This is a family favorite at my house. It is honestly the best brownies you will ever eat!

1 (19.8 ounce) package brownie mix
½ cup vegetable oil
¼ cup water
2 eggs
1 (10.5 ounce) package miniature marshmallows
2 cups semisweet chocolate chips
1 cup peanut butter
1 tablespoon butter
1 ½ cups crispy rice cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix brownie mix, oil, water, and eggs in a large bowl until smooth; spread into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 28 to 30 minutes. Sprinkle marshmallows over brownie and continue baking until slightly melted, about 3 minutes more. Remove from oven and cool completely.
  • Heat chocolate chips, peanut butter, and butter in a saucepan over low heat; cook and stir until smooth. Remove from heat and stir in rice cereal. Spread over cooled brownies. Refrigerate until firm; slice brownies to serve.

These bars are seriously ridiculous because the are easy and SO rich. When I bring them for co-workers, they go biserk. Kids love them and grown men have been reduced to nothing but silence and eye rolling. Starts with a plain boxed brownie mix.

1 (20 ounce) box brownie mix
1 (10 3/4 ounce) bag mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1 cup peanut butter
1 tablespoon butter
2 cups crisp rice cereal

Steps:

  • Preheat oven to 350 degrees F.
  • Grease the bottom of a 9" x 13" baking dish.
  • Prepare and bake the brownies according to box directions.
  • Remove from oven and immediately sprinkle with the mini marshmallows. Return to oven for another 3 minutes or until marshmallows just start to puff up.
  • Remove from oven and set aside, allow to cool off a little bit.
  • Place chocolate chips, peanut butter and butter in medium saucepan. Melt over low heat, stirring constantly to avoid burning.
  • Remove from heat and add the crispie cereal, mix well.
  • Drop spoonfulls of chocolate crispie mix over the marshmallows and spread across to cover the top.
  • Allow to cool completely before cutting into bars.
  • Might want to refrigerate if it's warm in the house.

1 (18 1/4 ounce) package chocolate cake mix
1/3 cup vegetable oil
1 egg
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips, melted
1/2 cup peanut butter
1 teaspoon vanilla

Steps:

  • In a bowl, combine the cake mix, oil and egg until crumbly. Set aside 1 cup for topping.
  • Firmly press remaining mixture into a greased 13" x 9" baking pan; set aside.
  • In a bowl, combine the milk, chocolate, peanut butter and vanilla until smooth. Spread over crust.
  • Sprinkle with reserved crumb mixture.
  • Bake at 350 for 25-30 minutes or until brownies pull away from the pan.
  • Cool on a wire rack. Cut into 24 bars.
  • Note: You can use 3/4 cup of peanut butter for more peanut butter flavor or try adding peanut butter chips to the batter.
  • For a finer topping I put the 1 cup of reserved cake mix toping in my food processer for a few seconds before sprinkling on the top of the batter.
