YAKI UDON WITH SHRIMP

A quick, delicious Japanese noodles stir fry with shrimp and veggies.

1 pack (200g) udon noodles (preferably vacuum-packed)
2 tbsp neutral oil
8-10 shrimp (approx 100g)
1 garlic (minced)
1 yellow onion (sliced)
8 white mushrooms (sliced, approx 120g)
1 carrot (cut matchstick-style)
1 spring onion (green & white separately chopped)
1 tbsp regular soy sauce
pinch salt and pepper
1 tbsp oyster sauce
1 tsp dark soy sauce (NOT regular one)
1 tsp rice vinegar
1 tsp brown sugar
1/3 tsp freshly crushed black pepper
1 tbsp toasted sesame oil
pinch salt

Steps:

  • Boil the udon noodles according to the package instructions. Drain and rinse with cold water. Drizzle some oil and set aside.
  • Heat 1 tbsp oil in a pan, toast the minced garlic for 1 minute then add the mushrooms. On high heat stir around until cooked. Then add the onions, white part of spring onions and carrots. Stir for 2-3 minutes. Sprinkle a pinch of salt and pepper and take the veggies out.
  • In the same pan add additional 2 tbsp oil and fry the shrimp. Add soy sauce and pinch of salt. Cook till the shrimp are no longer pink.
  • Then add the udon noodles. Fry on high heat, stirring continuously so the noodles slightly crisp up evenly.
  • Pour the sauce. Stir.
  • Then toss in the veggies.
  • Turn off heat and sprinkle spring onion.
  • Take out in a plate and enjoy!

1 lb large shrimp, shelled and deveined
3 tablespoons peanut oil
2 garlic cloves, minced
2 teaspoons peeled grated fresh ginger
1 tablespoon rice wine vinegar
8 ounces udon noodles
1/2 English cucumber, peeled, seeded, and cut into 1/4-inch dice
3 green onions, including tender green tops, thinly sliced
1/2 cup chopped cashews
2 garlic cloves, minced
2 tablespoons fresh lemon juice
2 tablespoons rice wine vinegar
2 tablespoons asian fish sauce
1 tablespoon sugar
1/4 teaspoon fresh ground black pepper
1/2 cup peanut oil

Steps:

  • Combine the shrimp, 2 tablespoons peanut oil, garlic, ginger, and vinegar in a heavy-duty plastic zip-lock bag; seal bag and marinate mixture in the refrigerator for 1 hour.
  • Cook noodles per package directions (do not overcook); drain noodles in a colander and rinse briefly under cold running water; shake the colander gently to drain; set noodles aside.
  • Drain shrimp and discard the marinade.
  • Warm the remaining 1 tablespoon peanut oil in a skillet over med-high heat.
  • Add the marinated shrimp and stir/saute about 4 minutes or until opaque throughout.
  • Transfer to a bowl; set aside.
  • To make the dressing: in a small bowl, combine the garlic, lemon juice, vinegar, fish sauce, sugar, and pepper; whisk until the sugar is dissolved.
  • Slowly whisk in the 1/2 cup peanut oil until an emulsion forms.
  • Place the noodles in a large bowl; add the shrimp, cucumber, and green onions; pour the dressing over the mixture; toss gently but thoroughly.
  • Serve at once, or cover and chill up to 8 hours.
  • Garnish with cashews just before serving.

1 large grapefruit
1 tablespoon plus 2 teaspoons fish sauce
1/4 cup sweet chili sauce
1 tablespoon minced fresh ginger
1 tablespoon fresh lime juice
1/4 cup vegetable oil
2 shallots, thinly sliced and separated into rings
1 pound peeled and deveined large shrimp
Kosher salt and freshly ground pepper
6 ounces rice vermicelli
1 12-ounce bag rainbow shredded coleslaw mix
1 cup fresh mint, leaves torn if large

Steps:

