I was looking for a low calorie healthy bran muffin recipe that tasted like a traditional bran muffin, and finally came up with a sort of "Frankenstein monster" conglomeration of a basic recipe with several substitutions. They turned out great and at around 100 calories per muffin they have become my favorite. NOTE: You can use any combination of oat bran and wheat bran to make the 1 1/2 cups bran. Oat bran has its own benefits, but adds more calories.

Number Of Ingredients 13

1 1/2 cups wheat bran
1 cup whole wheat flour
1 cup skim milk (minus 1 tablespoon)
1 tablespoon vinegar (added to skim milk above to make soured milk)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/3 cup Splenda granular
1/3 cup molasses
1/3 cup unsweetened applesauce
1 egg
1/4 cup raisins (optional)

Steps:

  • Preheat oven to 375 degrees F. Spray muffin cups with Pam (or equivalent).
  • Add skim milk to vinegar to make 1 cup soured milk and set aside for 5 minutes.
  • Add soured milk to bran; let stand for 10 minutes.
  • Mix together applesauce, egg, Splenda, molasses and vanilla and then add to milk/bran mixture.
  • Mix together flour, baking soda, baking powder and salt.
  • Add flour mixture to bran/milk mixture, and stir just until blended.
  • Fold in raisins (if desired) and spoon batter into muffin tins.
  • Bake for 17 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool in pan for 5 minutes, then remove from pan and enjoy!

These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.

1 cup white flour or 1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups all-bran cereal (all bran is my preference)
1 1/4 cups skim milk
1/3 cup brown sugar
1 egg
1/2 cup applesauce

Steps:

  • Preheat oven to 400 degrees f.
  • In a large bowl mix together flour, baking soda and cinnamon. Set aside.
  • In another bowl mix together bran cereal, brown sugar and milk and let sit for 5 minute After you've let the cereal milk sugar mixture set
  • add the applesauce and the egg, mix throughly.
  • Mix the wet ingredients into dry, batter will be lumpy.
  • Spoon into butter sprayed muffin pan.
  • bake for 8 to 12 minute.

1 1/2 cups whole wheat flour
1 1/2 cups unprocessed millers natural bran
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 cup golden raisin
3 egg whites
1/2 cup buttermilk
1/2 cup water
1 small ripe banana, mashed (1/2 cup)
1 teaspoon vanilla extract
1/2 teaspoon banana extract

Steps:

  • Preheat oven to 400 degrees. Spray muffin tins with Pam and set aside.
  • Mix all dry ingredients, including raisins, in a large bowl.
  • Blend egg whites, buttermilk, water, mashed banana and extracts in a medium bowl.
  • Add wet ingredients to dry and stir until thoroughly combined. Fill each muffin tin 1/2 full.
  • Bake 15 minutes. Let cool on a wire rack. Freeze leftovers and defrost as needed.

1 1/2 c wheat bran
1 c non-fat milk
1 egg
1 c applesauce, unsweetened or large mashed banana
2/3 c dark brown sugar
1 tsp pure vanilla extract
1 c whole wheat flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 Tbsp cinnamon
1 c blueberries or raisins or any fruit you like

Steps:

  • 1. Preheat oven to 375 and line muffin pan with paper muffin liners.
  • 2. Combine wheat bran and milk and let sit for 10 minutes. If using raisins, put them in warm water to soak. It makes them plump up.
  • 3. Combine applesauce, brown sugar, egg and vanilla extract. Mix well.
  • 4. Combine wheat bran mixture with applesauce mixture.
  • 5. Sift dry ingredients (flour, baking soda, baking powder, salt & cinnamon).
  • 6. Combine everything together until blended. Add fruit.
  • 7. Scoop mixture evenly into muffin cups. Bake for 20 minutes or until muffins springs back from light touch.
  • 8. Remove muffins from muffin pan to cooling rack for about 5 minutes. Unless eating right away, store warm (not hot) muffins in a plastic container and put in the fridge.
  • 9. 30 seconds in the microwave make them perfect the next morning (if there are any left the next morning) Enjoy!

2 1/2 cups Raisin Bran cereal
1 cup unsweetened applesauce
1 egg
1/4 cup water
1 cup whole wheat flour
2/3 cup packed brown sugar

Steps:

  • Preheate oven to 400°F
  • Spray 12 (2.5 inch) muffin cups with nonstick spray or use paper muffin cups.

  • Beat egg whites until firm peaks form and set aside.

  • Add bran and raisins and stir until moistened.
  • Fold in beaten egg whites.

  • In combine vinegar and milk with bran. Let stand 5 minutes.
  • Add remining ingredients to bran mixture in order given. Beat with spoon until mixd. Pour into well in flour mixture and stir to moisten. Batter will be lumpy. Fill greased* muffin cups 3/4 full. Bake at 375 for 20-25 minutes. Let stand 5 minutes. Remove from pan.
  • *there's not a lot of oil in these and they will stick if the cups are not greased/sprayed with non-stick spray.
