Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Season beaten eggs with pepper; pour into baking dish. In a large bowl, combine soup, sour cream, hash browns, ham, onion and cheese. Mix thoroughly and pour over eggs.
- Bake uncovered for 30 minutes. Remove and drizzle butter over top of casserole. Return to oven and bake for an additional 15 minutes, until golden.

- Heat oven to 350 F. Lightly grease a 9x13-inch baking dish. -- In a large skillet heat olive oil over medium-high heat. Add the onion and bell pepper and saute for 4-5 minutes until softened. Remove to a large bowl. -- Add the bacon and sausage and cook until the mixture is browned and crispy. Drain the mixture to remove the fat. -- In the large bowl with the onion/bell pepper mixture add the eggs, hash browns, cheddar cheese, Jarlsberg cheese, cottage cheese and sour cream. Mix until well combined. -- Stir in the bacon/sausage mixture. -- Scoop the mixture into the baking dish and bake for 40 minutes until golden on top and the casserole is set. Let stand for 10 minutes before serving. -- Top the casserole with some chopped fresh chives.

- 1. Mix up the water and gravy mix and start it cooking, making sure to keep stirring it to prevent lumps or scorching.
- 2. You can deep fry the hash browns in oil until golden brown (I did this once and it turned out really well). Or in a skillet, add some butter and brown the hash browns really well. You have to cook the hash browns a little at the time to get an even browning. You could also do this in a large baking pan (you would have to just stir them to get them evenly browned).
- 3. Scramble cook the sausage. Set it aside in a strainer, inside a bowl if possible, to strain all the grease off the sausage.
- 4. Cook the bacon. Crumble it on a paper towel to absorb all the grease.
- 5. Cook the scrambled eggs and set them aside.
- 6. In a large deep dish baking pan, (I use the disposable foil pans for lasagna, works great and makes for quick and easy clean up), layer the hash browns, sprinkle a little salt and pepper to taste.
- 7. Sprinkle a fine layer of cheese on top of the hash browns.
- 8. Then a layer with half the scrambled eggs, sausage, and bacon. Top that with half of the gravy.
- 9. Repeat layers and top the gravy with a layer of cheese.
- 10. Place the casserole in the oven for about 20 minutes to melt the cheese and to bring everything together. Remove from oven and serve warm with your favorite toast, biscuit or bread.
- 11. Or you could cover the casserole and place it in the refrigerator till the next morning. Place in a 350 degree oven for 30 minutes to warm it up and melt the cheese.
