5 tablespoons extra virgin olive oil
1 large onion, diced
1 1/2 lbs ground turkey
kosher salt
ground black pepper
2 cups ketchup
1/4 cup yellow mustard
1 tablespoon brown sugar
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper
1 tablespoon red wine vinegar

Steps:

  • Heat oil in a large skillet until beginning to smoke. Add onions and saute until onions begin to brown, 5-8 minutes. Add turkey, season with salt and pepper, and saute, breaking meat up into small clumps, until pinkness is gone.
  • Add ketchup, mustard, brown sugar, tomato paste, cayenne pepper, and more salt and pepper. Stir until well combined. Simmer 10-12 minutes.
  • Add vinegar and stir in just before serving. Serve with warmed soft buns (Parker House or hamburger buns).

1 tablespoon extra virgin olive oil
1 large onion, diced
1 1/2 lbs lean ground turkey
kosher salt & freshly ground black pepper
2 cups ketchup
1/4 cup yellow mustard
1/4 teaspoon cayenne pepper
1 tablespoon brown sugar
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
5 whole wheat hamburger buns

Steps:

  • Set a heavy-based pot over medium-high heat and add a 3-count of olive oil.
  • Add onions and sauté for 2 to 3 minutes until translucent.
  • Add ground turkey, season well with salt and pepper and brown well all over, breaking it up with a wooden spoon-about 7 to 10 minutes.
  • Add ketchup, mustard, cayenne, brown sugar and tomato paste. Reduce heat and simmer for 10 to 12 minutes.
  • Finish with a splash of apple cider vinegar and season it once more before serving on toasted whole wheat hamburger buns.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.

1/2 cup chopped walnuts
1 1/2 lbs butternut squash (1 medium squash)
4 ounces fresh goat cheese, at room temperature
1 1/2 tablespoons honey
2 teaspoons apple cider vinegar
1/2 lemon, juice of
3 tablespoons extra virgin olive oil
kosher salt, to taste
ground black pepper, to taste
1/2 cup dried sweetened cranberries
2 tablespoons chopped fresh parsley

Steps:

  • Over medium-low heat, in a dry pan, toast walnuts, shaking pan frequently. Remove nuts to a plate as soon as they begin to smell nutty.
  • Peel squash with a potato peeler or knife. Shred finely using a box grater, mandoline or food processor.
  • In a bowl, whisk together goat cheese, honey, cider vinegar and lemon juice. When smooth, drizzle in olive oil, whisking constantly. Season with salt and pepper.
  • Toss squash, walnuts, cranberries and parsley in dressing until fully coated. Cover tightly and refrigerate at least 1 hour before serving.
