An awesome change from the traditional beef chili! I made this for my husband for the first time and he went back for seconds!

2 chicken breasts, cut into chunks
1 tablespoon olive oil
⅓ red onion, chopped
3 cloves garlic, minced
1 (15 ounce) can black beans, drained
1 (14.5 ounce) can great Northern beans, drained
2 (14.5 ounce) cans diced tomatoes with green chile peppers
1 (14 ounce) can tomato sauce
½ cup chicken stock
½ cup brown sugar
½ cup frozen corn
¼ cup white vinegar
3 tablespoons chili powder
3 tablespoons ground cumin
2 tablespoons dried cilantro
Dash of salt
1 pinch cayenne pepper
½ green bell peppers, diced
½ red bell pepper, diced
½ yellow bell pepper, diced

Steps:

  • Fill a large pot with lightly-salted water and bring to a boil. Boil the chicken until no longer pink in the center and the juices run clear, 7 to 10 minutes. Drain the chicken and place in a slow cooker.
  • Heat the olive oil in a skillet over medium heat. Brown the onion and garlic in the hot oil, 5 to 7 minutes; scrape into the slow cooker.
  • Add the black beans, great Northern beans, tomatoes with green chiles, tomato sauce, chicken stock, brown sugar, corn, vinegar, chili powder, cumin, cilantro, salt, and cayenne pepper to the slow cooker. Cook on High until the beans are tender, 3 to 4 hours. Stir the diced green, red, and yellow bell peppers into the chili and cook another 20 minutes.

This 30-minute weekenight dinner is a vegetarian chili that tastes like it's been slow simmered for hours. The hint of Chinese five-spice powder is a nice spice surprise. If you serve it over spaghetti, it turns into Cincinnati-style chili. (1 serving of Cincinnati-style chili equals 3/4 cup chili + 2 ounce (dry) cooked whole-wheat spaghetti.)

1 tablespoon vegetable oil
1 small jalapeno, minced (with some seeds)
1 small or 1/2 large red onion, finely diced
2 teaspoons red wine vinegar
1 large clove garlic, minced
1 1/4 cups low-sodium vegetable or chicken broth
1 cup canned crushed roasted tomatoes
1 1/2 tablespoons chili powder
1/4 teaspoon Chinese five-spice powder or ground cinnamon, optional
Two 15-ounce cans beans (such as kidney and black), rinsed and drained
2 tablespoons chopped fresh cilantro
2 cups cooked brown rice
1/2 cup finely shredded extra-sharp Cheddar (2 ounces)

Steps:

  • Heat the oil in a large saucepan over medium-high heat; add the jalapenos, onions and vinegar and cook, stirring, until softened, about 5 minutes. Add the garlic and cook about 30 seconds.
  • Stir in the broth, tomatoes, chili powder and five-spice powder if using, and increase the heat to high. Bring to a full boil and cook for 1 minute. Stir in the beans and return to a full boil. Reduce the heat to medium and simmer until just slightly thickened but still soupy, about 5 minutes. Stir in the cilantro.
  • Fill each bowl with about 1/2 cup of rice. Ladle the chili on top, sprinkle with the Cheddar and serve.

3/4 cup diced red bell pepper
1 1/2 teaspoons salt, or to taste

1 1/2 tablespoons minced garlic
1/2 teaspoon sugar
1/4 teaspoon crushed red pepper
3 pounds ground turkey
1/4 cup finely chopped cilantro stems
2 1/2 tablespoons chili powder
6 cups chicken broth
1 1/2 cups cooked and drained kidney beans
1 1/2 cups cooked and drained black beans

Steps:

  • Heat 2 tablespoons of the oil in a 4 quart large, heavy saucepan and, when hot, add the onions and both the red and green bell peppers and cook until vegetables are soft and lightly caramelized, about 6 minutes. Add the jalapenos and garlic and cook until fragrant, 1 to 2 minutes. Add the remaining 2 tablespoons of oil and the turkey, cilantro stems, chili powder, Southwest Essence, cocoa powder, cumin, salt, oregano, sugar, and crushed red pepper and cook, stirring to break up any lumps, until the turkey is cooked through and the spices are very fragrant, about 6 minutes. Add the tomatoes, tomato sauce, and chicken broth and bring to a boil. Reduce heat to a simmer and cook for 20 minutes. Add the kidney beans and black beans and cook until the flavors come together and the chili has thickened, about 30 minutes longer. Add the cilantro, remove from the heat and let sit for 10 minutes before serving.
  • Combine all ingredients thoroughly.

