Black Bean and Rice Soup is made with black beans, celery, onions, vegetable stock, and steamed rice. Simple, flavorful and very filling! Plus, it's a convenient and inexpensive meal when you need one. Perfect for meatless meals!

2 cans (15 ounces) organic black beans- rinsed
2 cups vegetable broth or chicken stock
2 cups of water
1/2 tsp. salt
1/8 tsp. cayenne pepper
1 medium onion - peeled, chopped
2 celery stalks- chopped
3 Tbsp. olive oil
1 cup steamed rice
grated Parmesan cheese, at table

Steps:

  • In a large soup pot, heat olive oil and add the onion and celery and sauté until the onions and celery become soft and translucent about 3 to 5 minutes. Add the stock, water, salt, cayenne pepper, and black beans.
  • Bring soup to a low boil. Lower the heat and simmer for 15 minutes.
  • In the meantime, prepare the rice and follow the directions of the package to steam the rice.
  • Finally, add the cooked rice into the bean soup and stir until well combined for about 2 minutes, or until heated through. Turn off the heat.
  • Taste the soup and season with salt and pepper to taste.
  • Serve with some grated Parmigiano cheese on top. Serve warm.
  • Serves 6 to 8

30 ounces black beans, undrained, divided (two 15 ounce cans)
3 cups water
1/2 cup onion, chopped
2/3 ounce Good Seasonings Italian salad dressing mix (one envelope)
1 1/2 cups instant brown rice
sour cream (optional)
red pepper, chopped (optional)
cilantro, chopped (optional)

Steps:

  • Place 1 1/2 can of beans in a blender; cover.
  • Blend until smooth.
  • Pour into a large saucepan.
  • Add remaining beans, the water, onions and salad dressing mix; stir until well blended.
  • Bring to boil on medium-high heat.
  • Stir in rice.
  • Reduce heat to low and cover.
  • Simmer 5 minutes.
  • If desired, garnish with sour cream, chopped red peppers and/or cilantro.

1 medium sweet red pepper, chopped
2 celery ribs, chopped
1 small onion, chopped
1 tablespoon canola oil
2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies
3/4 teaspoon ground cumin
1-1/2 cups cooked instant brown rice
6 tablespoons reduced-fat sour cream

Steps:

  • In a large nonstick saucepan, saute the pepper, celery and onion in oil until tender. Add the beans, broth, tomatoes, chilies and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened., Divide rice among six soup bowls; top with soup and sour cream.

This Cuban inspired black bean soup with rice is healthy, tasty, and quick to make with ingredients you probably already have on hand.

3 (15 ounce) cans black beans, drained but not rinsed
2 tablespoons olive oil
1 cup chopped onions
2 cloves garlic, minced
1 teaspoon chili powder (or more if you want more heat)
2 teaspoons ground cumin
2 teaspoons dried oregano
3 cups vegetable broth
1/2 teaspoon salt
1 Bay leaf
2 tablespoons cornstarch, mixed with 2 tablespoons cold water until smooth (optional)
Fresh cilantro, chopped, for serving
Hot cooked white or brown rice

Steps:

  • Put one can of drained black beans in a bowl and mash with a fork. Set aside. (See Note 1)
  • Heat olive oil in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 5 minutes.
  • Add garlic, chili powder, cumin, and oregano, and cook, stirring frequently, until garlic is soft, about 2 more minutes.
  • Add vegetable broth, salt, Bay leaf, and both black beans, whole and mashed. Bring to a boil.
  • Reduce heat to medium-low. Stir cornstarch mixture to re-combine and add to soup (See Note 2). Stir to combine and simmer for 15 minutes, stirring occasionally.
  • Remove Bay leaf and discard. Taste the soup and adjust salt to taste.
  • Put rice in bowls. Pour soup on top. Generously sprinkle with fresh chopped cilantro, if desired, and serve.

1 pound dried black beans
4 cloves garlic
2 onions, roughly chopped
1 green bell pepper, seeded and roughly chopped
1/4 bunch fresh cilantro
Extra-virgin olive oil
2 sprigs fresh oregano
2 tablespoons ground cumin
1 smoked ham hock
1 jalapeno, split
1 3/4 quarts low-sodium chicken stock
Kosher salt and freshly ground black pepper
1 cup sour cream
2 teaspoons lime zest
Lime wedges, for garnish
Cilantro sprigs, for garnish

Steps:

  • Pick through the beans and discard any debris - wash under cold running water. In a food processor, add garlic, onion, bell pepper, and cilantro.
  • Set a large pot over medium heat and add a 3-count of olive oil. Add the oregano and cumin. Add vegetable puree and saute until just fragrant, 7 to 10 minutes. Add beans, ham hock, jalapeno, and stock. Slightly cover and simmer for 2 hours until beans are tender.
  • When cooked, remove bay leaves and take out ham hock. Cut ham meat off the bone, cut into pieces and set aside.
  • Using a blender or immersion blender, puree just enough of the beans and stock (about a third of the total pot) to thicken up the soup and bring everything together. Season with salt and pepper and fold ham meat back into the soup.
  • Make the crema by combining sour cream and zest. Serve each soup with a spoonful of lime crema, a squeeze of lime and some fresh cilantro.

1 3/4 pounds fresh white beans
1 onion, chopped
2 garlic cloves, chopped
1 small stick celery, chopped
1 bunch parsley, leaves removed and chopped
1 bunch basil, leaves removed and chopped
1 small hot chili
3 tablespoons extra-virgin olive oil
2 ounces bacon, finely diced
1 pound ripe tomatoes, seeded and diced
Salt
Pepper
16 ounces rice, cooked

Steps:

  • Put the shelled beans in a pan with 2 quarts of cold water. Bring slowly to boiling point. Cook the beans until they are tender, adding salt when they are nearly done.
  • Finely chop the onion, garlic, celery, basil, parsley, and small piece of red chili. Fry these gently in 3 tablespoons of oil, together with the bacon. When it has all turned a light golden color, add the tomatoes. Season with salt and pepper, to taste, and continue cooking for about 15 to 20 minutes. Put it all through a vegetable sieve and add the beans with their cooking water. Stir well and continue cooking for 10 more minutes. Add rice. Serve hot or lukewarm without cheese.

PUERTO RICAN-STYLE BLACK BEAN SOUP

2 15- to 16-ounce cans Caribbean-style or regular black beans, drained
1 1/4 cups canned vegetable broth
3 tablespoons olive oil
2 tablespoons fresh lime juice
Lime wedges

Steps:

  • Stir 1 tablespoon seasoning blend in heavy medium saucepan over medium heat until fragrant and slightly darker in color, about 4 minutes. Transfer seasoning to processor. Add black beans, vegetable broth and olive oil to processor and purée until mixture is almost smooth, scraping down sides of bowl occasionally. Transfer purée to same saucepan. Bring to boil, stirring occasionally. Mix in lime juice. Season soup to taste with salt and pepper. Serve with lime wedges.

2 tablespoons olive oil
4 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
1 can (14-1/2 ounces) diced tomatoes with green peppers and onions, undrained
3 teaspoons ground cumin
1-1/2 teaspoons ground coriander
1 teaspoon Louisiana-style hot sauce
1/4 teaspoon pepper
1 bay leaf
1 teaspoon lime juice
1/2 cup reduced-fat sour cream
1/4 cup chopped green onions

Steps:

  • In a small bowl, mash 1 can black beans; set aside. In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed black beans and remaining whole beans. Bring to a boil.
