4 or 5 ripe roma tomatoes
2 jalapeno peppers
1 bunch cilantro
1 bunch green onions
3 limes
1 head fresh garlic, (you will need 3 cloves)
3 ripe avocados
1- 15.5 oz. can black beans
1 ½ cups sour cream
4 oz. block pepper jack cheese
4 oz. block sharp cheddar cheese
Chili powder
Tortilla chips
1- 16 oz. can black beans, (drained but not rinsed)
2 garlic cloves, (minced)
2 teaspoons fresh lime juice
¾ teaspoon chili powder
¼ teaspoon salt
Sour Cream Layer:
1 ½ cups sour cream
1 cup shredded pepper jack cheese
1 cup shredded sharp cheddar cheese
1 cup shredded pepper jack cheese
1 cup shredded sharp cheddar cheese
2 green onions, (sliced thin, green and white parts separated)
1 jalapeno chile, (seeded and finely minced)
1 small garlic clove, (minced)
2 tablespoons lime juice
3 avocados, (pitted, peeled and chopped)
3 tablespoons chopped fresh cilantro
Salt to taste
4 large tomatoes, (cored, seeded, and chopped fine)
1 jalapeno, (seeded and minced)
3 tablespoons finely chopped cilantro
2 green onions, (finely minced)
2 tablespoons lime juice
⅛ teaspoon salt
Tortilla chips (for serving)

Steps:

  • For the guacamole layer, first, in a small bowl, combine the white parts of the green onions, jalapeno, garlic and lime juice. Let sit for 30 minutes or while putting the other layers together.
  • For the bean layer, pulse black beans, garlic, 2 teaspoons lime juice, chili powder, and 1/4 teaspoon salt in a food processor until mixture resembles a chunky paste. Transfer to a glass 8X8 or 9X9-inch dish or similar sized bowl, spreading into an even layer.
  • For the sour cream layer, quickly rinse and wipe out the food processor and pulse the sour cream, 1 cup pepper jack cheese cheese and 1 cup sharp cheddar cheese until smooth. Dollop the sour cream mixture on top of the black bean layer, smoothing to the edges in an even layer.
  • Sprinkle evenly with another one cup each of both cheeses.
  • For the guacamole, add two-thirds of the avocado chunks to the bowl with the jalapeno mixture and mash with a potato masher until smooth. Gently fold remaining avocado into mashed avocado mixture. Gently stir in the green parts of the green onions and the cilantro. Season with salt. Spread the guacamole over the cheese layer.
  • For the tomato layer, in a medium bowl, combine tomatoes, jalapeno, cilantro, minced green onions, and lime juice. Stir in salt. Strain mixture through a colander or use a slotted spoon to cover guacamole layer with the tomatoes. Discard the liquid.
  • Spread guacamole over cheese and top with tomato mixture. Sprinkle with additional sliced green onions, if desired, and serve with tortilla chips.
  • The dip can be tightly covered and refrigerated for up to 24 hours.

1 ¼ cups salsa
16 ounces refried beans (canned)
2 tablespoons milk
8 ounces cream cheese (softened)
½ cup sour cream
2 tablespoons taco seasoning
1 cup guacamole (prepared)
1 ½ cups cheddar cheese
½ cup black olives ( or tomatoes)
4 sliced green onions

Steps:

  • Place salsa in a sieve to drain any liquid (this keeps your dip from getting runny).
  • Combine refried beans and milk (or you can use the liquid from the salsa if you prefer) until smooth. Spread in the bottom of a 9x13 pan.
  • Combine cream cheese, sour cream and taco seasoning with a mixer on medium. Spread over refried beans.
  • Spoon guacamole over cream cheese and gently spread. Repeat with drained salsa.
  • Top with cheese, olives/tomatoes and green onions.
  • Chill 1 hour before serving. Serve with tortilla chips or crackers.

Most versions of this party classic assume that guests won't notice that the layers are messy and the flavors are tired. Jessica Davis has gone to great lengths to develop a dip that doesn't have those problems. This one takes quite a bit of preparation, but if you decide to make it, don't "cut corners" or you'll be disappointed. It's important, especially for us Zaarites who love to meddle with recipes, to follow the directions and the ingredient list precisely. Enjoy!

4 large tomatoes, cored, seeded and chopped fine
2 jalapeno peppers, seeded and minced
3 tablespoons finely chopped fresh cilantro
6 scallions, 2 minced and 4 with green parts sliced thin (white parts discarded)
2 tablespoons freshly squeezed lime juice
2 teaspoons freshly squeezed lime juice
1/4 teaspoon salt
16 ounces black beans, drained but not rinsed
2 garlic cloves, minced
3/4 teaspoon chili powder
1 1/2 cups sour cream
4 cups shredded monterey jack pepper cheese
3 avocados
3 tablespoons lime juice, freshly squeezed
1/2 teaspoon salt

Steps:

  • Combine tomatoes, jalapenos, cilantro, minced scallions and 2 tablespoons lime juice in medium bowl.
  • Stir in 1/8 teaspoon salt.
  • Let stand until tomatoes begin to soften, about 30 minutes.
  • Strain mixture into bowl and discard liquid.
  • Pulse the black beans, garlic, remaining lime juice (except that for the guacamole)and remaining salt (ditto)in food processor until mixture resembles chunky paste.
  • Transfer to bowl and wipe out food processor.
  • Pulse sour cream and 2 1/2 cups cheese until smooth.
  • Transfer to separate bowl.

  • Mash 3 avocados with lime juice and 1/2 teaspoon salt.
  • Spread guacamole over cheese and top with tomato mixture.
  • Sprinkle with sliced scallions and serve with tortilla chips.
  • Dip can be refrigerated for up to 24 hours.
  • Let dip stand at room temperature before serving.

1 (16 ounce) can refried beans (traditional variety)
1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
¼ teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
½ cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
¾ cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
½ cup thin sliced scallion greens, green part only

Steps:

  • Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
  • Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.