Steps:

  • For the Cumin-Cilantro Sour Cream:
  • In a small bowl, combine the sour cream, cilantro, and cumin. Refrigerate until ready to serve.
  • For the chili:
  • Set a large deep skillet over medium-high heat. Add the beef, salt, and pepper to taste. Cook, using a wooden spoon to break the meat into pieces as it browns, 4 to 5 minutes. Drain all the liquid from the pan. Add the tomato paste, onion, bell peppers, and garlic, and cook, stirring, until the vegetables have softened, 3 to 4 minutes. Transfer to a slow cooker. Add 1 cup water, the black beans, chickpeas, tomatoes, tomato sauce, cumin, chili powder, paprika, garlic powder, and bay leaves.

Steps:

  • In a Dutch oven or 5-quart saucepan with a lid, heat oil over medium. Add onion and garlic and cook, stirring occasionally, until tender, 5 to 7 minutes. This is a recipe I found in Cooking Light. Besides being an awesome tasting chili, I really like this recipe because it uses stew meat instead of ground beef. It was very chunky and not overly spicy, a great recipe. The only thing that I did differently was to completely cook up the beef at the beginning and then I just cooked it for 10 to 15 minutes until it was heated at the end instead of simmering it for 1 1/2 hours as directed. Very good chili!!

  • Add half of beef to pan; saute 8 minutes or until browned. Remove from pan and repeat procedure with remaining beef.
  • Add remaining 2 teaspoons oil, onion, and bell pepper to pan; saute 3 minutes.
  • Add garlic and jalapeno; saute 1 minute.
  • Add wine, scraping pan to loosen browned bits; return beef to pan.

  • Cover, reduce heat, and simmer 1 1/2 hours or until beef is tender, stirring occasionally.

  • 1. In a skillet, heat oil over medium heat. Add onions and celery and cook, stirring, until celery is softened, about 5 minutes. Add garlic and cook, stirring, for 1 minute. 3 tablespoons butter
2 large onions, chopped
4 garlic cloves, chopped
2 pounds ground beef
2 1/2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
1 28-ounce can crushed tomatoes
1 14 1/2-ounce can beef broth
2 medium white potatoes, peeled, diced
2 large carrots, peeled, diced
1 bell pepper, diced
3/4 cup chili sauce
1 15 1/4-ounce can kidney beans, drained
1 15-ounce can pinto beans, drained

Steps:

  • Melt butter in heavy large saucepan or Dutch oven over medium heat. Add onions and garlic and sauté until almost golden, about 8 minutes. Add beef and cook until brown, breaking beef up with fork, about 10 minutes. Stir in chili powder, cumin and cayenne and continue cooking 3 minutes. Mix in tomatoes, broth, potatoes, carrots, bell pepper and chili sauce. Simmer until vegetables are tender, about 1 hour. Stir in beans. Simmer until beans are heated through and vegetables are very tender, about 30 minutes.

1 cup onion, chopped
1 cup green pepper, chopped
2 large garlic cloves, pressed
1 lb lean stew meat, cut into 1/2-inch cubes
1/2 lb loose hot Italian sausage
1 (15 ounce) can tomato puree
1 (14 1/2 ounce) can beef broth
1 1/4 cups water
1 (6 ounce) can tomato paste
1 (4 ounce) can diced green chilies
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon sugar
1 teaspoon dried oregano leaves, crushed
1/8 teaspoon cayenne pepper (optional)
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained

Steps:

  • In 6-quart saucepan, heat oil; saute onion, green pepper and garlic 3-4 minutes, or until tender.
  • Add stew meat and sausage, stirring to crumble sausage; cook 5-6 minutes.
  • Blend in tomato puree, broth, water, tomato paste, green chiles, chili powder, cumin, salt, sugar, oregano and cayenne pepper, if desired. Bring to a boil. Reduce heat; simmer uncovered 1 1/2 hours, stirring occasionally.
  • Mix in beans. Cover and simmer and additional 30 minutes.

