CHOCOLATE TURTLE MARTINI
Featured in our 12 Nights of Cocktails collection inspired by the 12 days of Christmas. This cocktail is inspired by the second day of Christmas, a two turtle doves. We bring you two chocolate turtle martinis, that hold a depth of holiday flavors between the toasted pecan from the infused simple syrup to the velvety texture from the bourbon cream - this is a martini you'll be delighted to sip! A sweet treat you can stir up anytime of year!

Steps:
- Dip your martini glass in the chocolate magic shell, then dip in the crushed pecans. Put them in the refrigerator to harden. Or place ice in the glass while you prepare the cocktail.
- In a cocktail shaker with ice, combine ingredients.
- Shake well, and strain into the prepared and chilled martini glass.
- Serve and enjoy this delicious treat!

Steps:
- Place UNOPENED can of evaporated milk in 2 quart saucepan. Cover with water, boil for 1 hour, keeping can covered with water. Remove and cool.
- In a double boiler, over medium-low heat, melt Dove chocolate until creamy.
- On parchment paper,drop small amount of Dove chocolate and spread out to quarter size. Place 4 pecan halves on top of chocolate.
- Open can of evaporated milk, and scoop a tablespoon of creamy caramel on top of each set of pecan halves.
- Cover caramel with melted chocolate.
- Cool completely. (I place tray in freezer for 5 - 10 minutes for a quick set).
- Remove from parchment paper and serve, or store in container with parchment paper in between layers of turtles.
TURTLE DOVE NESTS

- In a microwave, melt chips; stir until smooth. Stir in the rice noodles, cereal and peanuts. Divide into 15 mounds on waxed paper and shape into nests; press indentation in the center of each. Add three jelly beans to each nest. Let stand until set.

TURTLE DOVE BARS
This recipe is from an old recipe pamphlet that was my Grandmothers. Recipe is from Land O' Lakes.

Steps:
- 1. In a large mixing bowl, combine all crust ingredients except pecans. Beat at medium speed until crumbly. Press into bottom of 9 by 13 ungreased baking pan. Sprinkle pecans over unbaked crust.
- 2. For the filling: Combine butter and brown sugar in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a full boil, 4-5 minutes. Boil, stirring constantly, until candy thermometer reaches 242F 2-3 minutes.
- 3. Pour over pecans and crust. Bake at 350F for 18-20 minutes, or until caramel layer is bubbly. Remove from oven and immediately sprinkle with butterscotch and chocolate chips; let stand 5 minutes. Swirl chips as they melt leaving some whole for a marbled effect. Cool completely. Cut into bars.

Steps:
- Sweeten the cocoa powder to your liking by mixing the cocoa and powdered sugar.
- Take a large martini glass and very carefully coat the rim in caramel sauce from the squeeze bottle, being careful not to let it drip too far down the sides.
- Then, dip the entire rim of the glass into the sweetened cocoa powder, being sure to coat all of the caramel.
- The desired effect is a chocolate dusted caramel rim.
- You can also put just a drop of chocolate syrup at the bottom of the glass for color.
- Shake the vodka, creme de cacao and praline liqueur in a martini shaker with ice to chill.
- Fill the martini glass nearly full with crushed or shaved ice, being careful not to touch the rim.
- Strain the drink into the martini glass.
- Garnish atop the floating ice with a roasted pecan half and a small piece of chopped chocolate.
- Or you can garnish it with a half of a Turtle candy by making an incision and hanging it on the rim of the glass.
- Also, if you prefer your martini to LOOK dark like chocolate, I would use the dark creme de cacao, however, the garnish will stand out more when the drink is more translucent.