  • Bring a large pot of water to a boil. Trim the top and bottom of the grapefruit, then slice off the peel and white pith. Hold the grapefruit over a bowl and cut out the segments, letting them drop into the bowl; tear into bite-size pieces. Squeeze the juices from the membranes into the bowl.
  • Make the dressing: Remove 2 tablespoons of the grapefruit juice to a large bowl. Stir in the fish sauce, all but 1 teaspoon of the chili sauce, 1 teaspoon ginger, the lime juice and 2 tablespoons water.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the shallots and cook, stirring, until starting to crisp, 3 to 4 minutes. Remove the shallots to a paper towel-lined plate to drain. Pour the oil from the skillet into the fish sauce dressing, leaving a coating of oil in the skillet.
  • Season the shrimp with salt and pepper in a bowl. Toss with the remaining 1 teaspoon chili sauce and 2 teaspoons ginger. Add the shrimp to the skillet and cook over medium-high heat, stirring, until cooked through, 1 to 2 minutes per side. Remove to a plate.
  • When the water comes to a boil, remove from the heat and submerge the noodles; stir until tender, 3 minutes. Drain in a sieve and rinse under cold water; shake out as much water as possible.
  • Toss the noodles, slaw mix and mint with the dressing. Divide among bowls. Top with the shrimp, grapefruit and shallots.

1 garlic clove, finely chopped
6 tablespoons unseasoned rice vinegar
6 tablespoons soy sauce
3 tablespoons vegetable oil
2 tablespoons peanut butter
2 teaspoons sesame oil
1 tablespoon finely grated peeled ginger
1 teaspoon kosher salt, plus more to taste
2 cups snow peas, thinly sliced (about 8 ounces)
1 pound udon noodles
1 pound shrimp, peeled, deveined
1/3 cup coarsely chopped roasted salted peanuts
1/4 cup coarsely chopped fresh cilantro

Steps:

  • Whisk chile, garlic, vinegar, soy sauce, vegetable oil, peanut butter, sesame oil, ginger, and 1 tsp. salt in a large bowl. Add snow peas and toss to combine.
  • Cook udon in a large pot of boiling salted water according to package directions. Add shrimp 3 minutes before noodles are done and cook, stirring occasionally, until shrimp are pink and cooked through. Drain noodles and shrimp and add to dressing; stir vigorously to combine.
  • Transfer noodle mixture to a serving bowl or platter. Top with peanuts and cilantro. Serve immediately or at room temperature.

6 ounces udon noodles (not sure of weight but 1 packet will do)
1 teaspoon garlic powder
1 lb shrimp, purchase precooked shelled
olive oil
fresh snow pea, ends snipped, halved
3 green onions, cut in 3/4-inch pieces
1 anaheim chili, seeded, halved long ways, cut into 1/2 strips

Steps:

  • In a wok, coat the bottom of the pan with olive oil, not too much. Add the contents of the udon flavoring packet and garlic powder. When the pan gets hot, add the shrimp, stirring around to cook and coat with the spices and oil. Cook about 1 minute then remove.
  • Add the remainder of the ingredients and quickly stir fry. Do not over cook.
  • Add the udon, only cooking till it comes to temperature. Return the shrimp to the wok and serve.
  • The key is to not overcook this meal. You want to just heat the shrimp and the veggies should be crisp.
  • Want more garlic flavor, go for it.

1 (7 ounce) package fresh udon noodles (such as Ka-Me®)
½ (14.5 ounce) can bean sprouts, drained
½ onion, thinly sliced
1 carrot, grated
½ (4.5 ounce) can mushroom pieces, drained
1 bunch fresh cilantro, chopped, or to taste
2 teaspoons sesame seeds
3 tablespoons rice vinegar
3 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil
1 tablespoon white sugar, or to taste
1 tablespoon diced ginger
1 teaspoon minced garlic
1 splash lime juice
1 splash white wine
1 dash sriracha sauce
1 pinch red pepper flakes, or to taste

Steps:

  • Remove udon noodles from outer bag. Pierce inner pouch several times and place on a microwave-safe plate. Cook in the microwave until tender, about 90 seconds.
  • Transfer noodles to a large bowl. Mix in bean sprouts, onion, carrot, mushrooms, cilantro, and sesame seeds.
  • Mix rice vinegar, soy sauce, olive oil, sesame oil, sugar, ginger, garlic, lime juice, white wine, sriracha sauce, and red pepper flakes together in a small bowl until sugar dissolves.