2 tablespoons olive oil (or cooking spray)
1 cup chopped onion
2 teaspoons minced garlic
1 small jalapeno, minced (seeds removed, if desired, I've left it out before)
2 cups bell peppers, cubed (red or green)
1 cup celery, chopped
1/2 teaspoon salt
2 teaspoons ground cumin
1 teaspoon dried oregano
3/4 cup chopped carrot
28 ounces can diced tomatoes with juice
1/2 cup barbecue sauce
1/2 cup water
15 1/2 ounces can black beans, with liquid
15 1/2 ounces can red kidney beans, with liquid

Steps:

  • Heat oil in a skillet over medium-high heat. Add onions, garlic, jalepeno, peppers, celery, salt, cumin, and oregano. Cook, stirring often until vegetables soften (8-10 min).
  • Transfer satueed vegetables to a slow cooker, add carrots, tomatoes and liquid, barbecue sauce, water, and beans, and liquid.
  • Cover; set on low; cook 8 to 10 hours.

I've begun to learn the art of cooking for 2, and with a primal outlook... beans are a no-go. This chili is my take on my Polish grandmother's recipe - it's not too spicy but very savory. This recipe gave us 2 decent-sized bowls each. Enjoy and feel free to tweak to your liking!

1 pound ground beef
1 medium green bell pepper, chopped
1 small onion, chopped
1 (14.5 ounce) can diced tomatoes with jalapeno peppers
1 (12 fluid ounce) can tomato juice
1 (6 ounce) can tomato paste
1 tablespoon chili powder
3 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon ground cayenne pepper
½ cup red wine

Steps:

  • Combine beef, green pepper, and onion in a large saucepan over medium-high heat; cook and stir until beef is browned, 5 to 7 minutes. Drain excess grease.
  • Reduce heat to medium. Add tomatoes, tomato juice, tomato paste, chili powder, garlic powder, cumin, and cayenne; mix well. Cover and cook until sauce begins to bubble gently, 5 to 10 minutes.
  • Pour wine into the sauce. Cover and simmer over low heat until flavors combine, 2 to 3 hours. Stir every so often to prevent soup from sticking to the bottom of the pan.

1/2 cup lime juice

1/4 cup chili powder

  • Bring to boil.

1 onion, chopped (the original recipe calls for 2 onions)
1 teaspoon celery seed (the orignal recipe called for celery stalks, diced)
6 garlic cloves, minced
2 teaspoons dried oregano or 1 tablespoon fresh oregano, chopped
1/2 teaspoon pepper
1 lime, juice and zest of
1 tablespoon cumin seed, toasted
2 tablespoons cornmeal
1 cup chicken broth
1 (28 ounce) can tomatoes, chopped
1 lb turkey breast tenderloin, cut into cubes
2 (14 ounce) cans pinto beans, drained and rinsed
2 cups frozen green beans
1 tablespoon chili powder
1 green bell pepper, diced
1 red bell pepper, diced
1 (4 ounce) can green chilies, diced
1 jalapeno pepper, diced (optional)

Steps:

  • In a skillet over medium heat heat oil for about 30 seconds or so.
  • Add onions to skillet (if using celery stalks add the celery too), cook stirring for 5 minutes.
  • Stir in garlic and cook stirring for another minute.
  • Stir in oregano, celery seed, pepper, zest of the lime and cumin, and cook for another minute.
  • Stir in cornmeal .
  • Stir in chicken broth and cook until mixture boils (1 minute or so).
  • Stir in tomatoes (with juice). Transfer mixture to crock pot.
  • Stir in turkey, pinto beans and green beans. Cover and cook on low for 8 hours (or high for 4 hours).
  • Combine chili powder and lime juice in a cup and add to crockpot along with bell peppers, green chilies and jalapeno. Cover and cook on high for 30 minutes.
