All you need it a one-step angel food cake mix and a 15 oz. can of lemon pie filling.
powdered sugar for dusting

Steps:

  • Mix the cake mix & the pie filling together by hand until moist. Be sure not to over stir. Bake in a 9x13 cake pan at 350 degrees until golden brown on the top (about 20 minutes). Cool completely before eating. As they are cooling, you can sprinkle with powder sugar if you wish (Which I guess technically makes this a 3-ingredient recipe). They have more of an angel food cake texture than a traditional lemon bar texture.

1 box angel food cake mix ( I use Betty Crocker)
2 cans (21 ounces each) lemon pie filling, I used Comstock pie filling
Powdered sugar

Steps:

  • Preheat oven to 350 degrees fahrenheit. Mix dry cake mix and cans of pie filling together in large bowl. Pour into greased 9 x 13″ baking pan. Bake at 350 degrees for 25 minutes or until top is starting to brown. Note: Mine took the full 25 minutes to get done and did not brown on top at all. Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.

1 box angel food cake mix
1 can(s) (22 ounces) lemon pie filling or 1 jar of lemon spread
1 c shredded coconut (optional)
FROSTING (OPTIONAL)
1 pkg (8 ounces) cream cheese, softened
1/2 c butter, softened
1 tsp vanilla or lemon extract
2-1/2 c powdered sugar
3 tsp grated lemon zest

Steps:

  • 1. Line a deep 9 X 13 inch baking pan with parchment paper. In a large bowl, whisk the angel food cake mix, lemon pie filling and coconut for 1-2 minutes.
  • 2. Pour the batter into the baking pan and bake at 350 degrees for 30 to 40 minutes. Cut the parchment paper so that it comes up the side of the pan, so batter does not spill as it bakes. Cool completely in pan on wire rack
  • 3. FROSTING: In a large bowl, beat cream cheese, butter and vanilla until smooth. Gradually beat in powdered sugar. Spread over cooled bars; sprinkle with lemon zest. Refrigerate 4 hours. Cut into bars. Instead of frosting you can top with powdered sugar.
