BAKED CATFISH

Two 7- to 8-ounce catfish fillets
4 ounces butter
4 ounces dry white wine
1 tablespoon lemon juice
1 teaspoon finely chopped garlic
1 teaspoon chopped cilantro
Salt to taste
Pepper to taste
Paprika

Steps:

  • Season fish with salt and pepper. Place fish in oval casserole dish. Melt 4 ounces butter in small sauce pan. Add wine and remaining ingredients, except the paprika. Simmer about 2 minutes. Remove from heat and spoon over fish. Now sprinkle paprika over fish. Bake fish in 375 degree oven for 10 to 12 minutes, or until the fish is done.

1/2 cup Italian seasoning
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon ground cumin
1 tablespoon hot curry powder
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon crushed red pepper flakes
1 tablespoon toasted fennel seeds
1 whole catfish (1 to 2 pounds) or 4 catfish steaks (about 1 1/2-inches thick)
1/2 cup fresh lemon juice
1/2 cup olive oil
1/2 cup soy sauce

Steps:

  • For the seafood rub:
  • Combine all ingredients in a bowl and set aside.
  • Clean the fish, leaving bone in. Drizzle the fish with lemon juice and olive oil. Scatter the rub over the fish and sprinkle with soy sauce. Let marinate, covered, overnight in the refrigerator.
  • Preheat the grill to medium.
  • Arrange the fish on the grill and cover with foil. Grill for 15 minutes. Using a broad spatula, carefully turn the fish over and continue to grill, covered, for 20 to 30 minutes.
  • Transfer the fish to a serving platter and serve.

1 cup yellow cornmeal
1 tablespoon paprika
1 teaspoon cayenne pepper
3/4 cup buttermilk
1 tablespoon hot sauce
4 catfish fillets (8-ounces each) skins and bones removed, rinsed and patted dry
Salt and freshly ground black pepper
Peanut oil, for frying
Remoulade Sauce, for dipping, recipe follows
1 cup mayonnaise
1/4 cup Creole mustard
1 teaspoon cayenne pepper
1/2 lemon, juiced
1 tablespoon Worcestershire sauce
1 teaspoon paprika

Steps:

  • Preheat a deep-fryer to 375 degrees F.
  • Mix the cornmeal, paprika and cayenne in a large bowl. In a separate bowl, add the buttermilk and the hot sauce.
  • Season the catfish with salt and pepper. Dredge in the buttermilk and then the cornmeal and spice mixture.
  • Drop carefully in the hot oil. Fry for 4 minutes until crisp. Remove to a paper towel lined sheet tray. Season with salt and pepper.
  • Serve with Remoulade Sauce.
  • Mix all the ingredients in a small bowl.

1/3 cup dry breadcrumbs
2 tablespoons butter, melted
2 (6 ounce) catfish fillets (1/2 inch thick) or 2 (6 ounce) other white fish fillets (such as orange roughy)
1/3 cup regular mayonnaise or 1/3 cup low-fat mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon chopped fresh dill or 1 teaspoon dried dill
1 tablespoon drained capers

Steps:

  • Preheat oven to 450 degrees.
  • Place breadcrumbs and melted butter in separate shallow dishes.
  • Cut each fish fillet crosswise in half.
  • Season fish with salt and pepper.
  • Dip fish into butter, then into breadcrumbs, coating completely; place fish on baking sheet.
  • Bake fish until crisp, brown and just cooked through, about 12 minutes.
  • Meanwhile, stir mayonnaise, relish, dill and capers in small bowl to blend.
  • Season tartar sauce with salt and pepper.
  • Transfer fish to plates.
