch layer of coarse or rock salt. Lay the oysters on top of the salt. Spoon a little of the sauce mixture on top of the oysters. Broil until just golden, about 2 minutes. Serve hot.

UNCLE BILL'S CRISPY HALIBUT STEAKS
A very easy recipe to make and it tastes so good. The halibut steaks can be fried or baked. I find baking is the best.

Steps:
- Rinse halibut steaks in cold water, then pat dry on paper towels.
- In a bowl, whisk eggs, add mustard and whisk until blended.
- In a shallow dish, combine garlic powder, dill weed, crushed cornflakes, parmesan cheese, and Italian seasonings; mix well to blend.
- Dip halibut steaks in egg mixture.
- Now place halibut steaks individually in dry mixture and coal both sides well.
- BAKING.
- Preheat oven to 450°F.
- In a 13 x 9 inch oven-proof casserole dish add olive oil and butter.
- Place dish in heated oven until butter melts.
- Place coated steaks in casserole dish in a single layer.
- Bake in preheated 450 F oven for 5 minutes, then turn over and continue to bake for another 5 minutes or until fish flakes when tested with a fork.
- DO NOT OVERCOOK halibut steaks.
- FRYING.
- In a large frying pan, melt butter with olive oil on medium high heat.
- Add steaks and fry for 5 minutes on each side or until fish flakes when tested with a fork.
- DO NOT OVERCOOK halibut steaks.
- Serve with with a nice homemade tartar sauce.
