2 tablespoons olive oil
600 g ground lean pork
1 medium onion
2 carrots, fresh, coarsely chopped
1 celery rib, trimmed, chopped
4 cups vegetable stock
800 g canned tomatoes, chopped
400 g cannellini beans, rinsed, drained
3 garlic cloves
1/2 teaspoon dried thyme
1 teaspoon fennel seed
300 g fresh spinach
200 g fresh green beans

Steps:

  • Heat oil in a large saucepan over a medium heat.
  • Add pork mince, onions, carrots and celery.
  • Cook, stirring occasionally until onions are translucent.
  • Add stock, tomatoes, cannellini beans, garlic, thyme and fennel.
  • Bring to the boil.
  • Reduce heat to low, cover. Simmer for 5 minutes.
  • Stir in spinach and green beans and simmer for a further 10min or until vegetables are tender.
  • Season with salt and pepper.

It's wonderful to come home to this pork bean soup dinner simmering away in a slow cooker, especially on a busy weeknight. This soup uses dried beans and is simple to throw together in the morning before work. When you get home, just add a few more ingredients, and in half an hour dinner is ready! 1 package (16 ounces) dried great northern beans, rinsed and drained
1 large sweet onion, chopped
3 medium carrots, chopped
3 celery ribs, chopped
1 pork tenderloin (1 pound)
1 teaspoon garlic powder
1 tablespoon fresh minced chives or 1 teaspoon dried chives
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon pepper
1 carton (32 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 bottle (12 ounces) extra pale ale
1 can (14-1/2 ounces) diced tomatoes, drained
5 ounces fresh spinach
1-1/2 to 2 teaspoons salt

Steps:

  • Place beans in a large bowl; add cool water to cover. Soak 5 hours or overnight. Drain beans, discarding water; rinse with cool water., In a 6-qt. slow cooker, layer beans, onions, carrots, celery and pork. Add seasonings, broth and ale. Cook, covered, on low 6-8 hours or until beans and pork are tender. , Remove pork; shred with 2 forks. Stir in tomatoes, spinach and salt. Return pork to slow cooker. Cook, covered, on low for 15-20 minutes or until heated through.

3 can(s) (15-ounces each) small white beans, rinsed and drained
2 1/2 cup(s) roasted pork, cubed
1 1/2 cup(s) carrot, chopped
1 cup(s) celery, chopped
1 cup(s) onion, chopped
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper
2 can(s) (14.5-ounces each) diced italian style tomatoes, undrained
2 can(s) (14.5-ounces each) chicken broth

Steps:

  • In a slow-cooker, stir together beans, port, carrots, celery, onions, salt, and pepper. Stir in undrained tomatoes and chicken broth.
  • Cover and cook on LOW setting for 6 to 8 hours or on HIGH setting for 3 to 4 hours.

2 cups dried navy beans
1 tablespoon fresh sage, minced
2 teaspoons kosher salt
1 teaspoon ground fennel
8 garlic cloves, minced
2 1/2 lbs boneless pork shoulder, trimmed (Boston Butt)
4 cups water
2 bay leaves

Steps:

  • Sort and wash navy beans and place in a large Dutch oven. Cover with water to 2 inches above beans; cover and let stand for 8 hours.
  • Drain beans. Place beans, 1 t sage, 1 t salt, 5 cloves of garlic and bay leaves in ziptop bag.
  • Combine 2 t sage, 1 t salt, 1 t fenel seeds and 3 cloves of garlic. Rub mixture over pork.
  • Place pork in a zip top bag.
  • Place both bags in a larger bag labeled with directions.
  • To serve: Thaw overnight in fridge.
  • Place beans, pork and 4 cups of water in a slow cooker. Cook on HIGH 8 hours. Pull pork apart into chunks and serve with bean mixture.
