BILL CLINTON'S OATMEAL COOKIES

I don't know where Bill got his cookie recipe from, but they look vaguely familiar. These are straightforward good cookies. They have a slight twist in that the oats and the nuts are toasted before they are made into cookies. The flavor is very good.

Number Of Ingredients 9

2 1/2 cups quick-cooking oats (or old-fashioned works)
1 cup walnuts, chopped
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups brown sugar, packed
1 cup unsalted butter, at room temperature
1 teaspoon vanilla extract
1 egg

Steps:

  • Heat oven to 350°F.
  • Spread oats and walnuts in ungreased 15-1/2 x 10-1/2 x 1-inch baking pan. Bake 15-20 minutes, stirring occasionally, until toasted and light brown; cool.
  • In small bowl, stir together flour, baking soda and salt. Beat together brown sugar, butter or margarine, vanilla and egg in large bowl. Stir in oat mixture and then flour mixture.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased baking sheets.
  • Bake at 350°F for 8 to 10 minutes or until golden brown. Cool on pans for 3 minutes; remove from cookie sheet. Cool on wire rack.

OLD FASHIONED OATMEAL COOKIES

This is the best oatmeal cookie recipe I've found yet! People are always asking me for the recipe! They are yummy... especially with a tall glass of milk.

1/2 cup butter
1/2 cup shortening
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 1/4 cups sifted all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon allspice
3 cups old fashioned oats
1 cup raisins

Steps:

  • In a large bowl, combine butter, shortening and sugars.
  • Add eggs and vanilla and beat until fluffy.
  • Combine flour, salt, baking soda, cinnamon, cloves and allspice.
  • Add to creamed mixture; mix to blend.
  • Stir in oatmeal and raisins.
  • Drop a tablespoon of dough onto cookie sheet about 2-inches apart. Cookies will spread!
  • Bake at 350°F for 12-15 minutes.
  • Cool for about 5 minutes on cookie sheet, then remove to a cooling rack.

My mother gave me this recipe over 25 years ago. I thought I had better post it before I lose the worn out piece of paper it's written on.

1/2 cup butter
1/2 cup lard
2 cups brown sugar
1 teaspoon vanilla
2 beaten eggs
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups rolled oats
1 1/2 cups coconut

Steps:

  • In one bowl cream butter, lard, and sugar.
  • Add beaten eggs and vanilla.
  • In another bowl add sifted flour and other dry ingredients.
  • Gradually add the dry ingredients to the creamed mixture.
  • Roll into small ball, and flatten with a fork on a ungreased baking sheet.
  • Bake at 375 F for 10- 15 minute.

1 cup packed light-brown sugar
1 cup granulated sugar
1/2 pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
3 cups rolled oats
1 cup plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup wheat germ
12 ounces good-quality chocolate, chopped into chunks, or 1 1/2 cups golden raisins, or 10 ounces toffee pieces

Steps:

  • Heat oven to 350 degrees. Combine the brown sugar, granulated sugar, and butter in an electric mixer fitted with the paddle attachment. Starting with the mixer on low speed and increasing until it is on medium, beat until the mixture is creamy and fluffy, about 5 minutes. Add the eggs and the vanilla extract, then scrape the sides of the bowl with a rubber spatula, and mix to combine.
  • Combine the rolled oats, flour, baking soda, baking powder, and wheat germ in a large bowl, and stir to combine. Add the dry mixture to the butter mixture, then mix on low speed just to combine, 10 to 15 seconds. Remove the bowl from mixer stand, and stir in your choice of chocolate chunks, golden raisins, or toffee pieces.
  • Line the baking pans with parchment paper. Use a large (2 1/2 ounce) or small (1 1/4 ounce) ice-cream scoop to form balls of dough. Place the balls of dough about 4 inches apart on baking pans. Bake until golden and just set, about 18 minutes for large cookies and 14 minutes for small cookies. Remove from oven; let cool on pan 4 to 5 minutes before transferring to a cooling rack.

I have been trying to make buns similar to the SUBWAY buns and after checking with several other people and taking their recipes and making some changes, I came up with this recipe that is light, tasty and so good.

1 1/2 cups water
1/2 cup liquid honey
1/3 cup butter
5 1/2 cups all-purpose flour, divided
1/2 cup quick-cooking oats
2 teaspoons salt
2 teaspoons active dry yeast
2 large eggs
1 teaspoon cold water
1 large egg white
1/2 cup quick-cooking oats

Steps:

  • In a medium saucepan, combine water, honey and butter.
  • Heat over low heat until liquids are warm (120 F to 130 F.) DO NOT BOIL.
  • In a large bowl or a bread mixing machine, add 5 cups of flour, cooking oats, salt and yeast; mix to blend.
  • Gradually mix in warm liquids and mix until liquids are absorbed.
  • Add eggs and mix for about 3 minutes until all ingredients are well mixed together.
  • Remove dough onto a lightly floured surface and knead in the remaining 1/2 cup of flour.
  • Knead for about 5 minutes until dough is nice and smooth.
  • Roll dough into a ball and place in a lightly greased bowl, turning to grease the top.
  • Cover and let rise in a warm area until dough is doubled in bulk, about 1 hour.
  • Punch dough down and divide into 8 equal pieces.
  • Roll dough out into the shape of a log, about 12 inches long and about 1 1/4 inches round.
  • Place dough log buns on 2 large cookie sheets lined with parchment paper, (4 on each sheet)and spaced.
  • Cover and let rise in a warm area until doubled in size, about 1 hour.
  • Preheat oven to 375°F.
  • In a small bowl, combine cold water and egg white and whisk until frothy.
  • Brush tops of loaves with egg mixture.
  • Sprinkle quick cooking oats over the top surface of the loaves.
  • Bake in preheated 375 F oven for 20 to 25 minutes or until top is lightly browned and the bread sounds hollow when tapped.
  • Cool buns on a wire rack.
  • You are now ready to make your favorite Subway sandwich.
  • You may also make 2 - 4 1/2 x 8 1/2 inch loaves.
  • Bake at 375 F for 35 to 40 minutes or until done.

1 cup packed brown sugar

3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
